1/3 cup all-purpose flour
1/4 teaspoon pepper
1 egg
2 tablespoons water
2/3 cup crushed corn flakes
1 tablespoon grated parmesan cheese
1/8 teaspoon cayenne pepper
1 lb haddock fillets or 1 lb the fish, of choice

Steps:

  • Preheat oven to 425°F.
  • Combine flour and pepper in a shallow bowl.
  • In a second bowl, combine egg and water.
  • In a third bowl, combine corn flakes, cheese and cayenne.
  • Dredge fish in flour mixture, then egg mixture and coat with corn flakes.
  • Place fish fillets on a baking sheet that has been coated with a nonstick cooking spray.

1/4 cup melted butter
1 1/2 tablespoons lemon juice
1/2 teaspoon sugar
1/4 teaspoon pepper
1/8 teaspoon paprika
1/4 teaspoon basil
1/8 teaspoon garlic powder
1/2 teaspoon salt
1 lb fish fillets, cod or 1 lb haddock
1/3 cup dry breadcrumbs
vegetable oil cooking spray

Steps:

  • Melt butter in large glass Pyrex measuring cup and add lemon juice, spices and sugar.
  • Place bread crumbs in a shallow bowl or platter.
  • Spray a shallow baking dish with vegetable spray.
  • Cut fish into individual serving pieces.
  • Dip fish into butter and then coat each fillet well with bread crumbs.
  • Place bread coated fillets into baking dish.
  • Repeat until all fish fillets are covered.
  • Spoon the remaining herb butter mixture over fish.
  • I also use a pastry brush to lightly tap the tops of the breaded fish to make sure it is all cover.
  • You may need to melt more butter to coat fish.

I found in a magazine at the doctor's office this recipe for oven fried fish, which is nice and crispy like the deep fried kind but without all the fat. This is excellent served with evelyn/athens' Spicy Oven Fries and your favourite cole slaw recipe.

4 (6 ounce) tilapia fillets
1 egg white
1/2 cup buttermilk
1/2 cup all-purpose flour
1/2 cup dried breadcrumbs
2 teaspoons paprika
1/2 teaspoon cayenne pepper
1 teaspoon salt
1 tablespoon vegetable oil

Steps:

  • Position rack on top shelf in oven.
  • Preheat oven to 500 degrees F.
  • Line a rimmed baking sheet with foil and set a wire rack on top.
  • Lightly spray or brush rack with vegetable oil.
  • Pat fish dry with paper towels.
  • Slice fillets in half lengthwise to form long pieces.
  • In a pie plate or wide shallow dish, whisk egg white with buttermilk.
