GLUTEN FREE BON BONS

It's so hard to find good and easy GF recipes but this one is easy and good! Diabetics, I haven't tried these with Splenda or other sugar substitutes so I don't know if that works.

Time 45m

Number Of Ingredients 8

1/2 c butter, softened (not margarine)
3/4 c powdered confectioners sugar
2 Tbsp cream
1 tsp vanilla extract (or almond)
1 1/2 c gluten free flour
1/8 tsp salt
24 (or more) whole pecans, walnuts, almonds
1 c powdered confectioners sugar (add more if needed)

Steps:

  • 1. Add butter and sugar to a large mixing bowl and mix until light and fluffy. Add milk and vanilla and mix again. In a separate bowl mix flour and salt. Gradually add the flour and salt mixture to butter and sugar mixture while slowly mixing. When mixed well use your hands to form into balls and wrap the balls over a pecan, etc. Seal around the pecan completely. Place on an ungreased baking sheet. Bake about 350 for 18 to 20 minutes or until lightly brown. Remember ovens vary in temperature. Roll gently in powdered sugar and place on serving dish or store in air tight container.
  • 2. Note/Options: You might want to make a separate batch with each of the nuts listed above or substitute any ingredient that you can wrap in the dough. If you want to leave the surprise nut centers out just flatten the balls a little to make a cookie and cover with the powdered sugar when done. If you want to make a cookie or ball without whole nuts inside but still want nuts, chop or grind the nuts small and stir in before making the balls or cookies. Cook and roll in powdered sugar as above. You may make the balls smaller if the whole nuts are not used. Just make sure to not over cook anything which ever way you make these bon bons. Put a cherry inside and dip in melted chocolate - yummy!

GLUTEN FREE CHOCOLATE BONBONS

Gluten Free Chocolate Bonbons image

I got this recipe given by a friend who makes these every year for Christmas and for other occasions. I wanted to try a gluten free version for my daughter and they turned out great! They are super easy to make. They make take some time to make by forming the balls and then to dip them into the chocolate, but they are so worth it. I used 1 box of Arrowhead Mills Vanilla cake Mix and added about 1/4 Cup of Cocoa Powder to the batter to make it chocolate and it tasted fine. The BonBons may be quite a rich chocolate taste, so you only need a few to give into that chocolate craving!

Time 5h

Yield 48-60 BonBons

Number Of Ingredients 9

18 ounces gluten-free chocolate cake mix
1/2 cup unsweetened cocoa powder
1/2 cup powdered sugar
1/2 cup jelly (I use Apricot because it doesn't have any seeds to worry about)
1/2 cup butter
1 teaspoon vanilla extract
1/2 cup butter (May need to use more)
1/3 cup powdered sugar
1 cup semi-sweet chocolate chips

Steps:

  • Make cake mix according to the box's instrucions. Remove from oven and allow to completely cool.
  • In a large bowl, crumble the entire cake.
  • In a saucepan, melt the butter and add the powdered sugar, the jelly, cocoa poweder, and vanilla. Continue to stir until thorougly mixed and melted.
  • Pour the chocolate mixture over the crumbled cake and stir well.
  • Roll into individual balls. When I make these, I keep them on the smaller side and come up with about 60 balls.
  • Begin to prepare your dipping chocolate. In a medium size sauce pan, combine the butter and chocolate chips and add the powderd sugar. Stir on med/low heat until completely melted. You don't want to have the heat too high or it may burn the chocolate, you just need it warm enough to melt it. If your stove is on the hotter side, then keep it on low to melt it. You may need to add some more butter by tablespoons if the chocolate is not smooth enough. When I made the dipping chocolate it came out a very smooth and glaze like mixture.
  • Using 2 large soup spoons dip the individual balls in and completly coat the ball and lay them on a sheet pan covered with wax paper. These take about 10 minutes to set on the wax paper and be ready to chill. Chill for at least 2 hours before serving.

  • Use unsweetened cocoa powder for a rich chocolate flavor.
  • Feel free to add your favorite mix-ins, such as chopped nuts, dried fruit, or chocolate chips.
  • Chill the dough for at least 30 minutes before shaping the bonbons. This will help them hold their shape better.
  • If you don't have a candy mold, you can shape the bonbons by hand. Just roll the dough into small balls and then flatten them slightly.
