One of my favorite recipes! The combination of paprika and mustard powder really offsets the sweetness of the orange juice. I tend to eyeball when cooking, so if you cook more breasts or use a large pan, make extra sauce to baste with. I'll frequently use extra glaze when baking just so there's plenty to pour over rice once it's done!

½ cup orange juice
½ cup vegetable oil
1 teaspoon grated orange zest
1 teaspoon paprika
1 teaspoon ground mustard
1 teaspoon salt
4 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk orange juice, vegetable oil, orange zest, paprika, mustard, and salt in a bowl. Arrange chicken breast halves in a baking dish; pour orange juice mixture over chicken.
  • Bake chicken breasts until no longer pink in the center and juices run clear, 30 to 45 minutes, basting with orange glaze every 10 to 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1/2 cup teriyaki sauce
1/4 cup frozen orange juice concentrate, thawed and undiluted
3 tablespoons dark sesame oil
1 tablespoon minced fresh garlic or 1 teaspoon garlic powder
1/2 teaspoon black pepper
1 whole chicken (cut into pieces)

Steps:

  • In a bowl stir together the teriyaki sauce, orange juice concentrate, sesame oil, garlic and black pepper until well combined.
  • Place the chicken pieces in a large bowl, then pour HALF the marinade over the chicken; toss with clean hands to coat, reserve the other half marinade for basting the chicken.
  • Cover and refrigerate the chicken for 8 hours.
  • Remove the chicken from the marinade and discrd marinade.
  • Set oven to 400 degrees.
  • Place the chicken pieces on a large foil-lined baking sheet that has been sprayed with cooking spray, skin-side up.
  • Sprinkle lightly with salt.
  • Bake for about 40-45 minutes or until the chicken is done.
  • Brush with the reserved marinade 5 minutes before end of cooking.

The soy sauce has a slightly dominent flavor to this glaze so if you are not a lover of soy sauce then pass this by, or you may use 1/2 cup soy sauce and 1/4 cup water --- depending on how sweet you want this sauce you may adjust the honey or brown sugar to suit taste, start with stated amounts and add in more if desired ---you may also adjust the chili flakes to suit heat level, if you are in a hurry you could omit browning the chicken firstly --- serve with cooked rice.

1 (3 -3 1/2 lb) whole chickens, cut into pieces
black pepper (optional)
3 -4 tablespoons vegetable oil
1 medium onion, chopped
4 -6 garlic cloves, chopped
1/4-1/2 teaspoon crushed red pepper flakes (or adjust to suit heat level)
3/4 cup low sodium soy sauce (use only low-sodium)
2 tablespoons cornstarch (for an extra thick glaze add in 1 teaspoon more)
1 teaspoon ginger powder

1/2 cup light brown sugar, packed
1/4 cup ketchup
1/4 cup Heinz Chili Sauce

Steps:

  • Set oven to 400 degrees F.
  • Grease a 13 x 9-inch baking dish.
  • Using your hands gently squeeze out as much excess water from the chicken pieces as possible, then dry using a paper towel/s.

  • Add in the soy sauce mixture; bring to a simmer mixing constantly, cook until bubbly and thickened (the mixture will be fairly thick) set aside.
  • Heat a small amount oil in a skillet over medium-high heat (you may lightly season the chicken with black pepper before browning if desired but do NOT salt).
  • Add in chicken and brown on both sides; remove to prepared baking dish.
  • Pour the sauce over the chicken then using your hands or tongs turn the chicken pieces to coat in the sauce (make certain that the chicken is facing skin side up).
  • Bake uncovered for about 45 minutes or until completely cooked, basting with the pan glaze about halfway through cooking time.

1 tsp garlic salt
1 dash(es) freshly ground pepper
3 1/2 lb whole chicken, quartered
6 Tbsp butter
1/4 c honey
3 Tbsp lemon juice
2 Tbsp soy sauce
1 dash(es) ground ginger

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Mix flour, garlic salt, and pepper, then coat chicken quarters thoroughly.
  • 3. Put 2 tablespoons of the butter in a shallow baking dish just large enough to hold the chicken in a single layer; put dish in oven to melt butter while oven preheats.
  • 4. Arrange chicken, skin side down, in melted butter. Bake, uncovered, 30 minutes.
  • 5. Meanwhile, melt remaining 4 tablespoons butter with honey, lemon juice, soy sauce, and ginger. After 30 minutes remove chicken from oven, turn skin side up, and cover with butter mixture. Continue baking, brushing occasionally with butter-honey sauce, until chicken is tender and richly browned (30 to 40 minutes more).

1 3/4 lb chicken wings, separated into drumettes and wing tips
2 tsp kosher salt
1 1/2 tsp baking powder
1 tsp ground coriander
1/2 tsp ground ginger
1/2 c red pepper jelly
1 Tbsp apple cider vinegar
1 Tbsp unsalted butter

Steps:

  • 1. Preheat oven to 425 F. Dry chicken wings with paper towels and place them in a large bowl.
  • 2. Mix salt, baking powder, coriander, and ginger together. Sprinkle wings with spice mixture and toss well to coat.
  • 3. Place chicken, fatty side down, in a single layer on a rimmed baking sheet lined with parchment paper.
  • 4. Bake wings 25 minutes on the first side and then turn and bake another 15-20 minutes. Remove chicken from baking sheet and drain on paper towels.
  • 5. In a large skilled combine the pepper jelly with the cider vinegar - bring to a boil over high heat, stirring occasionally until jelly melts. Add butter to jelly mixture and stir to combine.

1/4 c honey
1/2 c cranberry juice unsweetened
1/2 c 7 up
1 orange zest, and juice of orange
10 whole cloves ground
1 pear cut into slices

  • 1. preheat oven to 400
  • 2. whisk together cranberry juice,honey,7 up, orange juice and zest and cloves.
  • 3. place chicken and pear slices in baking dish, pour juice mixture over chicken and pears.
  • 4. cover in foil and cook 15 minutes.
  • 5. after 15 mins uncover and continue baking for 45 mins more basting every once in a while.
  • 6. serve with a salad topped with cranrasins and buttery rice.
