2 tablespoons hot water
1 teaspoon instant coffee granules
1 cup chocolate fudge frosting
1/3 cup baking cocoa

1-1/3 cups miniature semisweet chocolate chips
2 pounds white candy coating, chopped
Optional toppings: milk chocolate English toffee bits, toasted sweetened shredded coconut and crushed candy canes

Steps:

  • Prepare and bake cake according to package directions. Cool completely. Crumble cake into a large bowl., In a small bowl, combine hot water and coffee granules; stir until dissolved. 2 tablespoons butter
1 2/3 cups sugar
2/3 cup evaporated milk
1/2 teaspoon salt
2 cups mini marshmallows
1 cup semi-sweet chocolate chips
1 teaspoon vanilla
1/2 cup chopped walnuts
1/2 cup raisins
1/2 cup finely chopped candied pineapple or 1/2 cup dried apricot

Steps:

  • Combine butter, sugar and salt in a saucepan over medium heat; bring to a boil, cook 4-5 minutes, stirring constantly (start timing when mixture starts to bubble around the edges of pan).
  • Remove from heat; add marshmallows, chocolate chips, vanilla, walnuts, raisins and candied pineapple OR apricots.
  • Stir vigorously for 1 minute (until marshmallows melt and are blended), working quickly, drop by teaspoonfuls onto waxed paper.

1 c semi sweet chocolate chips
1/3 c each - chopped nuts & chopped, maraschino cherries - drained well
1/3 c evaporated milk
1 1/2 c confectioners' sugar
flaked coconut & chopped nuts for rolling - i use both

Steps:

  • 1. In a medium saucepan, over low heat - melt chocolate in the milk.
  • 2. Once melted add the confectioners' sugar and whisk until smooth. Fold in the cherries and nuts. Chill until cool enough to roll in balls, not so stiff that the coconut and nuts won't stick. You want them a little sticky.
  • 3. Have nuts and coconut ready. I spread each on paper plates. I use about a 1 inch cookie scoop for the size of the balls. Roll into balls and roll in nuts or coconut or both. Chill well. When not eating, keep them chilled as well.

1/2 lb Velveeta cheese, sliced
1 1/2 cups butter
1 teaspoon vanilla extract
1 cup chopped pecans (or walnuts, peanuts, etc.(optional)
32 ounces confectioners' sugar
1/2 cup cocoa
almond bark (optional)
caramel, any other creative dip you can think (optional)
skewer (trimmed to 4 inches or so)

Steps:

  • Melt cheese and butter over low heat, stirring occasionally.Remove from heat and add vanilla. (You may also add the chopped nuts here, or save them for a garnish, later.).
  • Sift together sugar and cocoa in a large bowl. Add cheese mixture and stir until it becomes stiff. Use your hands to finish the mixing.
  • Once fudge is completely mixed (add more powdered sugar, a little at a time, if needed), pinch small sections off and roll into balls. Set on wax paper-lined cookie sheet. Refrigerate for 20-30 minutes.
  • While chilling fudge balls, melt almond bark in double-boiler, over a low heat. If you have chosen to melt caramels, do so, as well, in a separate double-boiler.
  • Place a skewer in each fudge ball. Then, dip into caramel, then almond bark, finally rolling in nuts. Or, use whatever combination you would like.
  • These can be made a day or two before dipping--store in refrigerator. Enjoy!

1/3 pkg 3.3 oz (scant half cup) butterscotch morsels
1 can(s) eagle brand milk (14 oz)
1 jar(s) (small) marshmallow cream
1/2 c chopped walnuts
1/2 c raisins
1/2 c more chopped walnuts for rolling

  • 1. Place the chocolate and butterscotch morsels in double boiler and melt. (Can do in regular pan on very low heat -- do not cook, simply melt.)

  • 1. line a 9 inch pan with foil

  • 3. remove from heat and pour in to pan. note:cool completely. mixture will look dry but that's ok.)
  • 4. line 2 trays with wax paper.roll peanut butter mixture in to 3/4 inch balls until firm enough to handle.if they get a little warm refrigerate for a bit.
  • 5. place chocolate chips and shortening in a bowl. microwave on medium. stop microwave and sir when it looks like it is melting. do this just until all melted.
  • 6. dip peanut butter balls in to chocolate mixture then roll in chopped peanuts.place on waxed paper. refrigerate until firm. store in fridge or cool place.
  • 7. These make awesome gits for the holidays too.
