Time 35m

Number Of Ingredients 11

1 1/2 cups long grain white rice (*)
1/4 cup oil ((vegetable or canola oil))
1 teaspoon garlic (, minced)
1/4 medium onion (, finely diced)
1/4 cup tomato sauce (, or 2 pureed tomatoes*)
2 teaspoons tomato bouillon (granulated, or cubes*)
1/4 teaspoon salt
1 carrot (, diced)
1/2 cup peas ((frozen or fresh))
3 cups water
1-3 whole serrano peppers (, optional)

Steps:

  • Rinse the rice in a fine mesh strainer until the water runs clear. Set aside.
  • In a large saucepan over medium-high heat, add the oil. Once hot, add the rice and stir to combine. Cook over medium heat, stirring frequently, until the rice is lightly golden brown all over (about 10 minutes).
  • Add tomato sauce, garlic, and diced onion to the pan. Stir. Add tomato bullion, salt, carrots, peas, and water (and serrano peppers, if using. They add a little flavor, but not spice.).
  • Bring to a boil, then cover, reduce heat to low and cook for about 20 minutes or until the water is completely absorbed. Remove from heat and allow to rest for 5 minutes before fluffing with a fork.

Time 30m

Yield 6 to 8 servings

Number Of Ingredients 14

2 ears corn, husked
Olive oil, for brushing
1 cup cooked brown rice
2 (15-ounce) cans pinto beans, drained and rinsed
1 red bell pepper, seeded and finely chopped
1 bunch green onions, sliced
1 small jalapeno, seeds and rib removed, diced

Juice of 1 lime

Tips:

  • Use medium or long-grain white rice. Short-grain rice, like sushi rice, will make your dish gummy.
  • Rinse the rice before cooking. This will remove the starch and help the rice cook evenly.
  • Use a heavy-bottomed pot or Dutch oven. This will help to distribute the heat evenly and prevent the rice from burning.
  • Bring the water to a boil before adding the rice. This will help to prevent the rice from sticking together.
  • Cover the pot and reduce the heat to low. This will help the rice to cook evenly and absorb all of the liquid.
  • Fluff the rice with a fork before serving. This will help to separate the grains and make the rice light and fluffy.

Conclusion:

Gina's Mexican rice is a delicious and easy-to-make side dish that is perfect for any occasion. It is a versatile dish that can be served with a variety of Mexican dishes, such as tacos, burritos, and enchiladas. It can also be served as a main course with a side of beans and salad. If you are looking for a flavorful and satisfying side dish, Gina's Mexican rice is a great option.
