  • Remove chicken halves from the bag and transfer to a plate or baking sheet lined with paper towels. Pat chicken pieces dry with more paper towels. Reserve marinade mixture in a small bowl.

  • Drizzle vinegar lime juice mixture over the chicken and serve.

FIVE-SPICE ROAST CHICKEN DRUMSTICKS

Five-Spice Roast Chicken Drumsticks image

In Hong Kong they love and are famed for their skill at rotisserie-style cooking, where whole ducks, chickens and pigs, with their entrails, are roasted to a golden or soy color. Many eateries display a range of cooked food in their window fronts to entice diners. Inspired by this style of cooking, my simple five-spice roasted drumsticks make a simple dinner.

Provided by Food Network

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 8

3 cloves garlic, crushed and chopped
2 tablespoons freshly grated ginger

  • Serve wings with salt and pepper mixture.

GRILLED FIVE-SPICE CHICKEN

Grilled Five-Spice Chicken image

The best five-spice chicken I have had in Vietnam was made by a street food vendor in the port town of Hoi An in the central region. The vendor used a spice mix of freshly toasted star anise and turmeric. When she grilled the chicken, the whole neighborhood was perfumed with the most enticing fragrance. This is my version of that dish.

Provided by Mai Pham

Categories     Chicken     Spice     Summer     Grill/Barbecue     Anise

Yield Makes 4 servings

Number Of Ingredients 11

1 whole chicken (about 2 1/2 pounds), preferably free range, rinsed
3 tablespoons vegetable oil
2 tablespoons soy sauce
3 tablespoons minced ginger
2 tablespoons minced garlic
2 tablespoons sugar
2 teaspoons ground turmeric
1 teaspoon Chinese five-spice powder
1/2 tablespoon sea salt
4 whole star anise, lightly toasted in a dry pan for 3 minutes, pounded or ground into a fine powder
1/2 cupSoy-Lime Dipping Sauce

Steps:

  • 1. Cut the chicken into 6 pieces and make 1 or 2 slashes in each piece for faster cooking. Trim and discard any excess fat. Pat the chicken dry.
  • 2. In a bowl, combine the oil, soy sauce, ginger, garlic, sugar, turmeric, five-spice powder and salt. Stir well to blend. Add the chicken pieces and turn several times to coat them evenly. Marinate in the refrigerator for at least 4 hours.
  • 3. Start a charcoal grill or preheat a gas grill to moderate heat. (You can also use a broiler.) Thirty minutes before cooking, add the freshly toasted star anise powder to the marinated chicken, turning so the meat is coated evenly.
  • 4. Place the chicken, skin side up, on the grill. Cook 10 minutes, then turn over and grill until the chicken is cooked and the juices run clear, another 10 minutes, depending on the thickness. While grilling, move the chicken pieces around so that they cook evenly. Transfer the chicken to a serving platter and serve with the dipping sauce.

CHINESE FIVE-SPICE CHICKEN WITH RED CABBAGE AND POTATO GRATIN

Chinese Five-Spice Chicken with Red Cabbage and Potato Gratin image

Provided by Alexis Hernandez

Categories     main-dish

Time 2h7m

Yield 2 servings

Number Of Ingredients 21

2 to 3 Idaho potatoes, peeled and sliced 1/16-inch thick on a mandoline
1/2 cup heavy cream
1/4 cup grated Parmesan or Gruyere, plus 4 tablespoons for topping, divided
2 teaspoons dried thyme or 2 tablespoons chopped fresh thyme leaves
1 teaspoons kosher salt
1 teaspoon freshly ground black pepper
6 strips bacon, chopped
1 cup chopped Spanish onion, about 1 large onion
2 cups chopped red cabbage, about 1/2 head
1 tablespoon sugar
2 teaspoons kosher salt
1 teaspoon freshly cracked black pepper
1/2 cup red wine
1/4 cup balsamic vinegar
2 tablespoons olive oil
2 teaspoons Chinese five-spice powder
1 teaspoon garlic powder
1 teaspoon kosher salt
1 teaspoon freshly cracked black pepper
2 (6-ounce) chicken breasts, boneless and skinless
2 tablespoons butter, unsalted

Steps:

  • Gratin:
  • Preheat the oven to 400 degrees F.
  • Toss the first 6 ingredients together in a bowl, making sure the potato slices are evenly covered with the mixture. Spray 2 ramekins with cooking spray and gently press a handful of the potatoes into each one. Arrange the ramekins on a sheet pan and fill each cup 3/4 of the way with the cream mixture and cover the top with foil. Slide the pan into the oven and cook until the potatoes are cooked through, about 30 to 45 minutes.* Remove the foil, add 2 tablespoons of the remaining cheese to each ramekin and cook until cheese is bubbling, about 4 to 8 minutes. Remove the gratins from oven and set aside.
  • Cabbage: In a medium skillet, over medium heat, add the bacon and cook until crispy, about 5 to 8 minutes. Remove the bacon to a plate, leaving 3 to 4 tablespoons of the fat in the skillet. Add the onions and saute for 5 to 7 minutes over medium-high heat. Stir in the cabbage, sugar, salt and black pepper and continue cooking for an additional 6 to 8 minutes. Add the red wine, toss the ingredients and cook covered with a lid until the liquid has almost completely evaporated, about 8 to 12 minutes. Stir in the balsamic vinegar and cook until it has almost evaporated as well, about 1 to 3 minutes. Turn off the heat and add the reserved bacon.
  • Chicken: Combine the first 5 ingredients in a medium bowl. Add the chicken breasts, toss to coat with the marinade and allow them to sit for 10 to15 minutes. In a saute pan over medium heat, add the chicken breasts and cook for 4 to 5 minutes on the show side and 6 minutes the other side, or until cooked through. Remove the chicken to a cutting board and top each breast with 1 tablespoon of butter. Cover with foil, allow them to rest for 5 minutes, then slice lengthwise.
  • To serve: Put a portion of the cabbage in the center of each dish. Arrange the chicken, on top of the cabbage. Run a knife along the inside of each ramekin, to loosen, and invert them onto the plates before serving.

SPICY CHINESE FIVE SPICE-RUBBED CHICKEN WINGS WITH CREAMY CILANTRO DIPPING SAUCE

Spicy Chinese Five Spice-Rubbed Chicken Wings with Creamy Cilantro Dipping Sauce image

This is one of those recipies that I've used enough that I've forgotten where the original inspiration came from-and that I actually hardly ever measure everything for...It's great for a gathering of friends for almost any occasion-say watching a game, or even a good movie...It also makes a great appetizer(I would recommend...

Provided by Philip Hoel

Categories     Poultry Appetizers

Time 45m

Number Of Ingredients 13

FOR THE WINGS
20 whole chicken wings
2 Tbsp chinese five-spice powder
1 Tbsp cayenne pepper
kosher salt and pepper
creamy cilantro dipping sauce(to follow)
CREAMY CILANTRO DIPPING SAUCE
1/3 c chopped cilantro leaves(plus some for garnish)
1/4 c sour cream
1/4 c mayonnaise(do not use miricle whip-way too sweet)
1/4 c plain yogurt(optional but adds a nice tang)
juice of 1/2 lemon
salt and pepper to taste

Steps:

  • 1. FOR THE WINGS
  • 2. Pre-heat oven to 500 degrees, line a baking sheet with parchment.
  • 3. Remove the tips from the chicken wings(save for making stock-if you wish-or discard)and cut the wings in half at the joint. Place the wings in a bowl.
  • 4. Sprinkle 5 spice powder, and cayenne over wings, add salt and pepper.(be generous with the pepper) Rub this mixture all over the wings until no powder remains
  • 5. Place the wings on parchment lined baking sheet with the most skin up. Bake for about 25 minutes-or until cooked through browned and crispy-meanwhile make the sauce
  • 6. NOTE: This spice mixture also makes a very good Chinese inspired rub for a whole roast chicken-just maintain the ratio of 2 parts five spice to 1 part cayenne
  • 7. FOR THE SAUCE
  • 8. Combine all sauce ingredients through the lemon juice-add salt and pepper to taste
  • 9. NOTE: I should mention that I like my wings very spicy-you might prefer a lessor amount-but the sauce goes a long way in taming the heat
  • 10. NOTE: This recipe can be easily doubled-just use two baking sheets, and rotate baking sheets half way through the baking time.

Time 1h40m

Yield 4 servings

Number Of Ingredients 20

1 free range chicken, 3 to 4 pounds
1 teaspoon five-spice powder
1 tablespoon soy sauce
8 slices ginger
6 scallions, cut into 2-inch pieces
1 medium zucchini, turned into spaghetti
1 medium peeled carrot, turned into spaghetti
Salt and white pepper, to taste
2 eggs
1/2 cup milk
4 tablespoons oil
2 cups sifted all-purpose flour
4 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup chopped parsley (save half for garnish)
2 tablespoons chopped cilantro
1 tablespoon minced fresh thyme
2 tablespoons Sauteed sliced scallions
1/2 cup sauteed and minced shiitake mushrooms

Steps:

  • In a large stock pot, place chicken in and cover with cold water. Add five-spice, soy, ginger and scallions. Bring to a slow boil and simmer for 20 minutes only. Cover pot tightly, seal with foil, turn off heat and let steep for 1 hour. Season with salt and white pepper. Carefully remove chicken from bones and shred by hand. Add chicken back to strained broth. Keep hot. Add zucchini and carrot spaghetti to hot soup 3 minutes before serving. Check for seasoning.
  • PLATING Ladle the soup and spaghetti over the hot dumplings. Garnish with chopped parsley.
  • In a small bowl, whisk together the eggs, milk and oil. In a mixing bowl, mix together flour, baking powder, salt, pepper, half of the parsley, cilantro, thyme, scallions and shiitakes. With the paddle of an electric mixer on low speed, slowly add the egg mixture till it comes together. Do not over work the dough. Let mix stand for 30 minutes. Using floured hands, form small dumplings about the size of golf balls. (Test 1 small dumpling first for seasoning.) In a pot of boiling, salted water add the dumplings in 1 at a time and cook thoroughly, about 6 to 8 minutes. Take dumplings out of strainer and place in large heated soup bowls.

Tips:

  • Prep your chicken: Begin by deboning and skinning the chicken thighs. If you prefer, you can purchase boneless, skinless chicken thighs for convenience.
  • Make the five-spice marinade: Combine soy sauce, Shaoxing wine, sugar, ground five-spice powder, ginger, garlic, and green onions in a bowl. Mix well to create a flavorful marinade.
  • Marinate the chicken: Place the chicken thighs in the prepared marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 30 minutes, or up to overnight, to allow the flavors to penetrate the chicken.
  • Cook the chicken: Heat a large skillet or wok over medium-high heat. Add a drizzle of oil and sear the marinated chicken thighs for 5-7 minutes per side or until golden brown and cooked through. Alternatively, you can grill the chicken thighs for a smoky flavor.
  • Make the sauce: Combine soy sauce, honey, rice vinegar, sesame oil, and Chinese rice wine in a small saucepan. Bring to a simmer over medium heat, stirring occasionally, until the sauce thickens slightly.
  • Assemble and serve: Transfer the cooked chicken thighs to a serving platter and drizzle with the prepared sauce. Garnish with chopped green onions and sesame seeds for an extra layer of flavor and texture. Serve with steamed rice or your favorite sides.

Conclusion:

This five-spice chicken recipe is a fantastic fusion of flavors and textures that will tantalize your taste buds. The tender, juicy chicken thighs, infused with the aromatic five-spice marinade, are perfectly complemented by the sweet and tangy sauce. Whether you sear them in a skillet or grill them for a smoky touch, the chicken thighs are sure to impress.
