2 garlic cloves, minced
2 cans (14-1/2 ounces each) Italian diced tomatoes
1 can (15 ounces) crushed tomatoes
1 cup vegetable broth
1/8 teaspoon crushed red pepper flakes
8 ounces uncooked ziti or small tube pasta
1 cup (8 ounces) part-skim ricotta cheese
1/2 cup shredded provolone cheese
1/4 cup loosely packed basil leaves, thinly sliced
1 cup shredded part-skim mozzarella cheese
1/4 cup grated Parmesan cheese

  • In a large nonstick skillet coated with cooking spray, cook the onion, green pepper and carrots until crisp-tender. Add garlic; cook 1 minute longer. 1 cup white button mushrooms (sliced)
2 cups tomato-based pasta sauce
3 ounces provolone cheese (sliced)
3/4 cup sour cream
1/2 cup Gorgonzola cheese (crumbled)
4 ounces mozzarella cheese (shredded (about 1 1/2 cups))
1/4 cup Parmesan cheese (grated)

Steps:

  • Preheat the oven to 350 degrees.
  • Bring a large pot of water to a boil. Add a generous pinch of salt, then add pasta. Cook until barely al dente, about 8 minutes, or about 2/3 of the time recommended on the pasta package directions. Drain.
  • In a large skillet over medium heat, saute the mushrooms in olive oil until softened, about 6-7 minutes. Add the tomato sauce and bring to a boil. Turn the heat to low and simmer about 15 minutes.
