2 avocado - peeled, pitted, and diced
1 large tomato, diced
1 large Spanish onion, cut into matchstick-size pieces
2 tablespoons extra-virgin olive oil
1 drop white vinegar
1 pinch ground black pepper

  • Bring a saucepan of water to a boil. Cook codfish in boiling water to reduce saltiness to your taste, 10 to 25 minutes; drain. Let codfish cool completely.

3/4 cup olive oil, divided
1 1/2 pounds uncooked large shrimp, deveined but with shells intact*
8 firm plum tomatoes, halved lengthwise
2 bunches green onions; root ends trimmed, onions left whole
1 1-pound sweet onion (such as Vidalia or Maui), cut into 1/2-inch-thick slices
1 red bell pepper, quartered, cored
1 yellow bell pepper, quartered, cored
1 1/2 large English hothouse cucumbers, peeled, halved lengthwise
2 6x3x1-inch slices country-style bread
2 cups grape tomatoes, halved (about 1 pint)
1/4 cup red wine vinegar
1 teaspoon hot pepper sauce
1/2 cup thinly sliced fresh basil

  • Prepare barbecue (medium-high heat). Set aside 2 garlic cloves for bread slices. Place remaining garlic on double layer of heavy-duty foil; drizzle 3 tablespoons olive oil over. 2 tablespoons champagne vinegar

1 cup ripe cherry tomatoes, halved
1 red bell pepper, seeded and finely diced
1 orange bell pepper, seeded and finely diced

1 green jalapeno, finely minced

  • Granita: Add all the granita ingredients to a blender or food processor and puree. Strain the puree through a sieve into a medium bowl. Cover with plastic wrap and refrigerate for 30 to 45 minutes. Transfer the chilled puree into a wide, shallow, heavy-bottomed container. (The shallower and wider the container, the more room you give the granita to freeze quickly.) Cover with foil or plastic wrap and freeze until it begins to appear solid around the edges, about 1 hour. Using a fork, scrape the ice from sides, mixing in from the edges into the center. Repeat this scraping and mixing process every 30 minutes, until the entire mixture has the consistency of shaved ice. Put back in freezer until ready to use.
  • Chopped salad: Combine all of the ingredients in a large bowl. Cover and refrigerate until ready to use.
  • Shrimp: Combine the cilantro, lime zest and juice, jalapeno and olive oil in a blender or food processor. Set aside.
  • If using a gas grill, preheat the grill to high, direct heat. If using coals, allow the coals to burn down to glowing white embers. The grill is hot enough when you can hold your hand about 1-inch over it for only 1 second. Lightly grease the grill with olive oil to prevent sticking. Lightly salt the shrimp and thread each skewer with 3 shrimp. Grill shrimp approximately 2 minutes per side, basting with cilantro oil twice. Remove the shrimp from the grill and add the remaining cilantro oil to a small pan. Heat the oil until bubbling.
  • Add the avocado to a small bowl and drizzle with lime juice.
  • To serve, spoon some of the chopped salad on each serving plate and top with some granita. Add a few teaspoons of avocado, a skewer of shrimp and a drizzle of the hot cilantro oil. Serve immediately.

1 1/2 cups uncooked radiatore pasta (4 1/2 ounces)
1 1/2 cups shredded Cheddar cheese (6 ounces)
1/2 cup sliced ripe olives
1 1/2 cups salsa
2 tablespoons vegetable oil
1 medium zucchini, sliced (2 cups)
1 large tomato, chopped (1 cup)
1 can (11 ounces) whole kernel corn, drained

Steps:

  • Cook and drain pasta as directed on package. Rinse with cold water; drain.
  • Toss pasta and remaining ingredients in large bowl. Serve immediately, or cover and refrigerate up to 24 hours. Toss before serving.

5 medium tomatoes, seeded and chopped
1 cup chopped peeled cucumber
3/4 cup chopped red onion
1 small sweet red pepper, chopped
1/2 cup fresh or frozen corn
1 tablespoon lime juice
1 tablespoon red wine vinegar
2 teaspoons water
2 garlic cloves, minced
1 teaspoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon crushed red pepper flakes
8 cups torn romaine
1 cup diced peeled jicama
1/2 cup minced fresh cilantro

Steps:

  • In a large bowl, combine the tomatoes, cucumber, onion, red pepper and corn. In a small bowl, whisk the lime juice, vinegar, water, garlic, oil, salt, pepper and pepper flakes. Drizzle over tomato mixture; toss to coat. Refrigerate until chilled., Just before serving, combine the romaine, jicama and cilantro. Place 1 cup on each of eight salad plates; top each with 1/3 cup tomato mixture.

2 1/2 cups tomatoes, seeded and chopped
1 cup red onion, finely chopped
1 cup cucumber, finely chopped
1/2 cup celery, finely chopped
1/2 cup green bell pepper, finely chopped (or yellow or orange)
1/2 cup red bell pepper, finely chopped
2 tablespoons black olives, finely chopped
3 tablespoons cider vinegar (or red wine vinegar)
1 bay leaf
2 tablespoons fresh parsley, minced (or 1 tsp. dried parsley)
1 tablespoon fresh thyme, minced (or 1/2 tsp. dried thyme leaves)
1 garlic clove, minced
3 -4 dashes hot pepper sauce
1/4 teaspoon ground black pepper
whole olive (to garnish)
sliced cucumber (to garnish)
dill sprigs (to garnish)

Steps:

  • Cook pasta according to package directions, omitting salt. Drain and rinse well under cold water until pasta is cool; drain well.

2 garlic cloves
1/2 teaspoon salt
2 hard-boiled eggs, yolks and whites separated
2 tablespoons Sherry vinegar (preferably "reserva")
1/4 cup mild extra-virgin olive oil (preferably Andalusian hojiblanca)
1/8 teaspoon black pepper
1/2 lb ripe tomatoes, cut into 1/2-inch cubes
1 medium green bell pepper, cut into 1/8-inch dice
2 oz (1/4-inch-thick) slices serrano ham or prosciutto , cut into 1/4-inch dice

Steps:

  • Soak bread in 1/4 cup water 1 minute, then squeeze dry, discarding soaking water.
  • Mash garlic to a paste with salt using a mortar and pestle (or mince and mash to a paste with a large knife). Mash garlic paste with bread, yolks, and vinegar using mortar and pestle until smooth (or blend together in a mini food processor). Add oil in a slow stream while stirring constantly (or with motor running) to form a thick sauce. Stir in black pepper.
  • Finely chop egg whites. Divide sauce among 4 salad plates and sprinkle with whites. Scatter tomatoes over whites and season with salt, then sprinkle with bell pepper and ham.

1/2 cup slivered almonds
4 ounces of a baguette or other French bread, cut into 1/2-inch cubes (1 1/2 cups)
1 yellow tomato, seeded, cut in 1/2-inch dice
1 green bell pepper, seeded, cut into 1/2-inch dice
1 cucumber, peeled, seeded, and cut into 1/2-inch dice
2 stalks celery, cut into 1/2-inch dice
1 small red onion, cut into 1/2-inch dice
2 scallions, thinly sliced
1 cup (about 6 ounces) green seedless grapes, cut in half
1/4 cup finely chopped flat-leaf parsley
2 tablespoons finely chopped tarragon
1/4 cup extra-virgin olive oil
2 tablespoons sherry or white-wine vinegar
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
1 head Boston or butter lettuce, torn into bite-size pieces

Steps:

  • Preheat oven to 350 degrees. Place nuts on a rimmed baking sheet and bread cubes on a baking sheet; toast until nuts are aromatic and bread is dried and barely golden, about 7 minutes; set aside.
  • In a large bowl, combine tomato, pepper, cucumber, celery, red onion, scallions, grapes, parsley, tarragon, half the almonds, and the bread cubes. Drizzle with olive oil and vinegar.
