STIR-FRIED SWEET POTATOES

Stir-Fried Sweet Potatoes image

In a 2010 love letter to the food processor, Mark Bittman gave the machine the ultimate compliment: "I upgraded its position in my kitchen from a cabinet to a spot on my itsy-bitsy counter," he wrote. Here, he uses the machine to chop and grate vegetables, cutting down on prep time (and any possibility of shredding your knuckles on a box grater). The end result is a quick side dish, full of flavor from the ginger and soy sauce.

Time 20m

Yield 4 servings

Number Of Ingredients 9

4 scallions, trimmed and cut into 1-inch pieces
2 garlic cloves
1 piece fresh ginger (1-inch long), peeled
1 small fresh hot chili (like jalapeƱo or Thai), stem and seeds removed
1 1/2 pounds sweet potatoes, peeled and cut into 1- to 2-inch chunks
3 tablespoons peanut oil
Salt
Freshly ground black pepper
1 tablespoon soy sauce, more for serving

Steps:

  • Put scallions in food processor and pulse until finely chopped; remove. Add garlic, ginger and chili to the processor and pulse until minced; remove. Fit the processor with grating blade and grate sweet potatoes.
  • Put oil in a large nonstick or well-seasoned cast-iron skillet over medium-high heat. When hot, add garlic-ginger-chili mixture and fry for 30 seconds. Add half the scallions and all the potatoes and sprinkle with salt and pepper. Cook, stirring or tossing, until the potatoes are lightly browned, about 10 minutes; the potatoes need not be fully tender.
  • Add soy sauce, toss once, and transfer potatoes to serving platter. Garnish with remaining scallions and serve immediately with additional soy sauce, if desired.

FRIED SWEET POTATOES

Fried Sweet Potatoes image

Most of my experiments aren't worth saving, but I actually want to remember what I did this time so am posting the recipe for the brown sugar caramelized sweet potatoes that I made. This recipe is perfect for cooking for 1-2, and only takes a few minutes. I used some very skinny home grown sweet potatoes I picked up at a Farmer's Market and recommend you use potatoes that will slice into small discs rather than huge ones.

Time 15m

Yield 2 serving(s)

Number Of Ingredients 5

1 tablespoon butter
2 small sweet potatoes (do not peel)
1/8 teaspoon salt
2 tablespoons brown sugar
1 teaspoon cinnamon (optional)

Steps:

  • Slice the sweet potatoes thinly, approximately 1/4-1/2 inch thick.
  • Melt butter in a large hot frying pan over medium-high heat, then places slices in the pan in a single layer. Sprinkle with salt.
  • Fry the potatoes until lightly browned on one side, then flip over each slice. You'll need to watch them carefully and move the slices in the hottest part of the pan to the edges so that they all get browned. Adjust the heat down to medium if needed to keep them from browning too quickly. Total browning time took me about 5-7 minutes.
  • When both sides are lightly browned, sprinkle brown sugar and cinnamon across the top. Wait 1-2 minutes and then toss the potatoes until the brown sugar is caramelized (approx 1 more minute).
  • Remove from pan and serve immediately.

Tips

  • When selecting sweet potatoes, choose firm and smooth ones with no cuts or bruises.
  • For crispy fried sweet potatoes, cut them into uniform-sized wedges or cubes to ensure even cooking.
  • Soak the cut sweet potatoes in cold water for 30 minutes before frying. This helps remove excess starch and prevents them from sticking together during frying.
  • Use a large skillet or deep fryer to fry the sweet potatoes in hot oil. This helps them cook quickly and evenly.
  • Do not overcrowd the skillet or deep fryer when cooking the sweet potatoes. This can cause them to steam instead of fry.
  • Fry the sweet potatoes in batches until they are golden brown and crispy.
  • Drain the fried sweet potatoes on paper towels to remove excess oil.
  • Season the fried sweet potatoes with salt, pepper, and your favorite spices while they are still hot.
