50 gram Butter
260 gram Chestnut Mushrooms (halved or quartered)
80 ml White wine
1 tsp Sundried Tomato Puree (substitute with regular tomato puree)
2 tsp Garlic Puree (2-3 crushed cloves)
100 ml Single cream
150 ml Chicken /vegetable stock
4 tbsp Parmesan Cheese
salt and pepper

Steps:

  • Saute mushrooms in butter for about 4 minutes
  • Add wine and allow to reduce should take about 3 minutes.
  • Add garlic and sundried tomato puree, stir through.
  • Add cream and stock, stir through
  • Add parmesan and season with black pepper heat on low for about 4 minutes. Do not allow the cream to boil.

This is hands-down the best rich and velvety mushroom pasta recipe without cream. Loads of mushrooms, garlic, shallots, and a little parmesan, tossed with perfectly cooked pasta, and a lighter silky-smooth sauce!

8 ounces dry pasta (I used Toscani-shaped pasta)
Kosher salt
1/3 cup extra virgin olive
1 tablespoon butter
2 shallots (minced)
5 garlic cloves (minced)
8 ounces Baby Bella Mushrooms (sliced)
8 ounces white mushrooms (sliced)
8 ounces portabella mushrooms (roughly chopped)
black pepper
1 teaspoon rosemary
3 tablespoons of tomato paste
¼ cup merlot wine
½ cup of grated Parmigiano-Reggiano (Parmesan)
½ cup packed parsley
1/3 cup chopped walnuts
Red pepper flakes to taste (optional)

Steps:

  • Cook the pasta to al dante in boiling salted water according to box instructions. Keep 1 cup of the pasta cooking water then drain the pasta.
  • In a large skillet, heat the olive and butter over medium-high heat, add the shallots and garlic and cook, tossing regularly for 2 to 3 minutes (manage the heat so that the garlic does not burn).
  • Add all the mushrooms and toss them around in the pan for a couple of minutes, adding another drizzle of extra virgin olive oil. Season with a good pinch of kosher salt, black pepper and the rosemary. Cook the mushrooms for about 7 to 10 minutes, tossing occasionally, until they turn color and release their juices.
  • Add the tomato paste, wine and about ½ to 3/4 cup of the pasta cooking water. Cook over medium heat for about 4 to 5 minutes (this becomes your mushroom pasta sauce).
  • Add the cooked pasta to the mushroom sauce. Toss to combine. If needed add a little bit more of the pasta cooking water.
  • Stir in Parmesan cheese and finish with a sprinkle of parsley, walnuts and red pepper flakes. Serve immediately!

4 tablespoons butter, melted
4 tablespoons flour
2 cups milk
8 ounces monterey jack cheese, shredded
4 tablespoons butter, melted
6 ounces canned mushrooms
5 garlic cloves, pressed
8 ounces pasta, boiled

Steps:

  • Stir butter, flour and milk over low heat until sauce thickens--be careful not to scorch it. Add cheese and continue to stir in sauce so cheese melts.
  • Meanwhile, sautee' mushrooms in additional butter with garlic.
  • After cheese has melted in sauce, add mushrooms. Pour over pasta.
  • Note: I've found with this recipe that there's no such thing as "too much" garlic. The flavor is really absorbed by the mushrooms. I typically use 6-8 cloves.

250g small mushroom
50g butter
2 garlic cloves , finely chopped
1large slice white bread
4 tbsp finely grated parmesan (or vegetarian alternative)
3 tbsp chopped chive
olive oil

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Twist and remove the stalks from the mushrooms. Place them, cap side up, on a small baking tray.
  • Melt the butter in a frying pan and, once it starts to froth, stir through the garlic and cook for 1 min. Blitz the slice of bread to fine crumbs and add to the pan. Cook, stirring for 2 mins, until lightly toasted.
  • Transfer to a bowl and cool before stirring through the finely grated Parmesan, chives and seasoning. Spoon into the mushroom caps, drizzle with a little olive oil and bake for 10 mins until slightly softened and the tops turn golden. Serve warm or at room temperature.
