1/2 cup vegetable oil
1 egg
1-1/2 teaspoons lemon juice
1-3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon ground cloves, optional
1-1/2 cups chopped dates or raisins
1 cup chopped nuts
GLAZE:
1 cup confectioners' sugar
2 tablespoons lemon juice

Steps:

  • In a large bowl, combine the persimmon, sugar, oil, egg and lemon juice. Combine the flour, baking soda, salt and spices; add to sugar mixture. 1 1/2 teaspoons lemon juice
1 teaspoon baking soda
1 3/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup persimmon pulp
1 cup walnuts, chopped
1 cup powdered sugar
2 tablespoons lemon juice

1 egg

1 cup raisins
