HONEY-GARLIC SHRIMP SKEWERS

- Heat a grill pan over medium-high heat and a large skillet over medium heat.
- For the shrimp: In a small bowl, mix together the honey, sriracha, crushed red pepper, garlic, lime zest and juice and 1 tablespoon of the parsley. Set the glaze aside.
- Thread the shrimp onto 4 metal skewers, 5 shrimp per skewer. Season both sides with salt and pepper. Place on the grill pan and cook for 2 minutes. Flip the shrimp, brush the top with the glaze and cook for an additional 2 minutes. Flip the glazed side down, brush the top with the glaze and cook for an additional minute. Flip, glaze and cook until the shrimp are cooked through, up to an additional minute per side. Remove from the grill and drizzle with any remaining glaze.
- For the spinach: Meanwhile, heat the oil in the skillet and add the spinach and garlic. Season with salt and pepper and cook until wilted, about 1 minute.
- Make a bed with the spinach on a serving platter. Top with the shrimp skewers and garnish with the remaining parsley.
LEMON, GARLIC AND BASIL SHRIMP SKEWERS
Use this recipe as a template for other shrimp skewers. If you don't have honey mustard, stir a little honey into Dijon. Limes would also work well instead of lemons. And if you're finding your home-grown chives or parsley getting out of hand, substitute them for the basil. These need to marinate for 45 minutes before cooking. - In a large glass bowl, combine ALL ingredients, including the garlic slices, but not the tomatoes.
- Cover and marinade for about 5 hours.
- Make certain that you soak the wooden skewers for a minumum of 30 minutes before you thread the shrimp on them.

- In a bowl, mix salt and sugar; add shrimp and stir to coat.
- Cover and chill 45 mins to 1 hour.
- Rinse shrimp well and drain; also rinse and dry bowl.
- Return shrimp to bowl; add olive oil, parsley, lemon peel, garlic and pepper. Mix to coat.

- Preheat oven to 325°F. Place garlic and wine in center of foil sheet. Sprinkle with salt and pepper. Enclose with foil; crimp edges to seal. Bake until garlic is very tender, about 50 minutes. Squeeze garlic between fingers to release cloves. Transfer garlic and any cooking liquid to blender.
- Meanwhile, combine orange juice and reserved shrimp shells in heavy medium saucepan. Boil until liquid is reduced to 3/4 cup, about 10 minutes. Strain liquid into blender with garlic; discard shrimp shells. Puree until mixture is smooth. Cool marinade completely. Mix shrimp and marinade in bowl. Cover; chill 1 1/2 hours. Drain marinade.
- Thread 5 shrimp onto each skewer. Place parsley in shallow dish. Coat 1 side of each shrimp skewer with parsley.
- Spray large nonstick skillet with nonstick spray. Place skillet over medium-high heat. Add 6 shrimp skewers to skillet, parsley side down; cook until shrimp are pink and just cooked through, about 1 1/2 minutes per side. Wipe out skillet, then spray with more nonstick spray. Repeat with remaining 6 shrimp skewers.
- Spoon barley with greens onto plates. Top with shrimp and serve.

- 1. Peel, devein and put three shrimp on each skewer. Slice lemons to about a 1/8 inch thick and lay them in the bottom of the baking pan. 2. Arrange skewers over lemon slices in a 13 x 9 baking dish so that the skewers don't overlap. 3. Drizzle with olive oil. In a bowl, mix bread crumbs, garlic, parsley, chile flakes, salt and pepper. Sprinkle half of mixture over the shrimp, then cover and bake for 15 minutes at 300 F. 4. Flip skewers over, drizzle butter over shrimp and sprinkle on the remaining bread crumbs and grated cheese. 5. Return dish to oven uncovered and bake another 5-10 minutes, or until cheese is melted.
Tips:
- Choose the right shrimp. Use large shrimp (21/25 count) for best results. Smaller shrimp will cook too quickly and become tough.
- Use fresh garlic. Fresh garlic has a much stronger flavor than jarred or powdered garlic.
- Marinate the shrimp for at least 30 minutes. This will help the shrimp absorb the flavors of the marinade.
- Cook the shrimp over medium heat. Cooking the shrimp over high heat will make them tough.
- Do not overcook the shrimp. Shrimp cook very quickly, so be careful not to overcook them. They should be cooked through but still slightly pink in the center.
