FLORENCE'S FRIED SPARE RIBS

- Trim spare ribs by removing all silver skin. Cut off rib tips. Cut slab into individual ribs.
- Soak ribs in vinegar in a bowl, covered and refrigerated, turning ribs once, for 15 minutes. Pour off vinegar and add lemon juice. Soak 30 minutes, covered and refrigerated. Rinse ribs with cold water and pat off excess water. Ribs should still be moist. Sprinkle ribs with salt and pepper, then cover in Florence's Fried Chicken Seasoning.
- Heat shortening in a skillet over medium-high heat until melted.
- Place ribs in skillet fleshy-side down. Cook until crispy, approximately 10 minutes. Turn and cook an additional 5 minutes.
- Stir together the flour, salt, pepper, baking powder and cornstarch in a medium bowl.
DEEP FRIED RIBS
Steps:
- Set smoker at 350 degrees F.
- Wash each rack under water. Pat dry. Place racks on a wood-burning smoker. A hickory wood fire is best. Smoke ribs for 30 minutes. Remove ribs from smoker and rub each side with the rib rub. Return the ribs to smoker and smoke at 350 degrees F for about 1 hour 30 minutes. Remove ribs and cool completely. When cool, cut ribs into individual sections. Dip each rib into pre-wash solution then the breading mixture, lightly dredging. Shake off the excess then dip into wash again and then the breading mixture.
- Place ribs into a 350-degree F deep fryer and cook for 5 minutes or until golden brown. You will have to do multiple batches. Serve with your favorite barbecue sauce for dipping.
FRIED BEEF RIBS
This is a great recipe from a member of our cook-off team. Beef ribs are breaded and deep-fried. This would be best in an outdoor deep-fryer. Two racks of ribs should give you about 6 pounds.

EASY AIR FRIED CORN RIBS
These air fried corn ribs are reminiscent of Mexican street corn, but each ear is split into quarters and then air fried. I used frozen corn on the cob which I thawed.

TABAK MAAZ (KASHMIRI FRIED LAMB RIBS)
This recipe is from Kashmir, in India, and is a component of the formal grand feast called Wazawan. Wazawan is a 36-course rich and delicious meal, the trend of which started with the Wazas (the master chefs of Kashmir and the descendants of the cooks who migrated from Samarkand to Kashmir in the 15th century). Wazawan consists of mostly non-vegetarian dishes.

Steps:
- Combine the ribs in a large skillet with a pinch of salt and the cayenne, fennel, ginger, turmeric, bay leaves, cloves, cardamom, cinnamon, milk, and about 1/2 cup water.
- Bring to a boil, then adjust the heat so the mixture simmers; cook, turning the meat occasionally, until tender, adding more water if the mixture dries out, 30 to 45 minutes.
- When the ribs are tender, remove them. If any liquid remains in the pan, cook over medium-high heat, stirring with a wooden spoon to loosen any bits that have stuck to the bottom, until the mixture is just about dry.
- Remove the cardamom pods, cloves, cinnamon stick, and bay leaves.
- Add the butter to the pan over medium heat and when it's hot, brown the ribs. Remove the ribs to a warm platter and add about 1/2 cup water to the pan.
- Once again, cook over medium-high heat, stirring with a wooden spoon to loosen any bits that have stuck to the bottom, until the liquid is reduced by about half. Pour over the ribs, garnish with cilantro, and serve.
Tips:
- To ensure crispy ribs, pat them dry with paper towels before frying. This will help the coating adhere to the ribs and prevent them from becoming soggy.
- Use a deep fryer or a large pot filled with oil for frying the ribs. This will help the ribs cook evenly and prevent them from sticking to the bottom of the pot.
- Maintain the oil temperature between 350°F and 375°F. Using a meat thermometer to monitor the oil temperature will help ensure the ribs are cooked properly.
- Fry the ribs in batches to prevent overcrowding and ensure even cooking. Overcrowding the pot can cause the oil temperature to drop, resulting in soggy ribs.
- Cook the ribs until they reach an internal temperature of 145°F for medium-rare, 160°F for medium, or 170°F for well-done. Using a meat thermometer to check the internal temperature will ensure the ribs are cooked to your desired doneness.
- Let the ribs rest for a few minutes before serving. This will allow the juices to redistribute throughout the ribs, resulting in a more tender and flavorful dish.
Conclusion:
Fried ribs are a delicious and easy-to-make dish that can be enjoyed as an appetizer or main course. By following these tips, you can create crispy, flavorful ribs that will be a hit at your next gathering. Serve them with your favorite dipping sauce, such as barbecue sauce, honey mustard, or ranch dressing, for a complete meal.
