1 pound bulk pork sausage
1/2 pound whole fresh mushrooms, chopped
1/2 cup chopped onion
1/2 cup chopped sweet red pepper
2 tablespoons all-purpose flour
2 cups half-and-half cream, divided
1 teaspoon seasoned salt, divided
1 cup shredded sharp cheddar cheese
8 large eggs, room temperature
1 tablespoon minced fresh parsley

Steps:

  • Preheat waffle maker. In a large skillet, cook sausage, mushrooms, onion and red pepper over medium heat until sausage is no longer pink and vegetables are tender, 8-10 minutes, breaking up sausage into crumbles; drain. Remove from heat and keep warm., Meanwhile, in a large saucepan, whisk flour, 1-3/4 cups cream and 1/2 teaspoon seasoned salt until smooth. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Stir in cheese and 1 cup sausage mixture until cheese is melted. 2 beaten eggs
1 cup milk
1 tablespoon melted butter
1 3/4 cups all-purpose flour

Steps:

  • In skillet,on medium heat brown the sausage.
  • Drain fat well,on paper towels.
  • In a medium mixing bowl,mix the milk,eggs and butter.
  • Mix well.
  • Combine the dry ingredients,add to egg mixture,combining well.
  • Pour half of the batter in a hot,light oiled,waffle iror.
  • Sprinkle half the sausage over batter.
  • Cook apprx.

2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon baking soda
2 eggs, lightly beaten
2 cups buttermilk
1/2 teaspoon vanilla extract
8 tablespoons (1 stick) butter, melted and cooled
Nonstick spray
1 tablespoon olive oil
1 pound bulk breakfast sausage, formed into 4 small patties
4 whole eggs
Smoked salt and freshly ground black pepper
4 slices pepper jack cheese
Chopped fresh cilantro, for garnish
Hot sauce, for garnish
Special equipment: waffle iron

Steps:

  • Preheat the oven to 250 degrees F and prepare a cookie sheet with a cooling rack on top.
