8 ears yellow corn
Vegetable oil cooking spray
1/2 teaspoon salt
Chili Butter:
1/4 cup butter, softened
1 teaspoon Worcestershire sauce
1/4 teaspoon hot sauce
1 teaspoon sweet chili powder
1 teaspoon dried oregano
1/4 teaspoon ground cumin
1/4 teaspoon sweet paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon chili powder
1/8 teaspoon salt
Sun-dried tomato butter:
1/4 cup butter, softened
2 ounces sun-dried tomatoes (about 6 large), softened in boiling water and chopped
2 tablespoon Italian parsley, finely chopped
2 tablespoon fresh basil, finely chopped
Truffle butter:
1/4 cup butter, softened
2 cloves garlic, chopped
2 teaspoon truffle oil
1/8 teaspoon salt
Pinch of freshly ground black pepper

Steps:

  • Heat an outdoor grill or a stovetop grill to high. Peel back husks of corn, but do not remove. Remove all silk from corn and coat corn with cooking spray. Sprinkle corn with salt and smooth husks back into place. Rub each husk with water and place directly on grill. Grill, turning occasionally, until kernels soften and husks blacken, 10 to 12 minutes. Pull back husks and serve corn with 1 teaspoon flavored butter.

  • Using a spoon, mix butter with respective ingredients. Roll each into a log shape and wrap in plastic wrap or wax paper. Refrigerate until firm, 2 to 3 hours, then soften to room temperature before serving.

Number Of Ingredients 6

1 ounce mixed green herbs, such as tarragon, chives, basil, and parsley
Bowl of ice water
1 1/2 pounds unsalted butter, room temperature
Salt and pepper to taste
1 1/2 tablespoons ground chile powders, such as arbol, ancho, or New Mexico
1 1/2 tablespoons curry powder

Steps:

  • Bring a small pot of salted water to a boil. Blanch the herbs; transfer to bowl of ice water to stop cooking. Squeeze excess water from herbs; mince with a sharp knife. Transfer herbs to the bowl of a food processor, add 1/2 pound butter, process until well combined and butter is green; season to taste. Transfer herb butter to plastic wrap, and refrigerate or freeze until needed.
  • Divide the remaining pound of butter between two bowls. Add the chile powders to one bowl. Combine thoroughly with a rubber spatula; season to taste. Transfer to plastic wrap, and refrigerate or freeze until needed. Repeat with curry powder.

1 tablespoon Old El Paso™ taco seasoning mix (from 1-oz package)
1/2 cup butter, softened
1 tablespoon dry ranch dressing mix
1/4 cup diced cooked bacon
1/2 cup butter, softened
2 tablespoons fresh lime juice
1/4 cup loosely packed diced cilantro
6 to 8 ears fresh sweet corn, husks removed
3 to 4 tablespoons butter

Steps:

  • To make flavored butters, mix together ingredients for flavor(s) of butter desired until well combined. Use immediately, or cover and refrigerate until ready to use.
  • Wrap ears of corn individually in foil with about 1/2 tablespoon butter in each, and place tightly wrapped ears in 6-quart slow cooker. Cover; cook on Low heat setting 4 to 5 hours or High heat setting 2 to 2 1/2 hours.

2 -4 tablespoons fresh herbs
1 tablespoon Dijon mustard
2 teaspoons orange juice or 2 teaspoons lime juice
1 cup fresh cilantro, and
1 lime, juice and zest of
2 garlic cloves
1/4 cup finely ground almonds

Steps:

  • Pick the butter of your choice (below). Add the additional ingredients and mix well.
  • Shape the 1/2 cup of butter, plus added-in ingredients, into small a roll.
  • Wrap well with waxed paper. Chill until firm.
