1 cup all purpose flour
1 tablespoon sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/8 teaspoon cayenne pepper
2/3 cup milk
1 large egg
1/2 teaspoon white distilled vinegar
2 cups frozen corn kernels, thawed
1/2 cup chopped green onions
2 tablespoons (or more) vegetable oil

Steps:

  • Preheat oven to 300°F. Blend flour, sugar, baking powder, salt and cayenne pepper in large bowl. Add milk, egg and vinegar to bowl and whisk to combine. Mix in corn and green onions.
  • Heat 2 tablespoons vegetable oil in heavy large skillet over medium heat. Drop batter by scant 1/4 cupfuls into skillet. Cook cakes until brown and cooked through, about 3 minutes per side. Transfer to baking sheet. Place in oven to keep warm. Repeat with remaining batter, adding more oil to skillet as needed. Serve cakes hot.

Tips for Making the Best Fried Corn Cakes:

  • Use fresh corn. Fresh corn has a sweeter flavor and is more tender than frozen or canned corn. If you can't find fresh corn, you can use frozen or canned corn, but be sure to drain it well before using.
  • Use all-purpose flour. All-purpose flour is the most common type of flour used in corn cakes. It provides a light and fluffy texture.
  • Add some baking powder. Baking powder helps the corn cakes to rise and become light and fluffy.
  • Season the corn cakes with salt and pepper. Salt and pepper are essential seasonings for corn cakes. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
  • Fry the corn cakes in hot oil. The oil should be hot enough to sizzle when you drop the corn cakes in. This will help the corn cakes to brown evenly and crispy.
  • Serve the corn cakes hot. Corn cakes are best served hot, with your favorite toppings. Some popular toppings include butter, syrup, honey, or fruit.

Conclusion:

Fried corn cakes are a delicious and easy-to-make side dish or snack. They are perfect for using up leftover corn, and they can be made with a variety of different ingredients. With a few simple tips, you can make perfect fried corn cakes every time.
