1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup breadcrumbs
1/2 cup grated Parmesan
1/2 cup drained, chopped sun-dried tomatoes
2 tablespoons chopped fresh basil
1 tablespoon Worcestershire sauce
2 large eggs, lightly beaten
1 medium onion, grated
1 medium zucchini, grated and squeezed dry
1/2 cup ketchup
2 cloves garlic, finely grated
Kosher salt and freshly ground black pepper
1 tablespoon balsamic vinegar
2 teaspoons light brown sugar
1/2 teaspoon Italian seasoning

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.

2 lbs of good quality lean ground beef
one medium onion, quartered
1 1/2 cups baby carrots
4 garlic cloves
1 tablespoon horseradish
1 (6 ounce) package garlic or 1 (6 ounce) package italian flavored croutons
1 teaspoon chili powder
1/2 teaspoon salt, black & cayenne pepper
1 1/2 cups ketchup
2 tablespoons honey
2 teaspoons cumin
1 dash of worcestershire and louisiana hot sauce

Steps:

  • Preheat your oven to 350.
  • In your food processor, pulse the onion, carrots, garlic, and horseradish until fine. Add to ground beef.
  • Pulse the dry ingredients: croutons, chili powder, salt, & peppers, and add them to bowl with meat and veggies and mix.
  • Mold into a loaf shape with your hands in a pan that has a lip and place in oven.
  • Mix together remaining ingredients ( ketchup, honey, cumin, Worcestershire, and Louisiana hot sauce).

1/2 cup freshly grated Parmesan cheese

Add charred tomatoes, vinegar, and honey, and cook, stirring occasionally, for 4 minutes. Stir in cayenne and salt. Strain, and discard liquid. Let cool. (Relish will keep, covered and refrigerated, for up to 3 days.)
  • To assemble: Puree garlic and oil in a blender. Brush 1 side of each slice of bread with garlic oil. Top half the bread with meat loaf, tomato relish, and mache. Top with remaining bread, garlic-oil side down. Serve with fries.

4 tsp dried rosemary
2 Tbsp dried thyme
4 tsp fennel seeds
4 tsp garlic powder
3 tsp dried marjoram
2 tsp dried sage
MEATLOAF
2 Tbsp italian seasoning,divided
1 Tbsp olive oil
1 large vidalia onion,peeled and sliced
1 (14 ounce) can artichoke hearts,drained and chopped
2 lb ground sirloin
1 Tbsp garlic pepper
2 egg whites
3/4 c italian bread crumbs
2 Tbsp dijon mustard
2 c shredded italian 5 cheese blend

Steps:

  • 1. To make Tuscan Garlic Spice Mix;in a small bowl,combine dried rosemary,thyme,fennel seeds,garlic powder,marjoram and sage,whisk together with a fork,until blended and set aside.
  • 2. Preheat oven to 350 degrees F.Grease a 9x5-inch loaf pan.Season with 1 tablespoon italian seasoning.
  • 3. Heat olive oil in a large skillet over medium-low heat.Add sliced vidalia onion and chopped artichoke hearts,saute for 4 minutes until are tender.Remove from heat,season with Tuscan Garlic Spice Mix and set aside.
  • 4. In a large bowl,combine ground sirloin,garlic powder,egg whites,bread crumbs,dijon mustard and Tuscan Garlic Spice Mix;mix together until blended.

  • 6. Sprinkle with 1 cup shredded italian 5 cheese blend into the center of meat rectangle.Add sauteed onion mixture over the cheese and sprinkle remaining cheese on the onion mixture.
  • 7. Pick up the edge of the waxed paper to roll the flattened meat into a log around the filling.Seal the ends and seam and place the loaf into a prepared loaf pan.Sprinkle with italian seasoning on top.
  • 8. Bake in the preheated oven,about 30 minutes or until the meat is no longer pink in the center.Let stand for 10 minutes before slicing.
