Butter, for greasing dish
12 ounces wide egg noodles
2 cups heavy cream
2 1/2 cups whole milk
2 teaspoons all-purpose flour
1/2 teaspoon salt, plus more for pasta water
1/4 teaspoon freshly ground black pepper
2 cups (packed) grated Fontina
3/4 cup (packed) finely grated Parmesan
3/4 cup (packed) grated mozzarella
4 ounces cooked ham, diced, optional
2 tablespoons finely chopped fresh Italian parsley leaves

Steps:

  • Preheat the oven to 450 degrees F.
  • Butter a 13 by 9-inch glass baking dish and set aside. Cook the noodles in a large pot of boiling salted water until tender but still firm to bite, stirring frequently, about 5 minutes. Drain well, but do not rinse.
  • Whisk the cream, milk, flour, 1/2 teaspoon salt, and pepper in large bowl to blend. Stir in 1 cup Fontina, 1/2 cup Parmesan, 1/2 cup mozzarella, ham, if using, and parsley. Add the noodles and toss to coat. Transfer the noodle mixture to the prepared baking dish. Toss the remaining 1 cup Fontina, 1/4 cup Parmesan, and 1/4 cup mozzarella in a small bowl to blend. Sprinkle the cheese mixture over the noodle mixture. Bake until the sauce bubbles and the cheese melts and begins to brown on top, about 20 minutes. Let stand for 10 minutes before serving.

I make this often because it is tasty, easy and quick to prepare. I wanted something a little different from the regular Macaroni and Cheese or "Hamburger Helper" type dish, so I visited my pantry and refrigerator and came up with this dish. This, along with a small salad and rolls made a great meal. My lady friends enjoy it....

1/2 lb lean ground beef
1 large vidalia (or other sweet) onion, chopped
1 can(s) diced tomatoes (14.5 ounces)
1 can(s) ro-tel tomatoes and green chilies (10 ounces);i use chunky, but you can use original, mild or hot
1 box macaroni & cheese dinner (7.25 ounces)
1 Tbsp ketchup
1-2 dash(es) hot sauce (optional)
TOPPING (OPTIONAL): SLICED TOMATOES AND 1/2 CUP GRATED CHEESE

Steps:

  • 1. Gather all ingredients for the recipe.
  • 2. In a medium large saucepan, bring 6 cups salted water to a boil. Empty the macaroni into the boiling water (Set cheese packet aside.). Cook for 5-7 minutes (til "Al dente". Drain and set aside.
  • 3. Meanwhile, spray a large frying pan with Pam and add the beef and chopped onion. Cook over medium-high heat until the beef is brown. Remove any greese from the pan.
  • 4. Add the can of diced tomatoes and can of Ro-Tel tomatoes and green chilies to the beef and onions. Stir well and add the Ketchup and hot sauce (if desired). Turn heat down to medium and cook for 20 minutes.
  • 5. Add cheese packet and stir until blended well. Stir in the cooked macaroni and mix well. Heat through about 3-4 minutes.
  • 6. Spoon the glorified Tomato Beefy Mac'N Cheese into a serving dish. Before serving, top with grated cheese and fresh tomato slices, if desired. Enjoy!
  • 7. ** I make a couple of hamburger patties or a small meatlof with the other half-pound of ground beef.

1 pound elbows, shells, cavatappi, farfalle, fusilli or other short, tube-shaped pasta
Kosher salt
4 tablespoons unsalted butter
1/4 cup all-purpose flour
4 cups whole milk
1 clove garlic, finely grated
1 teaspoon smoked or hot paprika
Freshly ground pepper
12 ounces sharp or white Cheddar cheese, grated
12 ounces fontina or Gruyère, grated
1 cup coarse bread crumbs or panko
4 tablespoons melted butter or olive oil
1/4 cup finely grated Parmesan cheese (optional)
Kosher salt and freshly ground pepper

Steps:

  • Cook pasta in a large pot of salted boiling water until it's barely al dente. (It should be more al dente than your average pasta: It's going to continue to cook in the oven.) Drain and set aside.
  • Meanwhile, heat butter in a medium pot over medium heat. (The pot should be large enough to hold all the pasta when cooked.) Whisk in flour and cook, whisking constantly, until the flour is foamy and just starting to turn a light golden brown, about 4 minutes. Slowly whisk in milk to avoid clumping. Add garlic, paprika and season with salt and pepper. Bring to a simmer, whisking constantly and paying special attention to the edges of the pot to make sure the flour mixture is totally incorporated.
  • Add grated cheese and whisk to blend until the cheese is completely melted. (The sauce will seem thick at first and thin out as the cheese melts; it will thicken while it bakes.) Season with salt and pepper and add cooked pasta, stirring to coat well.
  • Heat oven to 425 degrees. Line a rimmed baking sheet with aluminum foil (to catch any cheesy drips).
  • Make the optional topping: Combine bread crumbs, melted butter and Parmesan, if using, in a medium bowl. Season with salt and pepper and, using your hands, mix well to ensure the bread crumbs are evenly coated.
  • Transfer the macaroni and cheese mixture to a 3-quart or 9 x 13 baking dish and scatter bread crumbs, if using, evenly over the top. Place on prepared baking sheet and bake until macaroni and cheese is bubbling, thickened and creamy, and bread crumbs are evenly golden brown, 25 to 30 minutes. Let cool slightly before serving.

1 minced garlic clove (optional)
1 chopped tomato
salt and pepper (to season)
1 (7 ounce) box macaroni and cheese mix (I use Kraft)

Steps:

  • Brown meat and onion.
  • Add tomato and seasonings.
  • While they are cooking, prepare mac and cheese as directed on the box.
  • Put the beef mix.
  • in a bowl.
  • You do not need to drain it.
  • Add mac & cheese.

Unsalted butter, for the dish
2 teaspoons kosher salt
1 pound elbow macaroni with ridges
4 tablespoons (1/2 stick) unsalted butter
4 tablespoons all-purpose flour
1 teaspoon kosher salt
2 cups milk
2 cups grated sharp Cheddar
1/2 cup breadcrumbs
4 tablespoons (1/2 stick) unsalted butter, melted

Steps:

  • For the macaroni: Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
  • Bring 4 quarts of water to a boil in a large saucepan. Add the salt and macaroni. Bring the water back to a boil and cook the macaroni until tender, about 12 minutes. Drain well.
  • For the cheese sauce: Meanwhile, melt the butter in a 1-quart saucepan. Using a wire whisk, stir in the flour and salt, stirring and cooking over medium heat until the roux bubbles and the flour turns pale brown, about 3 minutes. Slowly whisk in 1 cup of the milk and then whisk in the remaining 1 cup milk. Continue to cook, stirring constantly, until the sauce thickens. Add the cheese and stir until it melts. Add the drained macaroni to the cheese sauce and mix thoroughly.
  • For the topping: In a small bowl, stir the breadcrumbs with the butter until the crumbs are moistened.

2 (7 1/4 ounce) boxes Kraft macaroni and cheese
4 cups water
1 teaspoon salt
1/4 cup butter
1/2 lb ground beef
1 cup evaporated milk
1 cup spaghetti sauce
1 teaspoon sugar
1/2 cup grated cheese

  • Put macaroni on to cook in 4 cups water, salt and 1 tablespoon butter.
  • Cook rapidly in open kettle, stirring often. The butter will keep it from sticking or boiling over.
  • Brown meat, stirring to small bits.
  • Turn off macaroni when water is almost gone and do not drain.
  • In a small bowl, add the packaged cheese to the milk and stir until smooth.
  • Add spaghetti sauce and sugar.
  • Add remaining butter.
