FRIED PASTA

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 30m

Yield 4 servings

Number Of Ingredients 12

Kosher salt
8 ounces bow-tie pasta
About 6 cups vegetable oil, for frying
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried oregano
1 teaspoon garlic powder
1/2 teaspoon red pepper flakes
1/2 teaspoon freshly ground black pepper
1/4 cup finely grated fresh Parmesan
One 24-ounce jar marinara, heated, for serving

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook about a minute less than the recommended cooking time. Drain the pasta and spread it in a single layer on a baking sheet lined with parchment. Let cool and pat completely dry with paper towels.
  • Pour about 2 inches of oil into a large Dutch oven and heat over medium heat until a deep-fry thermometer reaches 375 degrees F.
  • Fry the pasta in 3 batches (about a cup each batch) until golden brown and crispy, 2 to 3 minutes.
  • Meanwhile, to a mini processor or spice grinder, add the basil, thyme, rosemary, oregano, garlic powder, red pepper flakes, black pepper and 1/2 teaspoon salt. Process until finely ground.
  • Remove the fried pasta from the oil, drain on paper towels, then sprinkle immediately with some of the seasoning mix. Repeat, working in batches, with the rest of the pasta and seasoning mix.
  • Put the fried pasta on a serving platter and sprinkle with the Parmesan. Serve alongside the warm marinara for dipping.

Penne with Stir-Fried Beef and Red Bell Pepper image

Categories     Beef     Garlic     Ginger     Pasta     Appetizer     Stir-Fry     Quick & Easy     Bell Pepper     Gourmet     Dairy Free     Peanut Free     Tree Nut Free

Yield Serves 4 to 6

Number Of Ingredients 14

2 tablespoons cornstarch
1/4 cup soy sauce
1 1/2 cups beef broth
2 tablespoons Scotch
1 tablespoon sugar
1 teaspoon Asian (toasted) sesame oil
3 tablespoons vegetable oil
1 pound boneless sirloin, cut into 1/4-inch strips
2 red bell peppers, cut into julienne strips
2 large garlic cloves, minced
2 tablespoons minced peeled fresh gingerroot
6 scallions, sliced thin diagonally
1 teaspoon dried hot red pepper flakes
1 pound penne (quill-shaped pasta)

Steps:

  • In a bowl whisk together the cornstarch, the soy sauce, the broth, the Scotch, the sugar, and the sesame oil. In a large heavy skillet or a wok heat 1 tablespoon of the vegetable oil over high heat until it just begins to smoke and in it stir-fry the beef, patted dry, in 2 batches, for 30 seconds, or until it is browned but still pink within, transferring it with a slotted spoon as it browns to a bowl. In the skillet heat 1 tablespoon of the remaining vegetable oil over moderately high heat until it is hot but not smoking, in it stir-fry the bell peppers for 2 minutes, or until they are crisp-tender, and transfer them to the bowl with the beef. In the remaining 1 tablespoon vegetable oil stir-fry the garlic and the gingerroot over moderately high heat for 30 seconds, stir the cornstarch mixture, and add it to the skillet. Cook the sauce, stirring, until it is thickened and stir in the beef mixture, the scallions, the red pepper flakes, and salt to taste. In a kettle of boiling salted water boil the penne until it is al dente, drain it well, and in a large bowl toss it with the beef mixture.

STIR-FRIED BEEF AND SUGAR SNAP PEAS

Stir-Fried Beef and Sugar Snap Peas image

Here's a stir-fry far better than most take-out Chinese, and you can make it with any lean cut of meat - flank steak, London broil, tenderloin, sirloin or skirt steak - so long as it is cut thin against the grain. Most takeout joints use snow peas, but sugar snaps are juicier and more succulent, and just as crunchy. (Their downside is that they are slightly more work: they need to be thinly sliced.) As for the sauce, it's simple: thick dark soy sauce (tamari works well), sesame oil, chicken broth and Madeira.

2 teaspoons toasted sesame oil, more for drizzling
1/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 pound sugar snap peas, trimmed
3 fat scallions
2/3 cup chicken broth
2 1/2 tablespoons Madeira or sweet sherry

Add sugar snap peas and chicken broth mixture, lower heat to medium and cover. Let cook for 2 minutes. Transfer beef and juices to skillet and stir-fry 2 minutes. Serve over rice, garnished with more sesame oil, sesame seeds, dark parts of scallions, and hot sauce or vinegar and chili oil.

Tips:

  • Use high-quality beef for the best flavor. Look for cuts that are well-marbled, such as ribeye or strip steak.
  • Tenderize the beef before cooking to make it more tender. You can do this by pounding it with a meat mallet or marinating it in a mixture of olive oil, garlic, and herbs.
  • Cook the beef over high heat to get a good sear. This will help to lock in the flavor and prevent the beef from becoming dry.
  • Don't overcook the beef. The best way to cook it is to use a meat thermometer to ensure that it reaches an internal temperature of 145 degrees Fahrenheit for medium-rare, or 160 degrees Fahrenheit for medium.
  • Use a variety of vegetables in your pasta dish. This will add color, flavor, and nutrients. Some good choices include broccoli, bell peppers, onions, and mushrooms.
  • Don't be afraid to experiment with different sauces. There are many different types of sauces that you can use with fried beef and pasta, such as tomato sauce, Alfredo sauce, or pesto.

Conclusion:

Fried beef and pasta is a delicious and easy-to-make dish that is perfect for a weeknight meal. By following these tips, you can make sure that your fried beef and pasta dish is flavorful, tender, and cooked to perfection.
