2 packages (10 ounces each) frozen chopped spinach, thawed and drained
1 pound flounder fillets
3 tablespoons chopped onion
2 tablespoons butter

1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
1-1/2 cups fat-free milk
1 tablespoon grated Parmesan cheese
1/4 teaspoon paprika

Steps:

  • Sprinkle spinach in a 13-in. x 9-in. baking dish coated with cooking spray. Top with fillets., In a large saucepan, saute onion in butter until tender. Stir in flour, salt, pepper and nutmeg until blended. Gradually add milk. bring to a boil; cook and stir for 2 minutes or until thickened. , Pour over fillets; sprinkle with Parmesan cheese and paprika. 1/2 teaspoon oregano
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
2 pounds flounder fillets
1/2 cup dry white wine
3 tablespoons all-purpose flour
1/2 teaspoon dry mustard
1 cup milk
Freshly grated Parmesan cheese, for garnish
Paprika, for garnish

Steps:

  • Gather the ingredients. Preheat the oven to 350 F.
  • In a medium skillet, melt 2 tablespoons of butter.
  • Add onion and sauté until translucent.

1 1/2 cups seasoned croutons, coarsley chrushed
8 ounces whole kernel corn, drained
3/4 cup shredded swiss cheese
1 beaten egg
3 tablespoons water
salt
lemon pepper or pepper
1 medium tomatoes, cut into 12 thin wedges
1/4 cup shredded swiss cheese

Steps:

  • Thaw fish if frozen.
  • Combine spinach, croutons, corn and cheese. Combine egg and water. Add to spinach mixture, mix well.
  • Spread mixture in 12x2 inch pan, cover with foil and bake at 375 degrees for 10 minutes. Arrange fish over spinach, sprinkel with salt and pepper.

1 clove garlic, minced

1 lemon, zested
1/4 teaspoon freshly ground black pepper, plus extra for seasoning fillets
2 tablespoons chopped fresh parsley leaves
1 cup heavy cream
1/4 cup white wine
10 ounces grated Cheddar
1 1/2 to 2 pounds flounder fillets
3 cups leftover cooked rice

  • Preheat the oven to 350 degrees F.
