SPICY GINGER APPLESAUCE CAKE WITH CREAM CHEESE FROSTING

Spicy Ginger Applesauce Cake With Cream Cheese Frosting image

This simple sheet cake is packed with three kinds of spicy ginger: fresh, ground and crystallized. The cake is delicious on its own, but cream cheese frosting and a sprinkle of crystallized ginger push it closer to dessert. The cake can be made a day in advance, covered and refrigerated and brought to room temperature before serving. The crystallized ginger should be sprinkled on just before serving as it will weep in the fridge.

Time 1h

Yield 12 servings

Number Of Ingredients 24

1 1/4 cups/275 grams light brown sugar
2 large eggs
2 cups/480 milliliters unsweetened applesauce
3/4 cup/180 grams neutral oil like canola or grapeseed
2 tablespoons fresh ginger, peeled and finely grated
1 tablespoon ground ginger
1 teaspoon finely grated orange zest
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1/4 teaspoon ground allspice
1 teaspoon vanilla extract
3/4 teaspoon kosher salt
2 cups/255 grams all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup/85 grams finely chopped crystallized ginger
12 ounces/350 grams cream cheese, softened
1/2 cup/115 grams unsalted butter, softened
2 1/4 cups/226 grams confectioners' sugar, sifted
1 tablespoon fresh ginger, peeled and finely grated
1 teaspoon lemon zest
1 teaspoon vanilla extract
Pinch of kosher salt
1/2 cup/85 grams finely chopped crystallized ginger

Steps:

  • Heat oven to 350 degrees. Butter and flour a 9-by-13-inch glass or light-colored metal baking pan.
  • In a large bowl, whisk sugar and eggs until light, about 1 minute. Add applesauce, oil, fresh and ground ginger, orange zest, cinnamon, cardamom, allspice, vanilla extract and salt. Whisk to combine.
  • Add the flour, baking soda and baking powder, and whisk until just combined. Fold in 1/2 cup chopped candied ginger.
  • Pour the batter into the prepared pan, smooth the top and firmly tap the pan on a countertop to release air bubbles. Bake the cake until golden and puffed, and a tester inserted into the center comes out clean, 25 to 35 minutes. Cool the cake in the pan on a rack.
  • When the cake is cool, make the frosting: Add the cream cheese and butter to the bowl of a stand mixer fitted with the whisk attachment. Mix on medium-high until smooth, stopping the mixer occasionally to scrape the bottom and sides of the bowl. Turn the speed to low, and slowly add the confectioners' sugar. Mix until the sugar is moistened, then turn the mixer speed up to medium-high and whip until smooth. Scrape down the bottom and sides of the bowl. Add the ginger, lemon zest, vanilla and salt, and mix on low.
  • Spread the frosting over the cooled cake in dramatic swoops and swirls, then sprinkle the remaining 1/2 cup crystalized ginger on top. Serve at room temperature.

GINGER GOLD APPLESAUCE

Ginger Gold Applesauce image

Well, it's my favorite time of year and there is nothing better than in the months of Autumn to cook up batches of homemade applesauce. Very common to many cooks to make applesauce in the crock-pot but when my sister Linda saw that I had posted a picture of my applesauce on Facebook she asked me for the recipe. So, I decided I...

Time 8h30m

Number Of Ingredients 6

1 peck of apples, ginger gold
1/4 c lemon juice
4 - 6 medium cinnamon sticks
1 - 1 1/2 c brown sugar, dark
1/4 c water
2 tsp salt

Steps:

  • 1. I used two bags of Ginger Gold apples only that equaled a peck.
  • 2. It was my first time trying the Ginger Gold and though they are gone now for the year, I will look forward to making more applesauce with them next year. They are a good one for the sauce making.
  • 3. Peel, core, and slice your apples. Place them in the crock pot. I always sprinkle the lemon juice in over the apples while I'm cutting them up. --- (Not all apples fit at first. After they cooked for awhile I was able to add the rest of the apples from the 2 bags.)
  • 4. I put the crockpot on low for 8 to 10 hrs. Stirring occasionally. About, 1/2 way through cooking I add my brown sugar....just about 1/2 cup. Then, when they are cooked down where they are nice and soft I remove the cinnamon sticks & blend with my emulsion blender till smooth. I taste and then add more brown sugar if necessary & my salt at this point.
  • 5. I then ladle out the applesauce into my Tupperware freezer containers and let cool before putting them in freezer. My favorite way to taste & eat applesauce is on a slice of toasted homemade bread. (I suppose because my Grandmother Roberta Campbell used to make her own bread and applesauce and this is how we always ate it.) Many of you already make applesauce, but my Sissy asked if I would give her the recipe so I thought I would post it in here for others who may not know how to make in the crock-pot & that way I could also give to my sister.

LEMON GINGER CRANBERRY APPLESAUCE

Lemon Ginger Cranberry Applesauce image

I wanted a brighter-tasting cranberry sauce instead of one that had just a sweet note of sugar. Using lemonade concentrate made it easy and the ginger was perfect with the tart cranberries. Adding lemon peel would be good with this also, and this is wonderful served on top of turkey soup! Also good for any time of the year.

Serve warm and enjoy two types of heat! My family of four gives this applesauce eight thumbs up, and I hope you enjoy it too! PEACH GINGER APPLESAUCE

Categories     Condiment/Spread     Side     Kid-Friendly     Quick & Easy     Apple     Fall     Healthy

Yield 8 cups

Number Of Ingredients 6

• 4 lbs. (approx. 10-11) naturally sweet apples (try any combination of Fuji, Honey Crisp, Gala, Golden Delicious, Pink Lady), cored & sliced, peel left on
• 2 cups sliced peaches, fresh or frozen
• 1/2 cup (for stove top) or 1/4 cup (for slow cooker) unsweetened apple cider; substitute thawed apple juice concentrate for a sweeter applesauce
• 1 tablespoon fresh lemon juice
• 2 teaspoons dry powdered ginger
• 1 teaspoon almond extract

Steps:

  • STOVE TOP: Add apple slices, peaches, cider (or apple juice concentrate), lemon juice, ginger, and almond extract to large pan. Bring liquid in bottom of pan to a boil over medium high heat, lower heat to medium, cover and cook for 45-60 minutes, stirring every 15 minutes, until apples and skin are soft. SLOW COOKER: Add ingredients, cover, and cook 3 hours on high or 5 hours on low, until apples and skin are soft. (Note: Slow cookers can vary; cooking times are approximate.) BLEND IT: Use an immersion blender (or blender or food processor) to blend the cooked apples into a sauce consistency with whatever texture you prefer--smooth or chunky. (The skin should blend in easily; if not, return to stove or slow cooker and continue cooking until softened enough to blend.) STORE IT: Refrigerate for up to 1 week or freeze for up to 1 year. Use water process canning to store it at room temperature for up to 1 year.

Tips:

  • Choose the right apples: Use firm, tart apples like Granny Smith or Honeycrisp for the best flavor and texture.
  • Peel and core the apples: This will help the applesauce to cook evenly and smoothly.
  • Add some spices: Ground cinnamon, nutmeg, and ginger are all classic additions to applesauce. You can also add a pinch of salt to enhance the flavor.
  • Cook the applesauce until it reaches your desired consistency: If you like chunky applesauce, cook it for a shorter amount of time. If you prefer smooth applesauce, cook it for longer.
  • Sweeten the applesauce to taste: You can use sugar, honey, or maple syrup to sweeten the applesauce. Start with a small amount and add more to taste.
  • Let the applesauce cool before serving: This will allow the flavors to meld together and the applesauce to thicken slightly.

Conclusion:

Ginger applesauce is a delicious and versatile condiment that can be enjoyed in many different ways. It's perfect for topping pancakes, waffles, and yogurt. It can also be used as a filling for pies and tarts. And it's even good enough to eat on its own as a healthy snack. So next time you're looking for a quick and easy recipe, give ginger applesauce a try. You won't be disappointed!
