TART AND CRUNCHY FRESH TUNA SALAD



Tart and Crunchy Fresh Tuna Salad image

Number Of Ingredients 6

2 large fresh tuna steaks (about 1 1/2 pounds)
2 lemons, thinly sliced, plus 1/2 lemon, zested and juiced, as needed
Kosher salt and freshly ground black pepper
1 cup fat free Greek yogurt
1/2 cup halved red grapes
1/4 cup toasted and chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F.
  • Put a large sheet of parchment paper on a baking sheet. Arrange the lemon slices on the parchment, slightly overlapping, covering in an area just larger than the size of the tuna steaks. Season the tuna well on both sides with salt and pepper and arrange them directly on the lemon slices. Sprinkle the zest evenly over the tuna. Bring the 2 long sides of parchment together and fold down over the tuna; fold the ends of the parchment and tuck them under the fish like an envelope. Roast in the oven until cooked through, about 18 to 20 minutes; the tuna should flake easily with a fork and is no longer pink in the center.
  • Open the parchment packet and let the tuna cool until it can be handled, then flake it with a fork. Transfer to a serving bowl along with any cooking juices it has released. Add the yogurt, grapes, and walnuts and stir to combine. Season with salt and pepper and freshly squeezed lemon juice, to taste. Serve immediately or refrigerate until ready to eat.
  • Cook's Note: Serve this healthy salad on butter lettuce leaves, on a slice of toasted seedy whole wheat bread, with fresh cantaloupe slices, or eat straight out of the refrigerator with a fork!

This is just a nice twist on a celery salad. I would love to say this is my recipe, but I can't. This is from a small Bed and Breakfast in North Carolina. The Owner / Chef was nice enough to share her recipe with me, and had many other recipes that looked wonderful, but this is the only one I asked for. Unfortunately, the Bed and Breakfast is no longer there and the owner can't be contacted. She was a fantastic cook. The cherries with the combination of the pecans and the creamy dressing, just make it a perfect combination. I love to serve this with a honey roasted chicken, just something light and simple. Enjoy it!

1 1/2 cups celery, diced (don't throw out those leaves)
2/3 cup baby peas, thawed (frozen works best)
2/3 cup dried cherries
2 scallions, diced (whites and greens)
6 tablespoons fresh parsley, fine chopped
3 tablespoons chopped pecans (I prefer to toast mine)
3 tablespoons mayonnaise
3 tablespoons plain yogurt
3 teaspoons lemon juice
salt
pepper
celery, leafs chopped fine

Steps:

  • Pecans -- In a small dry saute pan, add the pecans and bring to medium heat and toast for just a couple of minutes. Don't let them burn, they literally take, 1-2 minutes. Remove and set to the side.
  • Salad -- Just add all the ingredients in a medium size bowl and toss well to combine. Garnish with the chopped celery leaves.
  • Serve -- Just ENJOY! Try a simple roasted chicken and some hearty whole grain bread to along with this simple salad.

FRESH CRUNCHY SALAD

My kids love this yummy, fresh salad, with it's crunchy vegetables and the sweetness of the green apple. Best made just before serving, or the mushrooms will start to get soggy, and the apple will turn brown. My kids prefer it without dressing, but you could use a vinegarette, or a lemon yoghurt dressing if you prefer. This recipe serves 2 as a side dish.

carrot, 2 inch piece
cucumber, 2 inch piece
1 mushroom, stalk removed
1/4 green apple, core removed
