1 cup white sugar
2 large eggs, at room temperature
1 teaspoon coconut extract
1 ½ cups gluten-free all purpose baking flour
1 ½ teaspoons baking powder
¼ teaspoon salt
½ cup coconut milk
1 pint strawberries, hulled and sliced
1 banana, sliced into 12 rounds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 12 muffin cups with paper liners.
