Yield 12 serving(s)

Number Of Ingredients 16

16 ounces elbow macaroni
1/3 cup unsalted butter, cubed
1 medium onion, halved and thinly sliced
1 garlic clove, minced
1/3 cup all-purpose flour
1/2 cup white wine (or reduced-sodium chicken broth)
4 cups heavy whipping cream
1 teaspoon white pepper
1/4 teaspoon salt
5 ounces fresh goat cheese, crumbled
5 ounces white cheddar cheese, shredded
5 ounces swiss cheese, shredded
3 ounces smoked gouda cheese, shredded
3/4 cup parmesan cheese, grated
1/2 cup panko breadcrumbs (Japanese)
4 ounces prosciutto, chopped (thinly sliced)

Steps:

  • Cook macaroni according to package directions until al dente.
  • Meanwhile, in a Dutch oven, heat butter over medium-high heat. Add onion; cook and stir for 4-6 minutes or until golden brown. Add garlic; cook 1 minute longer. Stir in flour until blended; gradually stir in wine. Add cream, pepper and salt; bring to a boil, stirring constantly. Cook and stir for 2 minutes or until thickened.
  • Reduce heat to medium-low. Add goat cheese; stir gently until melted. Gradually stir in the remaining cheeses; cook until melted. Remove from the heat.
  • Drain macaroni; stir into sauce. Transfer to a greased 13-in. x 9-in. baking dish. Sprinkle with bread crumbs. Bake, uncovered, at 375° for 15-20 minutes or until lightly browned.
  • Meanwhile, in a small nonstick skillet, cook prosciutto over medium heat for 5-7 minutes or until crisp, stirring frequently. Sprinkle over macaroni just before serving.

Decadent! Everyone raves about this dish. So cheesey and full of flavor. Good southern comfort food. Wonderful with pork chops or fried chicken. Originally I got the base of this recipe from Nell Carter on some TV show. I had to spice it up a bit.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the macaroni and cheese will be. Use a good quality pasta, sharp cheddar cheese, and flavorful prosciutto.
  • Cook the pasta al dente: This means that the pasta should be cooked through but still have a slight bite to it. Overcooked pasta will be mushy and unpleasant.
  • Make a roux: A roux is a mixture of butter and flour that is used to thicken the cheese sauce. This will help to prevent the sauce from becoming too thin and runny.
  • Use a variety of cheeses: Using a blend of cheeses will give the macaroni and cheese a more complex and flavorful taste. Cheddar, Gruyère, Parmesan, and Fontina are all good choices.
  • Add some crispy prosciutto: The crispy prosciutto adds a salty and savory flavor to the macaroni and cheese. You can cook the prosciutto in a skillet until it is crispy, or you can buy pre-cooked prosciutto.
  • Bake the macaroni and cheese until it is golden brown: This will help to create a nice crust on top of the macaroni and cheese.

Conclusion:

This five-cheese macaroni with prosciutto bits is a delicious and easy-to-make dish that is perfect for any occasion. It is cheesy, creamy, and flavorful, with a crispy prosciutto topping that adds a nice salty and savory flavor. This macaroni and cheese is sure to be a hit with everyone who tries it.
