GRILLED FISH TACOS WITH CHIPOTLE-LIME DRESSING

Grilled Fish Tacos with Chipotle-Lime Dressing image

I came up with this recipe when I couldn't find good directions for grilled fish tacos. I liked the chipotle-lime combination in a dip I once tried so I imitated it here. Choose toppings to suit your taste, or include typical accompaniments such as salsa fresca, cabbage, a squeeze of lime juice, and chopped cilantro.

GRILLED FISH TACOS WITH KEY LIME SAUCE

Grilled Fish Tacos with Key Lime Sauce image

These fish tacos with a crunchy slaw and creamy, tangy sauce really hit the spot. Key limes are smaller, tarter and more aromatic than Persian limes and worth seeking out, but you can definitely use regular limes instead.

Provided by Megan Mitchell

Categories     main-dish

Time 25m

Yield 8 servings

Number Of Ingredients 16

5 cups shredded red cabbage
4 Key limes or 1 lime, juiced
3 scallions, thinly sliced
1 medium jalapeno, halved lengthwise and thinly sliced
2 1/2 tablespoons finely chopped cilantro leaves
Kosher salt and freshly ground black pepper, to taste
6 Key limes or 2 limes, juiced
1 cup mayonnaise
2 tablespoons Dijon mustard
Grapeseed oil, for the grill or grill pan and for drizzling
1 1/2 pounds skinless white fish fillets, such as rockfish, snapper, grouper or cod
Ground cumin, for sprinkling
Kosher salt and freshly ground black pepper
8 small flour tortillas
2 medium tomatoes, cut into 1/4-inch dice
Cilantro leaves, for sprinkling

Steps:

  • For the slaw: Combine the cabbage, lime juice, scallions, jalapeno and cilantro in a large bowl. Season to taste with salt and pepper. Let sit for 10 minutes, toss again and season again to taste with salt and pepper. Set aside for up to 2 hours at room temperature, or refrigerate for up to 2 days. (The longer it sits the better it gets.)
  • Preheat the grill over medium-high heat to 375 degrees F or heat a grill pan over medium heat. Clean and oil the grill grates.
  • Meanwhile, for the key lime sauce: Whisk the lime juice, mayonnaise and mustard together in a small bowl. Set aside.
  • For the fish and assembly: Place the fish on a rimmed baking sheet. Drizzle both sides with oil then liberally sprinkle with cumin, salt and pepper until both sides are coated. Grill the fish until you see grill marks and the flesh is white and easily flakes with a fork, 2 to 3 minutes per side depending on the thickness. (It's okay if the fish breaks since it will be broken up into large chunks for the tacos.) Transfer to a plate.
  • Grill the tortillas until lightly charred, about 1 minute per side.
  • Fill each tortilla with about 1/4 cup of the slaw, followed by some of the fish broken into large chunks. Drizzle with sauce, top with a scattering of the tomatoes and a sprinkling of cilantro leaves and serve immediately.

FISH TACOS WITH HONEY-CUMIN CILANTRO SLAW AND CHIPOTLE MAYO

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo image

I loved a local chain restaurant's fish tacos so much, that I had to try to duplicate them. They combine flour tortillas filled with breaded, fried tilapia, layered with chipotle mayo, topped with napa cabbage, dressed with honey-cumin sauce, and served with pico de gallo, sour cream, chips and salsa. You'll find them very refreshing and packed full of flavor!

Time 4h40m

Yield 4

Number Of Ingredients 19

1 pound tilapia fillets, cut into chunks
½ cup fresh lime juice
⅓ cup fresh lime juice
2 tablespoons honey
1 tablespoon vegetable oil
1 teaspoon ground cumin
½ cup mayonnaise
2 chipotle chilies in adobo sauce
1 tablespoon adobo sauce from chipotle peppers
¼ teaspoon salt
⅛ teaspoon cayenne pepper
⅓ cup all-purpose flour
2 eggs, lightly beaten
2 cups panko crumbs
salt and ground black pepper to taste
1 cup vegetable oil for frying
2 cups 3 color coleslaw blend
1 cup minced fresh cilantro leaves
8 (7 inch) flour tortillas, warmed

Steps:

  • Place the tilapia chunks in a flat dish and pour 1/2 cup lime juice over the fish. Cover, and refrigerate at least 4 hours.
  • Meanwhile, make the honey-cumin sauce by whisking together 1/3 cup lime juice, honey, vegetable oil, and ground cumin a small bowl. Set aside until needed.
  • To make the chipotle mayonnaise dressing, place the mayonnaise, chilies, adobo sauce, 1/4 teaspoon salt, and cayenne pepper together in the bowl of a food processor. Pulse until smooth. Cover, and refrigerate until needed.
  • To bread the fish, place the flour, eggs, and panko crumbs in three separate shallow dishes. Season the fish with salt and pepper to taste. Dip the fish pieces first in the four, coating evenly, and shaking off any excess. Dip next in the eggs, and last in the panko crumbs, patting the pieces to help the breadcrumbs hold. Set the fish aside on a plate.
  • To cook the breaded fish, pour 1 cup vegetable oil into a skillet to 1/4 inch deep. Heat the oil to 365 degrees F (185 degrees C) over medium heat. Cook the fish, turning until all sides are golden brown, and flesh is easily flaked with a fork. Drain on paper towels. Brush the fish with the honey-cumin sauce.
  • Mix the coleslaw and cilantro together in a bowl. Reserve 1/4 cup of the chipotle mayonnaise dressing, and pour the remaining dressing over the coleslaw mixture. Toss to coat evenly with the dressing.
  • Place the tortillas on a flat surface, and spread each with 1 tablespoon reserved chipotle mayonnaise dressing. Divide the fish between the tortillas. Top with the cilantro coleslaw.

Tips:

  • Use fresh fish. The fresher the fish, the better your tacos will taste. If you can, buy your fish the same day you plan to make the tacos.
  • Choose the right fish. Not all fish are created equal for tacos. Some fish, like tilapia and cod, are too mild and flaky. Other fish, like tuna and salmon, are too oily. The best fish for tacos are those that are firm and flavorful, such as mahi-mahi, swordfish, or halibut.
  • Cook the fish properly. Overcooked fish is tough and dry. To prevent this, cook the fish until it is just opaque in the center. You can do this by grilling, pan-frying, or baking the fish.
  • Make a flavorful slaw. The slaw is an important part of any fish taco. It adds a crunchy texture and a bright, tangy flavor. To make a great slaw, use a mix of cabbage, carrots, and red onion. Dress the slaw with a lime-cumin vinaigrette or a creamy avocado dressing.
  • Use fresh tortillas. Fresh tortillas are soft and pliable, making them perfect for tacos. If you can't find fresh tortillas, you can warm up store-bought tortillas in a skillet or on a griddle.

Conclusion:

Fish tacos are a delicious and easy meal that can be enjoyed by people of all ages. They are perfect for a quick lunch or dinner, and they can also be served as an appetizer. With a few simple tips, you can make fish tacos that are sure to impress your friends and family. So next time you're looking for a tasty and healthy meal, give fish tacos a try!
