1 box (16 oz) Betty Crocker™ Gluten Free brownie mix
1/4 cup butter, melted
2 eggs
1/3 cup whipping cream
1/2 cup semi-sweet chocolate chips
1 cup fresh raspberries or sliced strawberries

Steps:

  • Heat oven to 350°F. Spray bottom only of 8-inch springform pan with cooking spray.
  • In medium bowl, stir brownie mix, butter and eggs until well blended. Spread in pan.
  • Bake 26 to 29 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean; cool 10 minutes. Run knife around edge of pan to loosen; remove side of pan. Cool completely, about 1 hour.
  • In 1-quart saucepan, heat whipping cream over medium-low heat until hot. Remove from heat; stir in chocolate chips until melted and smooth. Let stand 15 minutes to thicken. Carefully pour chocolate mixture onto top center of brownie; spread just to edge. Cut into wedges. Serve with raspberries.

1/2 cup flour
3 tablespoons sugar substitute
1 tablespoon unsweetened cocoa powder
3/4 teaspoon baking powder
1/4 cup skim milk
1 tablespoon low-sugar apple butter
1/2 teaspoon vanilla extract
5 tablespoons sugar substitute
2 tablespoons unsweetened cocoa powder
3/4 cup boiling water

Steps:

  • Stir together flour, 3 Tablespoons sugar, 2 tablespoons cocoa powder, and baking powder.
  • Add milk, apple butter, and vanilla.
  • Stir till smooth.
  • Transfer batter to 1-quart baking dish.
  • Combine the 5 Tablespoons sugar and 2 tablespoons cocoa.
  • Gradually stir in boiling water.
  • Pour evenly over batter.
  • Bake in 350 degree oven for about 30 minutes or until toothpick inserted into cake comes out clean.

Butter and eggs called for on brownie mix box
1 teaspoon instant coffee granules
4 snack-size containers (4 oz each) chocolate pudding
1 cup Cool Whip frozen whipped topping, thawed
1 cup toffee bits

Steps:

  • Heat oven to 350°F. Grease bottom only of 8-inch square pan with shortening or cooking spray. Make brownie mix as directed on box, using butter and eggs; stir in coffee granules. Spread in pan. Bake as directed on box. Cool completely, about 1 hour.
  • Cut brownies into 1-inch squares. In bottom of 2-quart glass bowl, place half of the brownie squares. Pour 2 containers of the pudding over brownies in bowl. Top with half each of the whipped topping and toffee bits. Repeat with remaining brownies, pudding, whipped topping and toffee bits.
  • Cover; refrigerate at least 4 hours before serving. Store covered in refrigerator.

1/4 cup butter, melted
2 whole eggs
1 cup almond milk
1 teaspoon unflavored gelatin
1/3 cup sugar
2 egg yolks
2 tablespoons cornstarch
1 tablespoon crème de menthe
1 tablespoon white crème de cacao
1/8 teaspoon salt
4 oz (half of 8-oz container) Cool Whip frozen whipped topping, thawed
1/2 cup miniature semisweet chocolate chips

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 8- or 9-inch square pan with cooking spray (without flour).
  • In medium bowl, stir brownie mix, butter and eggs until well blended (batter will be thick). Spread in pan.
  • Bake 8-inch pan 28 to 31 minutes, 9-inch pan 26 to 30 minutes, or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely in pan on cooling rack, about 1 hour.
  • Meanwhile, in 3-quart saucepan, mix all filling ingredients except whipped topping and chocolate chips. Cook over medium heat, stirring constantly with whisk until mixture starts to boil; boil and stir 1 minute longer until thickened. Remove from heat. Refrigerate in pan about 30 minutes until cool.
  • Cut brownies into very small pieces, about 36. In 9-inch glass pie plate, press brownie pieces together on bottom and up side of plate. Stir whipped topping and chocolate chips into filling. Spoon into brownie crust and spread evenly. Refrigerate 1 hour before serving.
