FRUITY COLESLAW
I RECEIVED this recipe from a friend a long time ago, and it's been a family favorite ever since. The tartness of the slaw and the sweetness of the fruit give it a unique flavor. We like it best served with ham or pork chops. -Margaret Wampler Butler, Pennsylvania

PAM'S FRUITY COLESLAW SALAD
Had a partial head of cabbage from the garden and a Honeycrisp apple that needed to be eaten or used. So I threw things together and Hubby and I had some slaw for a dinner side dish.

Steps:
- 1. Shred cabbage and apple, place in sm/med mixing bowl. Add raisins and fruit bits and stir.
- 2. In a small bowl, mix 1/4 c. mayonnaise, 2 tsp lemon juice, 1 Tbsp. vinegar, 1 Tbsp cinn/sugar and a pinch or two of salt together. Add to cabbage mixture and stir well. Tips:
- Use a sharp knife or mandoline to thinly slice the cabbage and carrots. This will help the coleslaw to be more crisp and tender.
- If you don't have a mandoline, you can use a food processor fitted with the slicing blade. Pulse the cabbage and carrots until they are finely shredded.
- Add some chopped fresh herbs, such as parsley, cilantro, or dill, to the coleslaw for extra flavor.
- For a sweeter coleslaw, add some grated apple or pineapple.
- For a spicier coleslaw, add some chopped jalapeño or serrano pepper.
- If you are making the coleslaw ahead of time, store it in the refrigerator for up to 3 days.

Fruity coleslaw is a delicious and refreshing side dish that is perfect for summer gatherings. It is also a great way to get your kids to eat more fruits and vegetables. With its sweet and tangy dressing, this coleslaw is sure to be a hit at your next party or potluck.
