1/4 cup crystallized ginger, finely chopped
2 1/2 cups Bob's Red Mill gluten-free all-purpose baking flour (2 cups for batter, 1/2 cup for dusting carrots and ginger)

1 teaspoon baking soda

  • Preheat oven to 350°F.

Since I am a health nut I try to stay away from cake slices that are 900+ calories per serving (just a small exaggeration). But my boyfriend also has celiac disease, so I modified this recipe to be not only gluten free, but sugar-free as well (natural sugar, anyway) Here is the OLD recipe if you want it, of course you can make it healthy and keep all the calories, but really you can get almost the same taste out of this new one.

1 cup soya flour or 1 cup besan flour
3/4 cup maize cornflour (100% corn)
2 teaspoons gluten free baking powder
1 teaspoon bicarbonate of soda
2 teaspoons mixed spice
1 cup firmly packed brown sugar
1 1/2 cups grated carrots (about two medium carrots)
1 cup chopped walnuts
1/2 cup light olive oil
1/2 cup sour cream
3 eggs, lightly beaten
125 g cream cheese, chopped
1 teaspoon finely grated orange rind
1 1/2 cups icing sugar

Steps:

  • CARROT CAKE: Preheat the oven to moderately slow (160c).
  • Grease a deep 20cm round cake tin, line the base and sides with baking paper.
  • Sift flours, baking powder, bicarbonate soda and spice into a large bowl.
  • Stir in the sugar, carrot and walnuts.
  • Stir in the combined oil, cream and eggs until smooth.
  • Pour the mixture into prepared cake tin and bake in a moderately slow oven for about one hour.
  • Stand the cake for 10 minutes before turning onto a wire cake rack to cool.
  • Top cake with Orange Frosting.
  • ORANGE FROSTING: Beat the cheese and the rind in a small bowl with an electric mixer until light and fluffy.

3/4 cup granulated sugar
1/4 cup canola oil
1/2 cup applesauce
1 large egg
1 large egg white
3/4 teaspoon vanilla extract
3/4 cup gluten-free flour, mix (your choice, I've used a few different versions)
1/2 cup tapioca flour
1 teaspoon xanthan gum (omit if in flour mix)
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
3/4 raisins
3/4 cup chopped walnuts (toasting optional, but brings out more flavour)
2 1/4 cups grated carrots (about 1/2 a pound)
1/4 cup diced fresh pineapple

Steps:

  • Preheat the oven to 350 degrees F.
  • Lightly grease or prepare an 8x8 square pan, or 9 inch round pan.
  • In your mixer, beat the sugar, oil, and eggs together. Add the vanilla.
  • In another bowl, mix together flour, xantham gum, cinnamon, baking soda, and salt.
  • Add the dry ingredients to the wet ingredients.
  • Stir in raisins and walnuts.
  • Fold in the carrots and pineapple.
  • Mix well, but don't over mix.
  • Bake for 35 to 45 minutes, or until a toothpick comes out clean.
  • Allow the cake to cool completely in the pans set over a wire rack.

1 cup oil
1 1/4 cups brown sugar
1 1/2 cups gluten-free self-raising flour
1 teaspoon bicarbonate of soda
1 pinch salt

125 g cream cheese, softened
30 g butter
1 cup gluten-free icing sugar, ensure gluten free (confectioners sugar)
2 teaspoons orange juice

Steps:

  • Preheat the oven to 180°C (350°F )Grease a deep 23cm square cake tin and line the base and sides with baking paper.
  • Combine the eggs, oil and brown sugar in a large bowl.
  • Add the sifted flour, soda, salt and cinnamon. Beat with electric beaters until the mixture is smooth.
  • Add the nuts and carrots and mix through well.
  • Pour the mixture into the prepared tin and bake for 45 minutes. A skewer should come out clean when inserted into the centre of the cake.
