Time 45m

Yield 4-6 servings

Number Of Ingredients 15

2/3 c. olive oil
1/4 c. red wine vinegar
1 c. chopped mixed fresh herbs (basil, mint, cilantro and/or parsley)
1 garlic clove, finely grated
1 serrano chile pepper, seeded and finely chopped
1/2 shallot, chopped
1/2 tsp. kosher salt
1 30-ounce bag frozen, shredded hash brown potatoes, thawed
1 c. shredded pepper jack cheese
6 tbsp. salted butter, melted
1 tbsp. kosher salt
1/4 tsp. black pepper
Cooking spray
1 1/2 lb. flank steak
Kosher salt and black pepper, to taste

Steps:

  • Whisk the olive oil, vinegar, herbs, garlic, serrano, shallot and salt in a small bowl. Set aside.
  • Preheat a waffle iron to high. Toss the shredded potatoes with the cheese, melted butter, salt and pepper in a large bowl. Coat the waffle iron with cooking spray, add ¾ cup of the potato mixture to each well and pat down. (You should hear them sizzle!)
  • Close the waffle iron and cook until the hash browns are golden brown and crispy, about 15 minutes, depending on your waffle iron. Check occasionally to make sure they aren't burning. Use a butter knife to remove the hash browns. Repeat to make more hash browns.
  • Meanwhile, preheat a grill or grill pan to medium high. Pat the steak dry and season with salt and pepper. Grill the steak about 5 minutes per side for medium rare. Remove to a cutting board and let rest for 10 minutes.
  • Thinly slice the steak against the grain. Divide the hash browns and steak among plates and drizzle the steak with the herb sauce.

WAFFLEMAKER HASH BROWNS

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 35m

Yield 5 waffles

Number Of Ingredients 7

Olive oil cooking spray, for spraying the waffle iron
One 30-ounce bag frozen shredded hash browns, thawed
4 tablespoons (1/2 stick) butter, melted
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3/4 cup grated Cheddar
3/4 cup chopped ham

Steps:

  • Preheat a waffle iron on the regular setting and spray both sides with cooking spray.
  • Squeeze out any excess moisture from the hash browns and put in a bowl. Pour the melted butter over the hash browns, sprinkle with the salt and pepper and stir. Scoop a heaping 1/2 cup of the seasoned hash browns into each waffle section, then top with a generous 2 tablespoons Cheddar followed by a sprinkling of chopped ham. Top the cheese and ham in each section with another 1/4 cup hash browns. Close the waffle iron and cook for 15 minutes on the regular setting.
  • Repeat with the remaining hash browns, cheese and ham, filling one section of the waffle iron.

Tips:

  • To tenderize the flank steak, use a meat mallet or the back of a heavy knife to pound it thin.
  • Marinating the steak for at least 30 minutes helps to infuse it with flavor and make it more tender.
  • When cooking the steak, sear it over high heat to create a nice crust, then reduce the heat and cook it to the desired doneness.
  • Let the steak rest for a few minutes before slicing it. This allows the juices to redistribute throughout the meat, resulting in a more flavorful and tender steak.
  • For the herb sauce, use fresh herbs for the best flavor. If you don't have fresh herbs on hand, you can use dried herbs, but use half the amount.
  • To make the three-cheese waffle hash browns, use a Belgian waffle maker for best results. If you don't have a waffle maker, you can also make them in a skillet.
  • Serve the flank steak with the herb sauce and three-cheese waffle hash browns for a delicious and satisfying meal.

Conclusion:

Flank steak with herb sauce and three-cheese waffle hash browns is a flavorful and satisfying dish that's perfect for a special occasion or a weeknight meal. The steak is tender and juicy, the herb sauce is creamy and flavorful, and the three-cheese waffle hash browns are crispy and cheesy. This dish is sure to please everyone at the table.
