These are very similar to crêpes-the staple of Brittany-but thinner and more delicate (and the filling is like nothing you'll find in the French tradition).

Yield Makes 8 or more wrappers

Number Of Ingredients 3

1 cup flour
1 egg
Corn, grapeseed, or other neutral oil as needed

Steps:

  • 1. Whisk together the flour, egg, and 1 cup water until very smooth.
  • 2. Heat an 8- or 10-inch nonstick skillet over medium heat. When a drop of water skitters across the surface before evaporating, add a little oil-just a teaspoon or so. Ladle about 2 tablespoons of the batter into the skillet and swirl it around so that it forms a thin layer on the bottom of the pan. Pour the excess batter back in the bowl.
  • 3. When the wrapper is just cooked through and the edges lift away from the pan, remove it carefully (you need not turn it over). Repeat with the remaining batter. If you like, keep the wrappers warm, covered, in a 200°F oven, for up to an hour before filling and serving.

Tips:

  • Make sure to use cold water when mixing the dough. This will help to keep the dough from becoming too sticky.
  • Knead the dough for at least 5 minutes, until it is smooth and elastic. This will help to develop the gluten in the flour and make the wrappers strong.
  • Use a lightly oiled rolling pin to roll out the dough. This will help to prevent the dough from sticking to the rolling pin.
  • Roll out the dough as thinly as possible. This will help to make the wrappers crispy.
  • If the wrappers are too thick, they will be chewy and not crispy.
  • If the wrappers are too thin, they will be difficult to handle and will tear easily.
  • Use a sharp knife to cut the wrappers into circles. This will help to get clean, even edges.
  • If you are using a filling that is wet, such as a meat or vegetable filling, be sure to drain off any excess liquid before wrapping the lumpia.
  • Fold the lumpia tightly so that the filling does not leak out.
  • Fry the lumpia in hot oil until they are golden brown and crispy.

Conclusion:

Filipino lumpia wrappers are a versatile and delicious way to enjoy a variety of fillings. They can be used to make appetizers, main courses, or desserts. With a little practice, you can easily make your own lumpia wrappers at home. So next time you're looking for a new and exciting way to enjoy your favorite fillings, give Filipino lumpia wrappers a try.
