BEER-CHEESE VELVET SOUP
This soup was a hit with a group of German exchange teachers who visited our high school. When I don't use bread bowls, I usually serve it with soft pretzels or crusty bread. And it's also an even bigger treat with slices of cooked bratwurst or kielbasa stirred into it. -Paula Zsiray, Logan, Utah

Steps:
- Sauté celery, onions, carrots in butter.
- Add salt and pepper.
- Blend in flour.
- Add chicken stock and cheese.
- Heat gently until cheese melts.
- Add beer.
- Adjust spices to taste.
- Serve piping hot with croutons on top, if desired.
Tips:
- Use a good quality beer for the best flavor. A dark beer will give the soup a richer flavor, while a light beer will produce a lighter soup.
- Don't boil the beer. Boiling will drive off the alcohol and ruin the flavor of the soup.
- Use a variety of cheeses for a more complex flavor. A good combination is cheddar, Gruyère, and Parmesan.
- Grate the cheese yourself for the best results. Pre-shredded cheese contains additives that can prevent it from melting smoothly.
- Season the soup to taste with salt, pepper, and garlic powder.
- Serve the soup with a side of crusty bread or crackers for dipping.
Conclusion:
German beer and cheese soup is a delicious and easy-to-make soup that is perfect for a cold winter day. With its rich and flavorful broth, it is sure to warm you up from the inside out. So next time you're looking for a comforting and satisfying soup, give this recipe a try. You won't be disappointed!
