2 cups gluten-free flour blend
½ cup rice flour

3 tablespoons apple cider vinegar
3 tablespoons olive oil

Steps:

  • Whisk water and sugar together in a bowl. Whisk in yeast. Let stand until yeast softens and begins to form a creamy foam, about 10 minutes.
  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Combine gluten-free flour, rice flour, Italian seasoning, xanthan gum, gelatin, and salt in the bowl of a stand mixer fitted with the paddle attachment. 350 grams All-Purpose Gluten-Free Flour Mix, recipe follows
2 1/4 teaspoons active dry yeast
1 teaspoon psyllium husk powder (see Cook's Note)
1 teaspoon kosher salt
2 tablespoons olive oil, plus more for sprinkling
1 large egg, at room temperature
3/4 cup warm water
400 grams millet flour
300 grams sweet rice flour
300 grams potato starch

Steps:

  • Combining the dry ingredients: Whisk together the flour mix, yeast, psyllium, and salt. Pour this mixture into the bowl of a stand mixer.
  • Finishing the dough: With the stand mixer running on low, add the olive oil, then the egg. Slowly, pour in the water. Here's the important part: gluten-free pizza dough will not look the same as gluten dough. It will be far wetter, even a little like pancake batter. As you pour the water, look for the dough to come together around the paddle. However, when your turn off the mixer, the dough should slump off the paddle immediately.
  • Letting the dough rise: Scrape the pizza dough into a large greased bowl. Cover it with plastic wrap and set the bowl in a warm place. Gluten-free dough does not rise as much as gluten dough. Instead, you are looking for the dough to hydrate fully and increase in size by about one-third. When the dough has risen a bit and has the texture of traditional dough, about 1 1/2 hours, you're ready to bake.
  • Preparing to bake: Heat the oven to 500 degrees F. If you have a pizza stone - and we recommend you do - put it in the oven now.
  • If you own a pizza peel, lay down a piece of parchment paper on it now. If you don't own one, put the parchment paper on a pizza pan or baking sheet. Put the dough down on the parchment paper then top it with another one the same size. Using your hands or a rolling pin, flatten the dough slowly and evenly. You want a pizza dough about 12 inches in diameter. Take the top piece of parchment paper off the pizza dough.
  • Sprinkle some olive oil over the top of the dough. Bake the dough in the oven until the edges are starting to brown and crisp and the top of the pizza is a little firm to the touch, 5 to 8 minutes.
  • Pull out the pizza dough and top with whatever toppings you desire.
  • Pour all the flours into a large container. (Restaurant supply stores sell large plastic containers that fit this purpose well. You could also use a large glass jar.) Shake and shake and shake harder until all the flours have become one color.

  • Place the cooled cauliflower in a nut milk bag or wrap with cheesecloth and squeeze excess water out as much as possible.

1/2 cup cornstarch or 1/2 cup potato starch
1/2 cup tapioca flour
1 teaspoon sugar or 1 teaspoon honey
1 teaspoon xanthan gum
1/2 teaspoon salt
1/4 teaspoon potato flour
1 teaspoon baking powder
1/2 teaspoon onion powder
1/2 teaspoon dried rosemary leaves
1/2 teaspoon italian seasoning
2 tablespoons margarine
1 egg
1/4 cup soymilk
rice flour

Steps:

  • Preheat oven to 400.
  • grease 12 inch pizza pan.
  • combine all ingredients except egg, milk and rice flour.
  • Blend until resembles fine crumbs.
  • ad egg and milk and form a ball.
  • place dough on prepared pan and sprinkle with rice flour.
  • pat down to 1/4 inch thickness.
  • bake for 10-15 minutes.
  • add toppings & bake for another 10-15 minutes.

I got this from Whole Approach.com, submitted by Ruth Denomme. The only thing I changed was using pizza sauce instead of the tomatoes. Even the zucchini haters liked it and it tastes like a regular pizza crust. We did have to eat it with a fork though, bcz the crust isn't as firm as regular crust.

3 cups shredded zucchini, squeezed to get water out
3 eggs, lightly beaten
1/4 cup parmesan cheese
1/3 cup gluten-free flour
1/2 teaspoon salt
2 cups shredded part-skim mozzarella cheese
2 small tomatoes, halved and thinly sliced
1/2 cup chopped onion
1/2 cup julienned green pepper
1 teaspoon dried oregano
1/2 teaspoon dried basil
3 tablespoons shredded parmesan cheese

Steps:

  • Preheat oven to 450°. In a bowl, combine zucchini, eggs and Parmesan cheese; mix well.
  • Add flour and salt; stir well.
  • Spread onto the bottom of a 12-in. pizza pan (or a jelly roll pan) coated with nonstick cooking spray.
  • Bake for 8-13 minutes. Reduce heat to 350°.
  • Remove pizza and sprinkle with mozzarella, tomatoes, onion, green pepper, oregano, basil and Parmesan cheese.
  • Bake at 350° for 15-20 minutes or until onion is tender and cheese is melted.

½ cup almond milk
2 large eggs
2 tablespoons olive oil
¾ cup rice flour
⅓ cup tapioca flour
1 teaspoon xanthan gum
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a pizza pan or baking sheet.
  • Beat almond milk, eggs, and oil together in a bowl.
  • Mix rice flour, tapioca flour, xanthan gum, salt, and pepper together in a separate bowl. Add to the egg mixture and blend dough until smooth.
  • Spread dough onto the prepared pan, using a flat spoon to make a 12-inch circle with raised edges.
  • Bake in the preheated oven until lightly golden, about 15 minutes.
  • Remove from oven and add your choice of toppings. Return to the oven until crispy, about 15 minutes more.

Pizza Crust Recipe
50 grams fresh yeast
5 dl or 2 cups quinoa flour
1-2 tsp salt -3 dl or 1 and 1/4 cups of water
3 tbs olive oil
3 tbs psyllium husk powder

Steps:

  • Start by warming your water, add your yeast and your salt, mix everything together, and then add your psyllium husk into the mixture, and leave everything to sit for about ten minutes. After that take your flour and mix it with the wet mixture, start kneading your dough and do it for about 2 minutes, then add your oil, knead again for a little while until you have formed a ball out of it, after that put your dough into a warm and dark place to rise. When it has doubled in size spread it onto your pizza tray, you can spread it by hand or with a rolling pin, whatever works for you, pat it a little bit after you have stretched it and start applying your toppings. Press it, so that the air comes out of it. Add some flour on top of it and flatten it with your hands. When it is the shape and thickness you want, place it on top of a pizza stone (highly recommended) or a baking tray lined with baking paper. Add the tomato sauce and the toppings you like, I often add some balsamic vinegar, salt and black pepper to the tomato paste. I also like to add a small layer of parmesan on top of the tomato paste. Some tomatoes and some salami Finally the pizza is topped with some mozzarella and black pepper. Bake the pizza at 400 F for 20-40 minutes, the time differs so much because it depends on the thickness of the crust and on your oven. Keep an eye on the pizza while it is baking.
