FRUITY COLESLAW

Fruity Coleslaw image

I RECEIVED this recipe from a friend a long time ago, and it's been a family favorite ever since. The tartness of the slaw and the sweetness of the fruit give it a unique flavor. We like it best served with ham or pork chops. -Margaret Wampler Butler, Pennsylvania

1 to 2 pinch salt to taste
1/4 c cool whip or sweetened whipped cream

Steps:

Taste and adjust the sweet and sour flavors to your liking. Add more mayo or vinegar if slaw needs more dressing. Remember that you will fold in sweetened whip cream or CoolWhip to finish.
  • 3. Fold in CoolWhip or whipped cream and serve.

Tips:

  • Use a sharp knife or mandoline to thinly slice the cabbage and carrots. This will help the coleslaw to be more crisp and tender.
  • If you don't have a mandoline, you can use a food processor fitted with the slicing blade. Pulse the cabbage and carrots until they are finely shredded.
  • Add some chopped fresh herbs, such as parsley, cilantro, or dill, to the coleslaw for extra flavor.
  • For a sweeter coleslaw, add some grated apple or pineapple.
  • For a spicier coleslaw, add some chopped jalapeño or serrano pepper.
  • If you are making the coleslaw ahead of time, store it in the refrigerator for up to 3 days.
