Tips:
- Use Good Quality Fish and Seafood: The quality of your fish and seafood will greatly impact the final dish. Choose fresh, firm fish fillets and plump, flavorful seafood.
- Don't Overcook the Fish: Fish cooks quickly, so be careful not to overcook it. Overcooked fish will be dry and tough.
- Use a Variety of Vegetables: This recipe uses a variety of vegetables, including leeks, carrots, and celery. You can also add other vegetables, such as peas, corn, or broccoli.
- Make Sure the Sauce is Thick Enough: The sauce should be thick enough to coat the fish and vegetables. If the sauce is too thin, it will not hold its shape in the pie.
- Use a Good Quality Pastry: The pastry is an important part of the pie. Choose a good quality pastry that is easy to work with and has a flaky texture.
- Chill the Pie Before Baking: Chilling the pie before baking will help the pastry to set and prevent it from becoming soggy.
