FRESH PEA SOUP
Steps:
- Heat the butter in a large saucepan, add the leeks and onion, and cook over medium-low heat for 5 to 10 minutes, until the onion is tender. Add the chicken stock, increase the heat to high, and bring to a boil. Add the peas and cook for 3 to 5 minutes, until the peas are tender. (Frozen peas will take only 3 minutes.) Off the heat, add the mint, salt, and pepper.
- *Puree the soup in batches: place 1 cup of soup in a blender, place the lid on top, and puree on low speed. With the blender still running, open the venthole in the lid and slowly add more soup until the blender is three-quarters full. Pour the soup into a large bowl and repeat until all the soup is pureed. Whisk in the creme fraiche and chives and taste for seasoning. Serve hot with garlic croutons.
FRESH PEA SOUP
This soup is known in France as Potage Saint-Germain, a name that comes from a suburb of Paris where peas used to be cultivated in market gardens. If fresh peas are not available, use frozen peas, but thaw and rinse them before use. Croutons make an excellent garnish!

Steps:
- In a bowl, toss the shrimp with the cumin, cardamom, garlic, coriander, cinnamon, clove, salt and cayenne pepper. Marinate refrigerated for one hour. For the soup: In a heavy-bottomed pot, melt the butter over medium heat. Add the onion, garlic ginger root and jalapeno. Saute for two minutes, stirring. Add the split peas, coriander, cumin, celery seed, cinnamon and clove. Mix well. Add the chicken stock, stir again, and bring to a boil. Turn heat down to low and simmer slowly, partially covered, for about one hour, or until split peas are just soft. You may need to add more chicken stock if the peas become too thick and dry.
- While the soup is cooking, prepare the relish, toss all six ingredients together in a bowl. Season to taste. When the soup is ready, butterfly the marinated shrimp, removing the veins. Place in a heavy saute pan over medium high heat. Add two tablespoons of vegetable oil, swirling around the pan. Add the shrimp, cut side down, and saute for 2-3 minutes, or until just cooked. Turn the shrimp over, and cook the spiced side for 1 minute. Remove from pan. With a wooden spoon, crush a few of the soft peas in the soup against the side of the pot. Stir well. If the soup looks too thick, add a little chicken stock. Season to taste. Ladle hot soup into four wide soup bowls. Mix in most of the tomato relish, saving about 1/4 cup. Place three shrimp in the center of each bowl. Divide the remaining tomato relish among four bowls, placing it in the center of the shrimp. Top that with a few fresh cilantro leaves. Serve immediately.

FRESH GREEN PEA SOUP
All that I'm saying is give peas a chance! This is a refreshing and light soup from Christine Cushing -- the buttermilk adds a little tang to balance out the sweet peas. While fresh is best, you can also use frozen peas.

FRESH PEA SOUP WITH MISO
This simple Japanese-inflected soup has a delicate green flavor and a lovely creamy consistency. Served in small bowls, it makes a perfect beginning to a spring meal. Using white miso (shiro miso) keeps the soup light; red miso (a k a miso) gives it a nutty, more earthy flavor. Both are good. Japanese groceries sell fragrant shiso leaves in tiny bunches, and also offer the best choices for soft, silken tofu.

Tips:
- Use fresh peas. Fresh peas have a sweeter, more delicate flavor than frozen or canned peas. If you can't find fresh peas, frozen peas are a good second choice.
- Choose the right kind of peas. There are two main types of peas: shelling peas and snow peas. Shelling peas are the type that you have to remove the peas from the pod before eating. Snow peas are the type that you can eat the pod and all.
- Cook the peas properly. Peas should be cooked until they are tender but still have a slight crunch. Overcooked peas will be mushy and lose their flavor.
- Don't overseason the soup. Peas have a delicate flavor, so it's important not to overpower them with other flavors. A simple seasoning of salt, pepper, and garlic is all you need.
- Serve the soup immediately. Pea soup is best served immediately after it's made. The peas will lose their flavor and texture if they sit for too long.
Conclusion:
Fresh pea soup is a delicious, healthy, and easy-to-make soup that is perfect for a spring or summer meal. With just a few simple ingredients, you can create a soup that is both flavorful and satisfying. So next time you're looking for a quick and easy meal, give fresh pea soup a try. You won't be disappointed.
