From Audrey Moser of Drummond Island, Michigan comes this fresh-tasting chicken salad that's sweetened with pineapple, dates and golden raisins. "I often serve this salad on lettuce, but you could stuff a tomato with it or spoon it into a pita bread as well," Audrey suggests.

FRUITY CHICKEN SALAD
The amounts listed are only a guideline since I don't even bother measuring please feel free to adjust all ingredients to suit taste but please try not to omit anything all the ingredients blend together perfectly! You could use all mayonnaise but I prefer half mayonnaise and yogurt or sour cream for a lighter texture, if you are making this in advance then add in the diced apple just before serving. If you are a curry-lover then try adding in 1/2 to 1 teaspoon curry powder into the mayo mixture, I think you will be quite surprised at the taste! This is one of the best recipes for chicken salad!... For a luncheon, double or triple the complete recipe and serve this on a bed of lettuce with tomato wedges around the chicken salad then sprinkle more toasted almonds on and around the chicken salad... your guests will rave!

Tips:
- Choose fresh, seasonal fruits: Vibrant and flavorful fruits will make your salad taste its best. Look for fruits that are ripe and in season.
- Don't be afraid to mix and match fruits: There are no hard and fast rules when it comes to choosing fruits for your salad. Experiment with different combinations to find what you like best.
- Add a protein source: Chicken, tofu, or quinoa are all great additions to a spring salad. They'll help to make it more filling and satisfying.
- Use a light, flavorful dressing: A simple vinaigrette or citrus dressing is a great way to dress your salad without overpowering the flavors of the fruits.
- Serve immediately: Salads with fresh fruit are best enjoyed immediately after they are made. The fruits will start to brown and lose their flavor if they sit for too long.
Conclusion:
With its vibrant colors, fresh flavors, and light, refreshing dressing, this fruited spring salad is the perfect way to celebrate the arrival of warm weather. Whether you're serving it as a main course or a side dish, it's sure to be a hit with everyone at your table.
