PASTA WITH MUSHROOMS, FRIED EGGS AND HERBS

Pasta With Mushrooms, Fried Eggs and Herbs image

This fall-inspired, earthy pasta uses a combination of mushrooms for depth of flavor and is topped with a runny egg, which silkens up the sauce. Supermarkets these days generally have a good selection of different varieties such as cremini and shiitake, but if your standard white-button mushroom is all that's available, this dish will still be a winner. If you're not feeling pasta, the mushrooms are equally good served on top of creamy polenta or on their own. Red wine not optional.

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 14

Kosher salt
1 pound rigatoni or mezzi rigatoni
3 tablespoons olive oil, plus more for serving
4 large eggs
Black pepper
4 tablespoons unsalted butter
1 1/2 pounds mixed mushrooms such as cremini, white button and shiitake, trimmed and roughly torn or chopped
1 large shallot, finely chopped
2 garlic cloves, finely chopped
2 teaspoons thyme, finely chopped
1/2 teaspoon red-pepper flakes
1/4 cup grated pecorino or Parmesan, plus more for serving
1/4 cup roughly chopped Italian parsley, leaves and tender stems
2 tablespoons torn mint, for garnish (optional, but recommended)

Steps:

  • Bring a large pot of well-salted water to a boil and cook pasta until it's al dente, 1 to 2 minutes less than package directions. Drain, reserving 1 1/2 cups pasta water.
  • Meanwhile, heat 1 tablespoon olive oil in a nonstick skillet over medium heat. Crack the eggs into the skillet and season with salt and pepper. Fry until the undersides are golden and crispy and the yolk is still runny, 2 to 4 minutes. Using a spatula, transfer eggs to a paper towel-lined plate.
  • Heat 2 tablespoons of butter and the remaining olive oil in a 12-inch skillet over medium heat. Once the butter melts, add the mushrooms and sauté until deeply browned, about 12 to 15 minutes. Add the shallots, garlic, thyme and red-pepper flakes, and cook for 1 minute. Season well with salt.
  • Add the pasta to the skillet along with the remaining butter, grated cheese and 1 cup of the pasta water, tossing everything together until the butter melts and the sauce is glossy, 1 to 2 minutes. Add the parsley and toss again to combine, adding more of the pasta water as needed to loosen up the sauce.
  • Serve in bowls with a fried egg on top of each portion and scatter with the mint, if using. Pass additional grated cheese at the table and drizzle with a bit more of the olive oil if desired.

Time 35m

Yield 6 servings

Number Of Ingredients 8

2 tablespoons olive oil
1 shallot, finely chopped
1 1/2 teaspoons kosher salt, divided
3 (10 ounce) packages cremini mushrooms, trimmed and quartered
4 sprigs fresh thyme
2 tablespoons dry Marsala, sherry or white wine, optional
1/2 cup chicken or vegetable broth
1 tablespoon unsalted butter

Steps:

  • Heat a large straight-sided skillet over medium high heat. Add the oil and heat another 30 seconds. Add the shallot and 1/2 teaspoon of the salt to the hot pan and cook, stirring often, for 2 minutes or until fragrant and beginning to soften. Add the mushrooms to the pan along with another 1/2 teaspoon salt and the thyme. Cook, stirring often, until the mushrooms have let off some of their juices are beginning to brown, about 10 minutes.
  • Deglaze with the Marsala, if using, and add the broth and remaining salt. Reduce the heat to low to maintain a gentle simmer. Cover and cook for 5 minutes. Uncover the pan, increase the heat to medium and cook until the liquid has reduced by half, about an additional 5 minutes. Discard the thyme sprigs, stir in the butter and serve.

Tips:

  • Choose the Right Mushrooms: Select fresh, firm, and plump mushrooms with no blemishes or bruises. Gias mushrooms are a great choice for this recipe due to their meaty texture and earthy flavor.
  • Proper Cleaning: Before cooking, wipe the mushrooms gently with a damp paper towel to remove any dirt or debris. Avoid washing them under running water, as this can absorb moisture and make them soggy.
  • Slicing Technique: Slice the mushrooms evenly to ensure they cook uniformly. For a more visually appealing dish, cut them into thin, uniform slices.
  • Use Good Quality Eggs: Opt for fresh, free-range eggs for the best flavor and nutritional value.
  • Seasoning is Key: Don't be afraid to season the mushrooms and eggs generously. Salt, pepper, garlic powder, and paprika are classic seasonings that complement the dish well.
  • Cook Over Medium Heat: Cooking the mushrooms and eggs over medium heat allows them to cook evenly without burning or overcooking.
  • Don't Overcrowd the Pan: Avoid overcrowding the pan with mushrooms and eggs, as this can prevent them from cooking properly and result in a watery dish.
  • Serve Immediately: For the best taste and texture, serve the gias mushrooms and egg dish immediately after cooking. Garnish with chopped parsley or chives for an extra touch of flavor and color.

Conclusion:

Gias mushrooms and eggs is a simple yet flavorful dish that can be enjoyed for breakfast, lunch, or dinner. With its combination of savory mushrooms, tender eggs, and aromatic seasonings, this recipe is sure to satisfy your taste buds. It's also a versatile dish that can be customized to your liking by adding additional vegetables, herbs, or spices. Whether you're looking for a quick and easy meal or a hearty and comforting dish, gias mushrooms and eggs is a great option that won't disappoint.
