Steps:
- Empty the dough mix into a bowl and season to taste. Make a well, then mix with water and the olive oil, according to pack instructions. With a flat-bladed knife, bring the dough together; it should be slightly sticky.
- Knead the dough for 5 mins on a lightly floured surface until it feels springy and smooth. Lift into a large, lightly-oiled bowl, cover with oiled cling film and set aside in a warm place until doubled in size, about 20 mins. Heat oven to 200C/fan 180C/gas 6.
- Tip the dough out onto the worktop, flatten with your hands and sprinkle over the garlic and parsley. Knead for another min until the garlic and parsley are spread evenly through the dough. Pull the dough into 12 walnut-sized pieces and roll into balls. If your kids like olives, poke one into each ball to make it look like an eye. Place on a baking sheet.
- Brush each ball with a little beaten egg and bake for 10-12 mins until golden and risen. Meanwhile, mix all the dip ingredients together in a small bowl and season to taste. Serve the eyeballs dunked into the dip. Eyeballs will keep in an airtight container for up to 2 days, or frozen for up to a month.

CREAM CHEESE GARLIC DIP
This is an incredibly easy cream cheese & garlic dip that I first tasted about fifty years ago and have been eating and making ever since. Neighbors of my parents made this and brought it to a New Year's Eve Party my folks gave and this recipe has been passed on to one and all who have had it. You can serve it as prepared or get creative and add different ingredients to suit your own tastes. I routinely add chives either fresh or freeze dried depending what I have on hand and I have sliced up stuffed green olives and that was good as well, a little salty but it had a good taste. The other nice thing with this recipe is you can double, triple, etc. using as much or as little garlic as you like. It is best served with rippled or dipping potato chips or even veggies. I have found that the lite brand cream cheeses are not as good to use in this recipe with the taste and consistency defintely affected. Try it, you'll like it.

CHIVE AND GARLIC DIP MIX
This dip comes from my "Gifts in a Bag" recipe book. You could also use jelly jars for the dry ingredients. Just attach a gift tag with the directions on how to prepare the dip. Cook time is chill time. Tag should read: Combine the Chive and Garlic Mix with the sour cream. Stir until well blended. Cover and refrigerate for at least 2 hours before serving. Serve with your favorite chips, crackers of fresh vegetables.

I made these balls last night and my daughter, who doesn't eat much bread, ate 6 of these. These are great with any meal, especially Italian dishes.

- Butter the top with melted butter and cover with a clean kitchen towel. Let sit for 1 hour.
- Bake for 13 minutes or until golden on top.
- While balls bake, mince garlic and mash to a paste with salt, then stir together with butter, oil and onion powder and heat on stove (do not boil). Keep the butter mixture warm until the balls are done.
- Immediately after baking, place the balls in a bowl with the melted garlic butter and toss to coat the bread.
- Serve warm.
Tips:
- Choose the right garlic cloves: For this recipe, it's best to use large, firm garlic cloves. Smaller cloves may be difficult to hollow out and stuff.
- Hollow out the garlic cloves carefully: Use a sharp paring knife to make a small incision in the top of each clove. Then, use the tip of the knife to gently scoop out the garlic pulp, leaving the outer skin intact.
- Don't overcook the garlic cloves: The garlic cloves should be cooked until they are tender but still hold their shape. Overcooking will make them mushy.
- Make the creamy chive dip ahead of time: The creamy chive dip can be made up to 24 hours ahead of time. This will give the flavors time to meld and develop.
- Serve the garlic eyeballs with a variety of dipping sauces: In addition to the creamy chive dip, you can also serve the garlic eyeballs with other dipping sauces, such as marinara sauce, pesto, or hummus.
Conclusion:
Garlic eyeballs with creamy chive dip is a fun and easy appetizer that is perfect for any party or gathering. The garlic cloves are roasted until they are tender and slightly caramelized, and then they are stuffed with a creamy chive dip. The result is a delicious and savory appetizer that is sure to be a hit with your guests. So next time you're looking for a unique and festive appetizer, give garlic eyeballs with creamy chive dip a try.
