4 ½ cups fresh peaches - peeled, pitted and chopped
¼ cup finely chopped crystallized ginger
1 (1.75 ounce) package powdered fruit pectin
6 cups white sugar
½ teaspoon butter

Steps:

  • Bring peaches, ginger, and pectin to a boil in a large saucepan over medium heat. Stir in the sugar and butter; cook and stir until the sugar is dissolved. Return to a boil, stirring constantly for 1 minute more. Remove from heat, and skim off any foam with a spoon.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the peach jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

4 cups sugar
1 teaspoon vanilla extract

Steps:

  • Rinse seven 1-cup plastic containers and lids with boiling water. Dry thoroughly. In a Dutch oven, combine pears, pectin, lemon juice, lemon zest and ginger. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar. Boil for 1 minute, stirring constantly. Stir in vanilla., Remove from heat; skim off foam. 3 1/3 cups coarsely chopped plums (from about 1 1/4 pounds)
1 (1-inch) piece ginger (about 1 1/2 ounces)
1 1/3 cups sugar
1/4 cup Ball® RealFruit® Instant Pectin
2 tablespoons fresh lemon juice
1/4 teaspoon freshly ground black pepper
1/4 teaspoon ground cardamom

Steps:

  • Bring plums and 1 cup water to a boil in a medium saucepan, then reduce heat to low and simmer until plums begin to soften and liquid is reduced by about half, about 5 minutes.
  • Meanwhile, finely grate ginger, then squeeze juice into a small bowl; discard pulp.
  • Combine sugar and pectin in a large bowl. Add plum mixture, lemon juice, pepper, cardamom, and 1 tsp. ginger juice (discard any remaining juice), then stir constantly for about 3 minutes to activate pectin. Using a potato masher or fork, break up any large plum pieces, then let cool at least 30 minutes.
  • Ladle jam into sterilized jars, leaving 1/2" from the top to allow for expansion. Cover and chill.

  • Place peaches in a glass or plastic container with a lid and immediately mix with lemon juice to prevent browning. Stir in sugar and ginger. Cover and marinate in a cool place, 8 hours to overnight.
  • Inspect 5 half-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.

1 small lemon, zested and set aside (you'll be using the juice and zest)
Juice of one small lemon
1 box of pectin* (I use Sure-Jell)
7 cups sugar**
1 tablespoon finely chopped crystallized ginger
1/4 teaspoon freshly grated ginger root (I keep ginger root frozen)
1/4 teaspoon freshly ground nutmeg
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves (optional, as it can be overpowering)
1/8 teaspoon ground allspice
1 Tbsp vanilla (optional)
Pomona Universal Pectin can be used, which requires less or no sugar
If using Pomona Pectin, sugar can be decreased to 3-4 cups

Steps:

  • Equipment needed/recommended: Canning kit: includes pot with lid, canning rack, funnel, tongs Canning jars, bands and lids, washed and sanitized (I set them in the water canning pot, while the water is coming to a boil, remove with tongs and set on a baking sheet with a towel Large bowl of ice with water (for blanching the peaches) For the peaches: Wash the fruit and bring a large pot of water to a boil. With a paring knife, cut a small "x" on the bottom of each peach (I also cut an "x" on the top of each peach). When the water is boiling, gently place the peaches in the pot and cook for 2 minutes, max. Using a slotted spoon, remove the peaches into an ice water bath and allow to sit for a few minutes. Using a paring knife (I use my fingers), pull on the skin at an "x" and the peels should come right off. If adding the ginger and spices, prep those and set aside. For the jam: Mash (or use the pulse feature on a food processor) the peeled peaches, to yield 8 cups. Add the prepared fruit into a large pot, and add the sugar. Bring to a gentle boil, and slowly add the pectin. Add the lemon zest, lemon juice, ginger and spices (if using) and vanilla(or vanilla bean seeds). Allow the jam to come to a rolling boil, can take about 10 minutes. TIP: I know when the jam has thickened enough when it coats the back of a spoon. I like to freeze a few spoons, to better test this theory. Once the jam is thick, turn off the heat. Carefully spoon the jam into sterilized jars, leaving about 1/4" head space. Add a lid and band and tighten-- but don't over tighten. I like to water can the filled jars, by placing them into a canning rack, and bring to a boil for about ten minutes. Remove, carefully, with tongs onto a baking sheet with a fresh towel. Listen for the "ping" as each can self-seals. Enjoy this jam with fresh scones or homemade bread. Delicious!

sugar
water
4 -8 ounces preserved gingerroot, rough chopped (ginger in a sticky syrup)
2 lemons, juice and zest of, grated

  • Use a trivet under the pot.
  • Stew the apples gently in 10 fl.oz. water until applesauce consistency (I mash with potato masher).
  • Add 12 oz. by weight of sugar for each pint (20 fl.oz.) of apple sauce and bring to the boil. Simmer lightly.
  • Add the lemon juice and rind.
  • Weigh,rough chop the ginger and add to apples.
  • Bring back to boiling point (caution this scorches easily). Test for set. This is quick because of the natural pectin.
  • Bottle in sterilised jars.

1 lb jumbo lump crabmeat, picked over
4 cups cornflakes
Accompaniment: tomato ginger jam
Garnish: thinly sliced fresh cilantro

Steps:

  • Whisk together mayonnaise, egg, mustard, Old Bay, lemon juice, salt, pepper, and Tabasco, then gently stir in crabmeat. Chill, covered, 2 hours.
  • Pulse cornflakes in a food processor until coarsely ground and put in a shallow dish. Form 1 heaping teaspoon crab mixture into a 1 1/2-inch-diameter cake (mixture will be very moist), then gently dredge in cornflakes. Make more crab cakes in same manner, transferring to buttered baking sheets. Chill, covered, at least 1 hour.
  • Preheat oven to 400°F.
  • Bake crab cakes in batches in middle of oven until crisp and golden, 8 to 10 minutes. Transfer with a spatula to a platter and top each with about 1/2 tablespoon tomato ginger jam.

Steps:

  • In a large bowl, toss together all the ingredients. Let stand, covered with plastic wrap, at room temperature 3 hours, or refrigerate overnight.
  • In a heavy-bottom 5-quart pot, bring apricot mixture to a boil over medium-high heat. Reduce heat to medium-low; simmer, skimming foam from surface as needed, until fruit is transparent and falls apart slightly, about 20 minutes (cooking time will vary depending on the ripeness of the fruit). If the mixture seems too watery, strain out fruit, and continue cooking syrup about 5 minutes more, then return fruit to pan. Let cool completely, then pour the jam into 1-to-2-cup-capacity airtight containers.

20 fluid ounces canned crushed pineapple (include liquid)

1 (3 ounce) package orange gelatin

Steps:

  • Use zucchini that is young, about 10 inches long.
  • Larger zucchini may also be used.
  • Wash zucchini and then cut off both ends of zucchini and discard.
  • Cut zucchini into quarters (length wise).
  • Remove any soft zucchini meat and seeds from the middle and discard.
  • Coarsely shred zucchini and add to a cooking pot.
  • Add water and ginger to cooking pot; bring to boil and cook for 15 minutes, stirring occasionally.
  • Add crushed pineapple including liquid, sugar and rapid boil for 5 minutes.
  • Remove from heat.

This is Mark Bittman recipe I found in our local newspaper. This one combines the spark of ginger with the smoky heat of chipotle. It can be used anywhere you would use a chutney. Make a dip, pour over cream cheese, serve with grilled pork or chicken and amazing on a BLT.

5 garlic cloves, chopped
1 chipotle chile
3/4 cup sugar (to taste)
1 large tomatoes, seeded and coarsely chopped
1 pinch salt
1/2 teaspoon cracked black pepper
1 1/2 cups water

Steps:

  • Combine all ingredients in a small saucepan.

Figs and ginger made sweet to enjoy over cream cheese on toast or top a grilled or roast pork or chicken. Try as a spread in a wrap.

Number Of Ingredients 5

1/4 ounce fresh ginger, 1/4 cup peeled sliced super thin and the rough chop
2 lbs fresh figs, 4 cups pureed with some chunks
2 cinnamon sticks
1 1/2 lbs sugar, 3/12 cups
1 orange, zest and fruit chopped with no pith

Steps:

  • PREPARE boiling water canner. Wash and heat jars and lids in simmering water until ready for use. Do not boil. Set bands aside.
  • COMBINE all ingredients in a non reactive heavy bottom pot.
  • Bring to a roiling boil ( full rolling boil over high heat is when stirring it still is boiling while being stirred) When temperature reaches 22 degrees remove cinnamon sticks.
  • Carefully ladle hot jam into hot jars leaving 1/4 inch head space. Wipe rim. Center lid on jar. Center lid on jar. Apply band until fit is fingertip tight. Process in a boiling water canner for 10 minutes, be sure the jars are covered by at least 1 inch of water, adjusting for altitude.
  • Remove jars and cool in a draft free spot. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed. Remove bands, wipe jars, label storing in a cool dark pantry for up to 1 year. Or wrap a ribbon if giving for gifts.

Zucchini, Pineapple, Ginger Jam Kicked up With Habanero's image

I came up with this sweet and spicy jam after picking goodies from my garden and looking at Recipe #95600 which I posted 4 years ago. Had home growing Habaneros so added and what more do I need to say? This would be great served over a grilled chicken or fish.

Number Of Ingredients 8

2 lbs seeded and cubed zucchini
1 (20 ounce) can crushed pineapple
6 -8 habaneros
1 -3 ounce crystallized ginger (use more if you like more kick less if you don`t!I myself like a lot!)
5 cups sugar
3 ounces of ball fruit jell (liquid pectin) or 3 ounces Certo (liquid pectin)
1 (6 ounce) box pineapple Jell-O
food coloring (Red and yellow)

Steps:

  • Place zucchini, pineapples, habanero`s and crystallized ginger in a food processor and puree.
  • Add to a heavy bottom pot with sugar and boil for 20 minutes. That`s a rolling boil.
  • Stirring all the while.
  • Add Certo and bring to a full rolling boil for 1 more minute add jello and stir to blend.
  • Add some red food coloring and more yellow to produce a color to your liking.
  • Ladle hot jam into hot jars leaving 1/4 inch head space. (Filling 4-1 pint jars or 8 1/2 pint jars.I like to do the 8 jars because there would be more to give as gifts.) Wipe rim. Center lid on jar. Apply band until fit is fingertip tight.
  • Process in a boiling water canner for 10 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed. Label, Decorate, And Gift!

5 large quinces, peeled, cored and roughly chopped, about 1 . 1 kg prepared weight
650 g granulated sugar
350 ml water
2 lemons, zest of and juice
30 g gingerroot, peeled and shredded

  • Briskly simmer ingredients for 40 minutes.
  • Stir often till quinces are very soft and jam is very thick.
  • Colour should be orange pink.
  • Spoon into hot sterilized jars, screw on lids.
  • Turn upside down to cool.
  • It will keep up to 3 months in a cool dark place.
