This is a French dish and this is probably one of the best pasta recipes I have. It takes a fair bit of time but the prep and cook time may differ for you

2 lbs boneless skinless chicken breasts
4 tablespoons olive oil
1 tablespoon white vinegar
splash dry white wine
1/4 cup chopped basil (can use thyme)
1/4 cup chives
5 tablespoons minced garlic
1/2 teaspoon salt
1/4 teaspoon pepper
1.5 (16 ounce) jars alfredo sauce
1 (12 ounce) box gluten free stir fry noodles (but you can use any kind)

Steps:

  • Cut fat off of chicken. Cut chicken into bite sized pieces and set aside.
  • In a small bowl, combine olive oil, wine vinegar, basil, chives, garlic, salt, & pepper.
  • Sautee chicken in large skillet until no longer pink and nicely seared on both sides. This will take approximately 30 minutes on med-high heat with an electric stove.
  • While chicken is sauteeing, cook pasta according to package instructions. Spoon mixture from step 2 over chicken about 2 minutes before it is done cooking.
  • When pasta is done, drain in colander and place in a large (very large) bowl. Add chicken and alfredo sauce to the noodles. Use a scooper to incorporate well.
  • Serve and enjoy!

1 -2 teaspoon garlic powder (start with 1 and taste)

Steps:

  • In a medium to large saucepan melt the butter over medium heat.
  • Add the cream cheese and whisk to smooth and melted.
  • Whisk in the heavy cream.
  • Season with the garlic powder, salt and pepper.
  • Bring to a good simmer and whisk frequently until sauce thickens, around 25 minutes.
  • Remove from heat and stir in cheese.
  • Taste and adjust seasoning's.

When adding cheeses at temperatures over 180 degrees the cheese will actually go through a separation process rather than a melting process (cheeses like to melt slowly at lower temps) and results in a less than smooth end product. Couldn't seem to find a recipe I liked so I made my own and thus far all my friends have enjoyed it, hope you do too. Also its really important to use freshly shredded/grated parmesan, nothing pre-shredded/grated will melt correctly and it will be grainy and lumpy.

1 cup heavy whipping cream
1 1/2 cups grated or shredded " fresh parmesan cheese
1/3 cup white wine (what every you like, although I find Chardonnay works the best, Kendall-Jackson or J. Lohr are my fa)
1 -2 garlic clove, pressed
salt and pepper

Steps:

  • 1. In medium sauce pan heat heavy whipping cream over medium low heat stirring occationally. (Do NOT let it boil.) Depending on your stove 5-15 minutes.
  • 2. Add pressed garlic and mix well, slowly add parmesan cheese while constantly stirring.
  • 3. Slowly mix in white wine while stirring, then add salt and pepper to taste. Reduce heat a little let sit stirring occassionally for 6-8 minutes.
  • 4. Let cool slightly and serve over fettucini or linguini.
  • **I like to add 1 lb. grilled chicken and 2 cups steamed broccoli to the sauce before I serve it. Also I top with extra parmesan cheese. But it's of course optional!

1 CUP SEASONED BREAD CRUMBS ( MORE IF NEEDED )
1 CUP FLOUR ( MORE IF NEEDED )
1 TSP SALT
1 TSP PEPPER
1 CUP MILK
1 EGG

  • RINSE AND PAT DRY ALL THE CHICKEN BREASTS.. LAY FLAT ON CUTTING BOARD. CUT THE BREASTS IN HALF HORIZONTAL, POUND TO 1/4 INCH THICK WITH A MEAT MALLET. ADD IN CANADIAN BACON OR HAM SLICE ADD A SLICE OF PEPPER JACK CHEESE ( OR YOUR FAVOURITE CHEESE ) ROLL INTO A BALL STARTING AT THE SMALLEST END, SECURE WITH TOOTH PICKS. IN A BOWL MEASURE OUT FLOUR, SALT AND PEPPER MIX THOROUGHLY IN A SEPARATE BOWL WHISK THE EGG AND MILK TOGETHER IN A THIRD BOWL POUR BREAD CRUMBS IN ( I USE LA ROMANELLA ) ROLL THE CHICKEN / HAM AND CHEESE IN FLOUR THEN THE MILK THEN THE BREAD CRUMBS AND PLACE IN OVEN GRADE BAKING TRAY. PLACE THE CHICKEN IN YOUR OVEN FOR 45 MINUTES, AT THE END OF THE 45 MINUTES ADD A PIECE OF CHEESE ON TOP AND THEN THE ALFREDO SAUCE USE ALL OF THE SAUCE TO COVER THE TOP AND SIDES OF THE CHICKEN, PUT BACK IN OVEN FOR ANOTHER 5 MINUTES TO HEAT THE SAUCE AND MELT THE CHEESE.
