Time 20m

Yield 40 balls, 40 serving(s)

Number Of Ingredients 8

1 cup sugar
1 1/2 cups dates, chopped
3 eggs, well beaten
1 teaspoon vanilla
1/4 teaspoon salt
2 cups Rice Krispies
1 cup nuts, chopped
1 (14 ounce) package shredded coconut

Steps:

  • Mix sugar, dates, eggs and vanilla.
  • Cook in frying pan over medium heat until it pulls away from the sides of the pan, 5 to 7 minutes, stirring constantly.
  • Add rest of the ingredients, except for coconut.
  • When cool enough to handle, wet hands and form into small balls.
  • Roll balls in coconut.

Tips:

  • Make sure your butter is very cold before you start. This will help to create a flaky crust.
  • Don't overmix the dough. Overmixing will make the cookies tough.
  • Chill the dough for at least 30 minutes before baking. This will help to prevent the cookies from spreading too much.
  • Bake the cookies until they are just set. Overbaking will make them dry and crumbly.
  • Let the cookies cool completely before serving. This will help them to firm up and develop their full flavor.

Conclusion:

Fry pan cookies are a quick and easy way to satisfy your sweet tooth. With just a few simple ingredients, you can have a batch of delicious cookies in no time. So next time you're craving something sweet, give fry pan cookies a try.
