LEMON AND GARLIC BAKED CHICKEN

Lemon and Garlic Baked Chicken image

Categories     main-dish

Time 2h10m

Yield 6 servings

Number Of Ingredients 14

1/2 cup plus 2 tablespoons olive oil
2 tablespoons fresh lemon juice
2 teaspoons garlic powder
2 teaspoons kosher salt, plus more to taste
1/2 teaspoon freshly ground black pepper, plus more to taste
One 3 1/2- to 4-pound chicken, cut into pieces
2 tablespoons unsalted butter
1 teaspoon honey, plus more if needed
1 teaspoon chopped fresh oregano
4 cloves garlic, minced
Juice of 2 lemons (about 1/4 cup) plus 1/2 teaspoon lemon zest
One 4-ounce jar diced pimientos, drained
1/4 cup chopped fresh parsley
Lemon wedges, for garnish

Steps:

  • Whisk together the olive oil, lemon juice, garlic powder, salt and pepper in a small bowl. Add the chicken pieces to a large resealable plastic bag and pour the marinade over the top. Seal the bag, removing as much air as possible, and massage the marinade around the chicken to coat evenly. Refrigerate for at least an hour and up to overnight.
  • Preheat the oven to 400 degrees F.
  • Remove the chicken from the marinade and transfer, skin-side up, to a large cast-iron skillet. Pour half the marinade all over the chicken in the skillet. Sprinkle the chicken with a generous pinch of salt and pepper. Roast until the chicken is deeply browned, the meat is cooked through and the juices run clear, about 40 minutes. (An instant-read thermometer inserted in the thigh, avoiding bone, should read 165 degrees F.) Remove the chicken to a platter and let rest while you make the sauce.
  • For the sauce: Melt the butter in a saucepan over medium heat. Whisk in the honey, oregano, garlic, lemon juice and zest and 1/4 cup skimmed drippings from the skillet and bring to simmer. Taste and season with salt and pepper, and if too tangy, add a bit more honey. Pour the sauce over the chicken, then garnish with the pimientos, chopped parsley and lemon wedges and serve.

GARLIC LEMON CHICKEN (HCG P2)

Garlic Lemon Chicken (Hcg P2) image

A yummy way to prepare your chicken!! The lemon adds an extra bite. [The 400g of chicken breast would be 4 100g pieces] Note: You don't have to eat the onions as your veggie (it's primarily for flavor). Just eat the chicken and add veggie of your choice (unless you've found that you can mix some veggies a bit, but that's not 'to protocol'.)

Time 30m

Yield 6 Chicken Breasts, 6 serving(s)

Number Of Ingredients 11

21 ounces chicken breasts (6 pieces, 3.5 oz each)
3 tablespoons chicken broth, for sauteing the chicken in
2 teaspoons salt, plus more to taste
1 teaspoon black pepper, freshly ground, plus more to taste
1 onion, chopped
3 garlic cloves, finely chopped
1 1/2 cups chicken broth
1 (28 ounce) can tomatoes, Diced, with juice
3 tablespoons capers, drained
1 1/2 teaspoons oregano leaves, dried
1/8-1/4 cup basil leaves, coarsely chopped

Steps:

  • In a large heavy saute pan, heat the 3 tablespoons of Chicken broth over a medium-high flame. Add the chicken pieces (if doing the HCG diet, be sure there are 6 pieces weighing only 3.5 oz each) to the pan and saute just until brown, about 5 minutes per side. Add more broth as it evaporates, if needed. If all the chicken does not fit in the pan, saute in 2 batches or more.
  • Transfer the chicken to a plate and set aside. Add the onion and garlic to the same pan and saute over medium heat until the onion is tender, about 5 minutes.
  • Season with salt and pepper. Add the remaining broth and simmer until reduced by half, about 3 minutes.
  • Add the tomatoes with their juice, capers, oregano and about half of the basil. Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over low-medium heat until the chicken is just cooked through.
  • Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slightly, about 3 minutes. Spoon off any excess fat from atop the sauce.
  • Spoon the sauce over the chicken, then sprinkle with the remaining basil and serve.

Tips:

  • Use fresh ingredients. Fresh garlic and lemon zest will give your chicken the best flavor.
  • Don't overcrowd the pan. If you overcrowd the pan, the chicken will not cook evenly.
  • Cook the chicken over medium heat. Medium heat will help to prevent the chicken from drying out.
  • Use a meat thermometer to ensure that the chicken is cooked through. The internal temperature of the chicken should reach 165 degrees Fahrenheit.
  • Let the chicken rest before serving. This will allow the juices to redistribute throughout the chicken, resulting in a more tender and flavorful dish.

Conclusion:

This garlic lemon chicken recipe is a delicious and healthy way to enjoy chicken. It is also a great recipe for those who are following the HCG diet. The chicken is cooked in a flavorful sauce made with garlic, lemon, and olive oil. The chicken is then served with a side of roasted vegetables. This recipe is sure to please everyone at your table.
