CORN PUDDING CASSEROLE RECIPE

Corn Pudding Casserole Recipe image

The Southern holiday sideboard isn't complete without a pan of cheesy and creamy corn pudding. This version, made with fontina or Swiss cheese, is more savory than sweet. If fresh corn isn't in season, you can use frozen corn. Drain the thawed corn well so it doesn't make the casserole watery.

Yield Serves 10

Number Of Ingredients 11

4 large eggs
2 1/2 cups half-and-half

Transfer to a lightly greased 13- x 9-inch baking dish; cover and chill until ready to bake, up to 1 day ahead.

Tips:

  • Use fresh corn. Fresh corn has a sweeter, more flavorful taste than frozen or canned corn. If you're using frozen corn, thaw it completely before using.
  • Don't overcook the corn. Overcooked corn becomes tough and chewy. Cook the corn just until it is tender-crisp, about 5 minutes.
  • Use a variety of cheeses. Different cheeses can add different flavors and textures to the pudding. Try using a combination of cheddar, Parmesan, and mozzarella cheese.
  • Add some spices. Spices can help to enhance the flavor of the pudding. Try adding a pinch of cayenne pepper, paprika, or cumin.
  • Serve the pudding warm. Corn pudding is best served warm, right out of the oven. You can also make it ahead of time and reheat it before serving.

Conclusion:

Corn pudding is a delicious and versatile dish that can be served as a side dish, main course, or even dessert. It's a great way to use up fresh corn, and it's sure to be a hit with your family and friends. So next time you're looking for a new recipe to try, give corn pudding a try. You won't be disappointed!
