PARMESAN FENNEL GRATIN

Parmesan Fennel Gratin image

Provided by Ina Garten

Categories     side-dish

Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 10

3 medium fennel bulbs
1/2 cup chicken stock, preferably homemade
1/3 cup dry white wine
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter, diced
3 tablespoons unsalted butter, melted
3/4 cup panko (Japanese bread flakes)
1 cup freshly grated Parmesan cheese
1 tablespoon minced fresh flat-leaf parsley
1 1/2 teaspoons grated lemon zest

Steps:

  • Preheat the oven to 375 degrees F.
  • Remove the stalks from each fennel bulb and discard. Cut the bulbs in half lengthwise through the core. Remove most (but not all) of the core by cutting a V-shaped wedge, leaving the wedges intact. Cut each piece into 2, 3, or 4 wedges, depending on the size of the bulb. Arrange the wedges, cut side up, in a gratin dish just large enough to hold them snugly in a single layer. Pour the chicken stock and wine over the fennel, then sprinkle with 2 teaspoons of salt and 3/4 teaspoon of pepper. Dot with the diced butter. Cover the dish tightly with aluminum foil and bake for 35 to 45 minutes, until the fennel is tender. Remove from the oven and raise the oven temperature to 425 degrees F.
  • Meanwhile, make the topping. Combine the melted butter, panko, Parmesan, parsley, zest, 1 teaspoon salt, and 1/2 teaspoon pepper. Sprinkle evenly on top and return to the oven. Bake uncovered for 30 minutes, until the topping is browned. Serve hot or warm.

COTTAGE CHEESE AND DILL [SALAD] DRESSING

Cottage Cheese and Dill [salad] Dressing image

This is an old Frugal Gourmet recipe from the early years. The Frugal Gourmet (Jeff Smith) is no longer with us but his very nice and unique salad dressing lives on. Serve it over multi-green salad when you want to impress someone special with both flavor and eye appeal!

Time 15m

Yield 1 1/2 cups, 8 serving(s)

Number Of Ingredients 10

1/2 cup cottage cheese
1/2 cup mayonnaise
1/2 cup milk
1 tablespoon olive oil
2 tablespoons white wine vinegar
1/8 teaspoon sugar
1 fresh garlic clove, minced
1 teaspoon dried dill weed
1/8 teaspoon salt
1/8 teaspoon cracked pepper

Steps:

  • Blend and refrigerate for at least an hour prior to serving.
  • Also low-fat/low-salt mayonnaise and cottage cheese can be used. For best results, I recommend Hellman's new olive oil recipe mayonnaise for this particular recipe. It has a much better flavor than their original mayo.

"THE FRUGAL GOURMET'S" SOUTHERN BARBECUE SAUCE

This is the only barbecue sauce I use for "Pulled Pork" barbecue. From Jeff Smith's first cookbook, "The Frugal Gourmet", 1984 One recipe is enough for about 10 lbs. of meat. It keeps well in a jar in the fridge. If you don't have liquid smoke, try adding some smoked paprika.

2 eggs, coddled
1/8 lb blue cheese

Tips:

  • Use a mandoline to thinly slice the fennel bulb for a more delicate flavor and texture.
  • If you don't have a mandoline, use a sharp knife to thinly slice the fennel bulb. Be careful not to slice it too thick, or it will be tough.
  • Use a microplane to grate the orange zest. This will release the essential oils and give the dressing a more intense citrus flavor.
  • If you don't have a microplane, use a zester to remove the orange zest. Be careful not to zest too deeply, or you will get the bitter white pith.
  • Taste the dressing before serving and adjust the seasonings as needed. You may want to add more salt, pepper, or orange zest to taste.

Conclusion:

This fennel dressing is a delicious and versatile dressing that can be used on a variety of salads, vegetables, and proteins. It is also a great way to use up leftover fennel bulbs. The dressing is light and refreshing, with a slightly sweet and tangy flavor. It is also very easy to make, and it can be stored in the refrigerator for up to a week. So next time you are looking for a healthy and flavorful dressing, give this fennel dressing a try. You won't be disappointed!
