These delightful bars were served at our church coffee bistro last weekend and were enjoyed by everyone. I had to have the recipe.

1/2 c butter, softened
1 1/3 c brown sugar
2 large eggs
2 c musselman's apple sauce
2 c flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/2 tsp nutmeg
1/4 tsp cloves
1 c dark seedless raisins

Steps:

  • 1. In a mixing bowl equipped with a paddle, mix softened butter on medium speed until creamy and light. Add brown sugar and beat until well blended. Add eggs, one at a time, beating on medium until smooth. Stir in apple sauce. In a separate bowl, mix flour, baking soda, spices and salt. Add flour mixture to butter mixture and combine just until smooth. Plump raisins in hot water for about 10 minutes. Stir in raisins.
  • 2. Pour batter into greased half size sheetpan. Bake at 350 degrees for 20 - 25 minutes or until a toothpick inserted in center comes out clean. Remove from oven and cool on wire racks.
  • 3. Icing: 1/4 c. butter, 1 qt. powdered sugar, 1/4 c. milk, 1 tsp. vanilla. In a saucepan, heat butter until lightly browned. Remove from heat and whisk in powdered sugar and beat until smooth, adding milk as needed to produce a spreadable consistency. Stir in vanilla. Spread the icing evenly over the cooled cake and cut into 24 bars. ENJOY!

½ cup brown sugar
½ cup butter
½ cup all-purpose flour
¾ cup rolled oats
2 eggs
1 cup brown sugar
½ cup all-purpose flour
¼ teaspoon salt

1 teaspoon vanilla extract
¾ cup raisins
½ cup flaked coconut
½ cup pitted sour cherries, drained with liquid reserved

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together 1/2 cup of brown sugar, butter, 1/2 cup of flour and oats until crumbly. Press into the bottom of a 9 inch square pan. Bake for 15 minutes in the preheated oven.

1/4 cup butter
1 cup packed brown sugar
1 large egg
1/2 cup hot brewed coffee
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon

1/4 teaspoon salt
1/2 cup raisins
1/4 cup chopped pecans
ICING:
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
4 to 5 teaspoons water

Steps:

  • In a large bowl, combine butter and brown sugar until crumbly, about 2 minutes. Beat in egg. Gradually beat in coffee. Combine the flour, baking powder, cinnamon, baking soda and salt. Gradually add to the coffee mixture until blended. Stir in raisins and pecans., Transfer to a 13x9-in. baking pan coated with cooking spray. Bake at 350° for 18-20 minutes or until edges begin to pull away from the sides of the pan and a toothpick inserted in the center comes out clean. 1 cup hot water, or as needed
1 ½ cups all-purpose flour
½ cup butter, softened
¼ cup packed brown sugar
1 cup brown sugar
⅓ cup butter, softened
1 egg
1 teaspoon vanilla extract
1 teaspoon heavy whipping cream
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place raisins in a cup; pour in hot water to cover, and set aside to soak, about 5 minutes.
  • Place 1 1/2 cups flour in a large bowl; cut in 1/2 cup butter until crumbly. Stir 1/4 cup brown sugar into flour mixture; press mixture evenly into the bottom of a 9x9-inch pan.
  • Bake in the preheated oven until lightly browned, about 15 minutes. Remove from oven, leaving oven on.

1 cup raisins
1 cup coffee (weak or strong) or 1 cup water
1 cup sugar
1/3 cup shortening or 1/3 cup oleo
1 teaspoon cinnamon
1 teaspoon clove
1/2 teaspoon nutmeg
2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup confectioners' sugar
2 tablespoons butter or 2 tablespoons oleo
1/2 teaspoon vanilla
1 pinch salt
enough warm coffee to make frosting spreadable on warm cookie

Steps:

  • Combine the liquid ingredients in pot, Bring to boil, boil 5 minutes, then let cool.
  • Combine the dry ingredients.
  • Mix dry ingredients with cooled ingredients.
  • Spread in greased floured 11 x 15 pan.
  • If batter is too thick, thin with sherry or rum or water before spreading.
  • Bake in a 350 oven for 20 minutes approximately
  • Spread frosting on warm cake.
  • I think you could adjust any of the spices to your own taste, but we liked it as is.

2/3 cup boiling water
1 teaspoon instant coffee
1 teaspoon cinnamon
1/2 cup butter
1 cup sugar
1 egg

1/2 teaspoon baking powder
1 cup milk
1/2 cup butter
2 cups icing sugar
2 tablespoons milk (or enough to make icing of spreading consistency)

1/2 cup chopped walnuts (or more, if you desire)

Steps:

  • Pour boiling water over raisins.
  • Sprinkle with instant coffee and cinnamon.
  • Let cool.
  • Meanwhile, mix all batter ingredients together.

  • Mix well.

  • Filling-------.
  • Combine dates, water, raisins and lemon juice in 4 cup measure.
  • Cover with vented plastic wrap and microwave at high 4-6 minutes or until boiling.

  • Uncover and cool to lukewarm, stirring occasionally.

2 cups flour
2 teaspoons baking powder
1 cup sugar
1 cup butter
1 egg, beaten
1 3/4 cups raisins
2 tablespoons flour
1/4 cup sugar

Steps:

  • Mix flour, baking powder and sugar; cut in butter as for pie pastry;
  • Add beaten egg.
