GERMAN PANCAKE
Piping hot and puffy from the oven, this golden pancake made a pretty presentation for a skier's theme breakfast I hosted. Served with homemade buttermilk syrup, it's an eye-opening treat. Make several German pancakes if you're feeding a crowd, and keep in mind that my easy syrup tastes great on waffles and French toast, too. -Renae Moncur, Burley, Idaho

DUTCH BABY (AKA: GERMAN PANCAKE OR PUFF PANCAKE)
My sister Daralyn introduced this recipe to our family soon after she was married. Her recipe evolved from a favorite breakfast, to our families standard birthday breakfast. When served for a birthday we add candles and a round of "Happy Birthday" but it tastes just as good without those to amenities!

PANNEKOEKEN (APPLE PIE PANCAKE/GERMAN)
I was watching Diners, Drive-ins and Dives and this was made and looked too good. Luckily it was submitted for publishing on the site and wasn't on food.com. This is a recipe courtesy of Maria Bayer, Magnolia Pancake Haus. People eat it for breakfast at the restaurant but could also be served as a dessert.

Steps:
- Preheat the oven to 400 degrees F.
- Add the cinnamon, nutmeg and apples to a pan. Saute the apples over medium-low heat until slightly soft, 3 to 5 minutes.
- Meanwhile, prepare the batter. Mix the milk, vanilla and eggs in a bowl. Add the flour, granulated sugar and salt and whisk lightly (some lumps are ok but not too many).
- Increase the heat under the apples to medium and add the brown sugar and butter. Cook until a syrup forms, about 3 minutes, then add the batter all at once to the center of the pan. Swirl the apple syrup mix through the batter, using a heatproof spatula, to form ribbons (you do not want to fully combine the apple-sugar syrup into the batter). Cook until small bubbles form around the edge.
- Finish cooking the pannekoeken in the oven, 12 minutes. To serve, invert a 12-inch plate over the pan and flip the pan to turn out the pannekoeken. Sprinkle with powdered sugar, top with whipped cream and enjoy!

GERMAN APPLE PUFF PANCAKE
We saw this recipe on Michelle Greenwald's (www.magicalmeltingpot.com)Yahoo Blog, and gave it a try. We both assumed it would be too sweet and gooey for breakfast, but since it's dreary and rainy this morning, figured we'd fire up the oven and give it a try. YUM! It wasn't too sweet at all, and the pancake had a bit of a custardy taste. It was easy to put together and made enough for the both of us, with a couple bites of crust left over for our four dogs. The recipe omits instructions for making up the batter, but we just combined the ingredients and mixed well. We used a 10-inch iron skillet, but any oven-safe non-stick pan would do.

GERMAN PANCAKE (ALSO CALLED DUTCH BABY)
The German pancake, also called Dutch Baby, is like a crepe crossed with a popover. It's ridiculously easy to make (the batter is made in under 2 minutes in a blender) and is always a crowd pleaser. Watching the pancake puff up before your very eyes is always entertaining. You can add fresh fruit to the batter, add it on top after baking ,or go crazy and do both! Then you have the option of topping it with the more traditional squeeze of fresh lemon juice and powdered sugar or simply drizzle on the maple syrup, for the syrup lovers.

Steps:
- Preheat the oven to 425 degrees F and put a cast iron skillet (if using) into the oven to heat up.
- After about 15 - 20 minutes (or longer if your oven is slow), the skillet should be hot. Add the butter to the skillet and return it to the oven. If you're using a cake pan, add the butter to the cake pan and put it into the oven.
- Add 3 eggs and the sugar to blender and blend on low speed for 1 minute. The eggs should be light colored and bubbly. Then add the flour and milk and blend for 10 seconds, until evenly mixed.
- Take the skillet or cake pan out of the oven and make sure the butter has completely melted, with a baster spread the butter over the entire surface of the pan. Pour the batter into the hot skillet or pan and scatter the fruit on top of the batter if using.
- Bake at 425 degrees F for 18 - 22 minutes, or until the sides and middle have puffed up and browned.
- Serve with fresh fruit and a lemon slice and powdered sugar or maple syrup.

Cooking with children requires patience and a deep tolerance for mess. It rewards magic tricks - true transformation of ingredients into something delicious. This recipe delivers, and how, with a pancake that puffs up beautifully as it cooks. You can top as suggested with warm applesauce, jam or maple syrup, or try fresh fruit and whipped cream instead. GERMAN PANCAKE SOUP
This is my MIL's recipe that she has made for years. My whole family loves it. DH even loves putting jam and a sprinkle of sugar on the pancakes. He rolls them up and will eat them for breakfast. They are like a crepe. Some people like to just put the broth over the cut pancakes others like it with the veggies.

GERMAN APPLE PANCAKE
Also known as a Dutch baby, this is a terrific 'special day' recipe. If you are strapped for time, you can start it the evening before and pretty much pop it in the oven. The presentation is excellent! You can shorten the preparation time by using apple pie filling, but the crisp of new apples really makes it.

SUPER PUFFY GERMAN PANCAKE
This is a family special I grew up with my mom making almost every saturday. It puffs beautifully and looks so complicated, but I've found (with my own family) it's easier than any other breakfast I can make, besides cereal. It impresses guests like you wouldn't believe. My husband still brags about how his wife is such the gourmet...no one needs to know how easy it really is

Steps:
- Preheat oven to 425.
- While oven is heating, pour all the milk into blender, and set on the lowest speed. Just let it run, the more bubbles the milk has, the puffier the pancake will be.
- When oven is hot, put butter in large cast iron skillet and set into the oven, until the butter is bubbly in the pan.
- Crack eggs in a separate cup, and pour one at a time into blender (while it's still blending).
- Pour in the flour and the vanilla (if desired) and once it's mixed, pour immediately into hot cast iron skillet.
- Cook for 20 minutes.
- Now we're high altitude at 5000ft -- so if your lower, you may need to cook it longer. Just watch it, and when the edges are browned and it's all puffy, your ready to roll.
- Eat it just like any pancake, or some I know like it with lemon juice and powdered sugar. But either way, you'll love it! =D.
- Note: If you want to show it off, you'll have to make sure you have an audience as soon as it comes out of the oven, because it begins to collapse as it cools. It will keep some of its shape, but the real 'pow' is first thing out of the oven.

GERMAN PANCAKE SHREDS (FOR CLEAR SOUPS)
This is my final recipe from *Modern German Food* by Roz Denny. Roz says "Soup can be an elegant, light starter to warm you & whet your appetite. Germans are great soup makers & have a wonderful variety of accompaniments including pancake shreds." With all due respect to Roz, I had to amend her recipe slightly to make this work for me but ... as shown here, these pancakes are a fun, very easy & make-ahead way to dress up a clear soup w/just a bit of meat (or veggies + potatoes as you like). - Spray a crepe pan or like size non-stick fry pan w/PAM. Heat the pan till you feel a good heat rising when holding the palm of your hand over the pan.
- Pour a sml ladle of batter in the center of the pan & work quickly to swirl it around the pan so it fills the base. Cook till the liquid disappears & the edges of the pancake begin to pull away from the pan surface.
- Flip the pancake to cook the other side for just a few seconds. Shake pancake out of the pan onto a plate, set pan aside (off heat), tightly roll the pancake & set aside.
- Return pan to heat & repeat process w/rest of batter. Allow pancakes to cool & cut them into 1/2-in threads. Set aside till ready to add to your soup (Batter should net 4 pancakes & the threads will be like a dense noodle or dumpling in texture).
- TO SERVE: Ladle hot soup into 4 bowls & put an equal amt of threads in ea bowl. Sprinkle w/parsley & serve immediately.
- NOTE RE SOUP: I used homemade chicken stock w/fat removed & sml bits of chicken left in the stock. I added 2 sliced celery ribs, 2 sml potatoes cut bite-sized & *Bjuga* (Icelandic sausage) to try to replicate the German influence. :-).

Tips:
Use a large skillet: German pancakes need room to spread out, so make sure you're using a skillet that's at least 10 inches in diameter. Preheat the skillet over medium heat: This will help the pancake cook evenly. Don't flip the pancake: German pancakes are traditionally cooked only on one side. Cook the pancake until it's golden brown and cooked through: This will take about 10-12 minutes. Serve the pancake with your favorite toppings: Popular toppings include butter, powdered sugar, lemon juice, and fresh fruit. Conclusion:
German pancakes are a delicious and easy-to-make breakfast or brunch dish. They're perfect for a special occasion or a lazy weekend morning. With a few simple ingredients and a little bit of time, you can enjoy this classic German dish in the comfort of your own home.
