Don't let the name of this recipe fool you! This is a winner! (It gets its name from the fact that we make it whenever someone we know has a loved one that passes away.) It doubles very easily and freezes like a breeze. You can switch your vegetables around to the ones your family likes, too. We switch them out all the time depending on what we're in the mood for.

  • Choose the Right Casserole Dish: Use a 9x13 inch baking dish for even cooking and to ensure that the casserole doesn't overflow.
  • Don't Overcook the Pasta: Cook the pasta al dente, or slightly firm to the bite, as it will continue to cook in the casserole.
  • Use Fresh Ingredients: Whenever possible, use fresh vegetables and herbs for the best flavor and texture.
  • Season Generously: Don't be afraid to season the casserole well, as the flavors will mellow during baking.
  • Let the Casserole Rest: Before serving, let the casserole rest for at least 15 minutes to allow the flavors to meld and the casserole to set.
