GINA'S SPICY CREAMED SPINACH

3 bunches fresh spinach, washed well, rough stems removed
2 tablespoons butter
2 tablespoons extra-virgin olive oil
2 shallots, chopped
3 cloves garlic, chopped
1 1/2 teaspoons red pepper flakes
3/4 cup heavy whipping cream
1/4 teaspoon freshly ground nutmeg
1/4 cup freshly grated Parmesan
Salt and freshly ground black pepper

Steps:

  • Bring a pot of salted water to a boil over high heat. Add the spinach and simmer for 2 minutes. Drain the spinach in a colander. Press down on the spinach with a clean kitchen towel to release all of the liquid. Remove to a cutting board and roughly chop.
  • Heat a large saute pan, over medium-high heat and add the butter and olive oil. When the butter has melted, add the shallots and garlic and saute until fragrant and tender. Stir in the red pepper flakes and spinach. Sprinkle with salt and pepper, to taste. Saute briefly, then add the heavy cream, nutmeg and Parmesan. Reduce the spinach mixture until it has thickened, about 2 minutes. Transfer to a serving bowl and serve.

4 tablespoons butter
2 cloves garlic, chopped
1 shallot, chopped
1/4 cup all-purpose flour
1 pint heavy whipping cream
2/3 cup freshly grated Parmesan
1/2 cup shredded Cheddar
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 lemon, juiced
Dash hot sauce
Dash Worcestershire sauce
2 (10-ounce) boxes collard greens, thawed and drained
1 (14-ounce) jar artichoke hearts, drained and coarsely chopped

Steps:

  • Preheat oven to 425 degrees F.
  • Melt butter in a 2-quart saucepan over medium heat. Add garlic and shallots and saute until tender, about 3 minutes. Stir in the flour and cook for 1 minute until it reaches a golden blonde color. Slowly whisk in the cream and turn up heat until it thickens.

1 teaspoon kosher salt
1/2 teaspoon smoked paprika
1/2 teaspoon ground cumin
Freshly cracked black pepper
1 cup pecan halves
2 teaspoons Dijon mustard
1 small shallot, minced
3 tablespoons balsamic vinegar
3 tablespoons olive oil
Pinch sugar
Kosher salt and freshly ground black pepper
One 5-ounce package pre-washed baby spinach
4 slices bacon, cut into 1/4-inch pieces, fried crisp
4 ounces crumbled blue cheese
1 cup halved cherry tomatoes

4 pkg (8 oz. each) Philadelphia Cream Cheese
16 oz bowl sour cream
1 small container whipping cream
1 pkg frozen chopped spinach, thawed and drained
1 can (14 oz.) artichokes drained and chopped
1 Tbsp basil
1 Tbsp rosemary
1 Tbsp secret blend (your favorite pepper, salt, etc..)
Round loaf sourdough
Paprika sprinkled on top when done

Steps:

  • Put all ingredients in crock-pot on high, and stir occasionally till well mixed. Turn on low stirring at least every 20 minutes.
  • Cut top 1/2" of bread off. Hollow it out to 1", slice bread in 1" cubes and place toothpicks in each. If it is too thick, add some whipping cream or heavy cream or milk to make it dipping consistency.

3 tablespoons butter
1 shallot, finely chopped
1 -2 garlic clove, chopped
2 tablespoons all-purpose flour
1 cup heavy whipping cream (or half and half)
1 (10 ounce) box frozen chopped spinach, thawed, drained and squeezed dry
1 (8 ounce) jar artichoke hearts, drained and chopped
1 (10 ounce) can diced tomatoes and green chilies (recommended, Rotel)
1 cup shredded four cheese blend
tortilla chips
cut vegetables, for serving
