1/3 cup apple jelly
3 tablespoons unsweetened apple juice

2 eggs, lightly beaten
1 can (8 ounces) water chestnuts, drained and chopped
3/4 cup dry bread crumbs
1 tablespoon beef bouillon granules
1-1/2 pounds ground beef
1 jar (16 ounces) peach preserves
1 bottle (12 ounces) chili sauce
1 envelope onion soup mix

Steps:

  • In a large bowl, combine the eggs, water chestnuts, bread crumbs and bouillon. Crumble beef over mixture and mix well. Shape into 1-in. balls. , In a large skillet, cook meatballs in batches until no longer pink; drain. Return all to the skillet., In a small saucepan, combine the preserves, chili sauce and soup mix. Cook over medium-low heat for 5 minutes. Pour over meatballs. Simmer, uncovered, for 10 minutes or until heated through.

You could just cook the meatballs in the sauce although you will experience grease in the sauce, it is better to pre-cook them first --- please adjust the amount of brown sugar, you might want to start with only 1/2 cup and add in more to taste --- this is *very* good!

1 1/2 cups ketchup
1 small onion, finely chopped
2 teaspoons fresh minced garlic
3/4 cup brown sugar (or to taste)
2 teaspoons liquid smoke seasoning
1 pinch cayenne pepper (optional or to taste)
1 1/2 lbs lean ground beef
2 tablespoons fresh minced garlic
1/3 cup milk or 1/3 cup evaporated milk
1/2 cup breadcrumbs or 1/2 cup quick-cooking oats
1 1/2 teaspoons seasoning salt
2 teaspoons chili powder (use the milk chili powder used for making chili)
1 teaspoon fresh ground black pepper

Steps:

  • Set oven to 350 degrees F.
  • Grease a 13 x 9-inch baking dish.
  • For the meatballs; in a bowl mix all ingredients together until well blended (add in more breadcrumbs or oats if the mixture is too soft).
  • Shape into about 1-1/2-inch balls.
  • Place meatballs into baking pan.
  • Bake meatballs for about 20 minutes, then drain all fat from pan.
  • For the sauce; in a bowl combine ketchup, garlic, brown sugar, chopped onion and liquid smoke; mix to combine.

  • Bake uncovered for about 45 minutes.
