This old time passed down recipe was given to me by a dear friend. The cherries and walnuts in big bite size adds to the charm of this wonderful cake. The cinnamon sugar dusting adds a crunchy outside texture to this cake...Yum Yum!

Time 2h

Yield 12 serving(s)

Number Of Ingredients 12

1/2 lb margarine
4 eggs
2 cups sugar
1 teaspoon vanilla
1 cup sour cream
1 teaspoon baking powder
1/2 teaspoon salt
2 cups flour
10 ounces maraschino cherries (drained, either cut in half or left whole)
2 cups walnuts (whole half pieces)
3 tablespoons sugar
1/2 teaspoon cinnamon (set aside for pan dusting)

Steps:

  • Cream together the two cups of sugar, vanilla, margarine, and eggs.
  • Add the sour cream and blend well.
  • Add the dry ingredients (except the set aside ingredients).
  • Blend together well.
  • Prepare a bundt pan by coating it well with shortening and dusting the pan with the 3 tbs sugar and the 1/2 teaspoons cinnamon.
  • Pour the cake batter into the pan and poke the walnuts and cherries evenly as possible down into the cake batter to distribute these two ingredients evenly.
  • Or you can take your chances by adding them to the batter before pouring the batter into the bundt pan.
  • Bake in a hot oven at 350 degrees for 1 hour and 15 minutes.
  • Enjoy!

TYROLEAN NUT CAKE (TIROLER NUSSKUCHEN)

Tyrolean Nut Cake (Tiroler Nusskuchen) image

You can bake this delicious nut cake from Tyrol in a fluted tube pan (such as Bundt®) or loaf pan. It is moist and will last a few days (if you can keep the family away from it). Hazelnuts are my favorite, but you can use walnuts as well.

Time 1h20m

Yield 12

Number Of Ingredients 12

⅞ cup unsalted butter, room temperature, plus more for baking dish
¼ cup dry bread crumbs
6 eggs
⅞ cup white sugar
3 teaspoons vanilla sugar
¾ cup dry white wine
1 cup all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 pinch salt
1 ½ cups ground hazelnuts
¾ cup chocolate chips, or to taste

Steps:

  • Grease a fluted tube pan (such as Bundt®) generously with butter and sprinkle with bread crumbs. Turn pan so bread crumbs are evenly distributed. Preheat the oven to 375 degrees F (190 degrees C).
  • Beat butter using an electric mixer on high speed for a few minutes until foamy. Add eggs, 1 at a time, beating well after each addition. Add sugar and vanilla sugar in batches. Beat batter for a few minutes until mixture is light and foamy. Mix in white wine.
  • Combine flour, cinnamon, baking powder, and salt in a bowl. Mix flour mixture into egg mixture quickly on low speed. Fold in hazelnuts and chocolate chips. Pour batter into the prepared baking pan and level with the back of a spoon.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour.

Tips:

  • Use high-quality nuts: Fresh, flavorful nuts will make a big difference in the taste of your cake. If possible, buy nuts that are already shelled and chopped.
  • Toast the nuts before using them: This will enhance their flavor and make them more fragrant. To toast nuts, spread them in a single layer on a baking sheet and bake at 350 degrees Fahrenheit for 10-15 minutes, or until they are golden brown and fragrant.
  • Use a stand mixer: A stand mixer will make it much easier to cream together the butter and sugar, and to mix in the eggs and flour. If you don't have a stand mixer, you can use a hand mixer, but it will take a little longer.
  • Don't overmix the batter: Overmixing the batter will make the cake tough. Mix just until the ingredients are combined.
  • Bake the cake in a preheated oven: This will help the cake to rise evenly.

Conclusion:

German Nut Cake is a delicious and festive cake that is perfect for any occasion. With its moist, flavorful crumb and crunchy nuts, it's sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give German Nut Cake a try. You won't be disappointed!
