This is a traditional Filipino dish. It is the Filipino version of the egg rolls. It can be served as a side dish or as an appetizer.

1 tablespoon vegetable oil
1 pound ground pork
2 cloves garlic, crushed
½ cup chopped onion
½ cup minced carrots
½ cup chopped green onions
½ cup thinly sliced green cabbage
1 teaspoon ground black pepper
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon soy sauce
30 lumpia wrappers
2 cups vegetable oil for frying

Steps:

  • Place a wok or large skillet over high heat, and pour in 1 tablespoon vegetable oil. Cook pork, stirring frequently, until no pink is showing. Remove pork from pan and set aside. Drain grease from pan, leaving a thin coating. Cook garlic and onion in the same pan for 2 minutes. Stir in the cooked pork, carrots, green onions, and cabbage. Season with pepper, salt, garlic powder, and soy sauce. Remove from heat, and set aside until cool enough to handle.
  • Place three heaping tablespoons of the filling diagonally near one corner of each wrapper, leaving a 1 1/2 inch space at both ends. Fold the side along the length of the filling over the filling, tuck in both ends, and roll neatly. Keep the roll tight as you assemble. Moisten the other side of the wrapper with water to seal the edge. Cover the rolls with plastic wrap to retain moisture.
  • Heat a heavy skillet over medium heat, add oil to 1/2 inch depth, and heat for 5 minutes. Slide 3 or 4 lumpia into the oil. Fry the rolls for 1 to 2 minutes, until all sides are golden brown. Drain on paper towels. Serve immediately.

1 (16 ounce) package spring roll wrappers

Steps:

  • Mix the ground pork, shrimp, onion, carrots, green onions, soy sauce, salt, pepper, and MSG in a bowl until well combined.
  • Pull a wrapper off the stack, and cover the remaining wrappers with a damp cloth. Place the wrapper on a work surface. Place a thin line, about the width of your little finger, across one side of the wrapper, 1/2 inch from the edge of the wrapper. Roll the wrapper tightly around the filling, and seal the edges with egg white. Repeat making rolls with the remaining wrappers and filling, and cut the rolls into thirds.

1/2 cup yellow onion, minced
1/2 cup carrot, minced
3 garlic cloves, minced
1 1/2 teaspoons kosher salt, plus more
1/4 teaspoon fresh ground black pepper
1 (14 ounce) package 6-inch square spring roll wrappers (lumpia wrappers if you can find them)
1 large egg, lightly beaten, for egg wash
vegetable oil (for frying)
1 cup white vinegar
1/4 cup soy sauce
2 tablespoons sugar
3/4 teaspoon black peppercorns
2 garlic cloves, minced
2 Thai red chili peppers, stemmed and thinly sliced

Steps:

  • In a medium bowl, combine the pork with the onion, carrot, garlic, salt, and pepper and mix with your hands until evenly combined. Position 1 spring roll wrapper in front of you like a diamond (so that a point is facing you), and place 1 tablespoon of filling on the diamond's bottom half. Lift the point nearest you and wrap it around the filling. Fold the left and right corners in toward the center, brush the top tip with some of the beaten egg, and continue rolling into a tight cylinder. Transfer to a parchment paper-lined baking sheet and repeat with the remaining wrappers and filling.
  • Make the dipping sauce: In a small jar, combine the vinegar, soy sauce, sugar, peppercorns, garlic, and chiles. Shake to mix.
  • Pour oil to a depth of 2 inches in a 6-quart Dutch oven, attach a deep-fry thermometer to the side of the pan, and heat to 350°. Working in batches, add the spring rolls to the oil and fry until golden brown and the filling is cooked, about 8 minutes. Using a slotted spoon, transfer the lumpia to paper towels to drain. Season with salt and serve while hot with the garlic-chile vinegar sauce.

I've yet to master that experience with my lumpia, but it's coming along. This is the best recipe by far - and the only ones my family will eat. Enjoy!

1 (20 count) package lumpia skins (or egg roll wrappers)
1/2 lb ground beef
1/2 lb ground pork
1 cup green onion, minced
1 cup carrot, minced
1 cup celery, minced (same as above)
1 egg, beaten
4 tablespoons soy sauce
1/2 teaspoon ground pepper
1/4 cup flour
1/4 cup water

Steps:

  • Brown beef and pork, until almost completely cooked. Drain fat. Cool and process in food processor or chop up into fine pieces (like Taco Bell taco meat or a little coarser) with fork.
  • Combine meats, vegetables, egg, sauces, pepper in a large bowl. Cover and refrigerate for 30 minutes to 1 hour for flavors to set inches I like to prepare my filling the day before so it can marinate all night.
  • Prepare wrapper (by separating) and place on a separate plate. Place 1 to 2 T of filling in the center of the wrapper.
  • Fold left edge over all the way, then bring down top and bottom, then roll the rest of the way to the right, making a roll. hard to explain without a picture, but you'll figure it out -- looks like an egg roll when done, only thinner and longer. Seal with with flour and water mixture.
  • After you have assembled all the lumpia, heat your oil (I use the deep fryer) to 375 degrees. Cook until golden brown, turning often, approximately 3 minutes. Drain on paper towels.
  • Serve with sweet and sour sauce.
  • Note: the wrapper packages usually have instructions for rolling the wrap. Times vary by experience and methods used.

1 lb ground lean pork
3 garlic cloves, minced
1 onion, minced
1 medium carrot, peeled and grated
1/2 cup celery, diced into small pieces

1 egg white, for sealing rolls
2 -4 cups canola oil (for frying)

Steps:

  • In a large bowl, combine pork, garlic, onion, carrot, celery, soy sauce, egg, salt and pepper. Carefully separate the wrappers. To prevent them from drying out as you work, keep a barely damp paper towel over the unused wrappers.
  • Lay one wrapper on clean surface. Place 1 heaping tablespoon of the filling diagonally near one corner of the wrapper and gently push the filling into about 4-inch log, leaving a 1½ inch space at both ends. Fold the side nearest to you over the filling, then fold in both sides and roll neatly and tight. Moisten the other side of the wrapper with beaten egg white to seal the edge. Cover the rolls with plastic wrap to retain moisture. Repeat with remaining wrappers. At this point, lumpia can be frozen until ready to use.
  • In a deep pan, add the oil to about 1-inch depth and heat to 350°F Make sure the oil is hot enough before adding the wrappers by testing the edge of one. If it sizzles and bubbles, then the oil is ready. Carefully slide the lumpia, a few at a time, into the oil and fry until crispy and golden brown on all sides, 3 to 5 minutes total. Do not overcrowd pan during frying. Remove from oil and drain on paper towels. Ensure that oil is back to 350 degrees before frying the next batch. Serve hot with sweet and sour sauce or other sauce of your choice. Enjoy!

Lumpia is a Filipino type of egg roll. It is a yummy recipe and great to serve as a finger food. I have two sisters-in-law from the Philippines who make this dish.

1 lb ground pork
1 lb ground beef
1 onion, finely chopped
1 carrot, finely grated
1/4 c soy sauce
2 tsp black pepper
2 Tbsp salt
1 tsp garlic powder
8 oz spring roll wrappers
1 qt canola oil, for frying

Steps:

  • 1. In a large bowl, combine the ground pork, ground beef, onion, and carrot. Make sure to completely mix everything. Knead the meat mixture in the bowl.
  • 2. Gradually blend in the soy sauce, black pepper, garlic powder and salt until all ingredients are evenly distributed.
  • 3. Lay out a few wrappers at a time on a flat surface, and place about 2 tablespoons of the filling in a line near the edge on the lumpia wrapper. Make sure the filling is no thicker than your thumb, or the wrapper will cook faster than the filling.
  • 4. Fold the lumpia wrapper over the line of meat you just spooned. Now you will begin to roll the meat into a tube. Stop rolling when you are to the middle of the wrapper. Fold the right and left sides of lumpia wrapper to the center. Continue to roll to the end of the wrapper. Dip your fingers in a small bowl of water and lightly moisten the exposed edge of the lumpia wrapper,. Fold wrapper edge onto itself pressing it down gently, so it seems to glue itself down. Place to the side for now and repeat, repeat, repeat! until there isn't any more wrappers or meat left.
  • 5. Fry 3 or 4 lumpia at a time. Fry about 3 - 4 minutes, turning once. Lumpia are cooked through when they float and the wrapper is golden brown. Cut in half, or serve as is with dipping sauce.

  • In a large skillet, brown pork meat, remove juices. Leave enough pork oil/juices for the vegetables.
  • Sauté onion and garlic.
  • Add salt and pepper. Stir. (may add more to taste).
  • Add soy sauce and vinegar. Let it boil. Don't stir.
  • Add carrots, green beans, bamboo shoots, and bean sprouts. Stir.
  • Simmer for 5 minutes. Remove from heat.
  • Place 1 tbsp of mixture into one corner of wrapper, fold over bringing in the two sides. Roll up halfway, tightly, and fold ends inward. Brush top corner with egg wash and fold over.
  • Deep fry 'till brown. Serve with sweet and sour sauce.
  • To make the sauce, mix all the ingredients. Bring to a boil and simmer until sauce thickens, about 5 minutes.

Steps:

  • Heat oil in skillet and saute garlic and onions until tender. Add pork and saute until browned. Add vegetables and cook until tender, yet crisp, about 5-10 minutes. Remove from heat. Season with soy sauce. When mixture is cool, add bean sprouts. Salt to taste. To assemble lumpia: Carefully separate wrappers. To prevent them from drying out, cover unused wrappers with moist paper towel. Lay one wrapper on clean surface. Place about 2-3 tablespoons of the filling near the edge closest to you. Roll edge towards the middle. Fold in both sides and continue rolling. Moisten opposite edge with water to seal. Repeat with other wrappers. Lumpia can be frozen until ready to use. My stepmother is Filipino. I would watch her make these on special occasions. She never measured what she did, but I think I've got the knack of it. This is one of the best Filipino foods next to pancit - and unfortunately, I don't know how to make that!! You can find lumpia wrappers in Asian food stores wherever they keep their frozen food, and also (if you're lucky) in very large supermarkets.

1 (12 ounce) package lumpia wrappers
1 pound ground beef
½ pound ground pork
⅓ cup finely chopped onion
⅓ cup finely chopped green bell pepper

1 quart oil for frying

Steps:

  • Make sure the lumpia wrappers are completely thawed. Lay several out on a clean dry surface and cover with a damp towel. The wrappers are very thin and the edges will dry out quickly.
  • In a medium bowl, blend together the ground beef and pork, onion, green pepper and carrot. Place about 2 tablespoons of the meat mixture along the center of the wrapper. The filling should be no bigger around than your thumb or the wrapper will burn before the meat is cooked. Fold one edge of the wrapper over to the other. Fold the outer edges in slightly, then continue to roll into a cylinder. Wet your finger, and moisten the edge to seal. Repeat with the remaining wrappers and filling, keeping finished lumpias covered to prevent drying. This is a good time to recruit a friend or loved one to make the job less repetitive!!
  • Heat oil in a 9 inch skillet at medium to medium high heat until oil is 365 to 375 degrees F (170 to 175 degrees C) Fry 3-4 lumpia at a time. It should only take about 2-3 minutes for each side. The lumpia will be nicely browned when done. Drain on paper towels.
  • You can cut each lumpia into thirds for parties, if you like. In the Philippines, lumpia was eaten with banana ketchup, but I've never seen it sold in America.

1 tablespoon soy sauce
¼ lemon
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, chopped
1 cup frozen peas
1 carrot, cut into matchsticks
1 (1.5 ounce) box raisins
1 stalk celery, diced
salt and ground black pepper to taste
25 lumpia wrappers
oil for frying

Steps:

  • Remove scales, gills, and internal organs from bangus. Wash the inside of the fish. Slice open the backside to expose the meat. Pour soy sauce on top; squeeze lemon over the meat.
  • Pour enough water into a pot to cover the bangus. Bring to a boil. Add the bangus and boil until fish is no longer pink, 10 to 12 minutes.
  • Let bangus cool until safe to handle, at least 10 minutes. Remove bones.
  • Heat olive oil in a skillet over medium-high heat. Saute onion and garlic until onion is translucent, about 5 minutes. Add the fish meat, peas, carrot, raisins, and celery. Season filling with salt and pepper.
  • Wrap 1 tablespoon of the fish filling in a lumpia wrapper. Continue until remaining filling and wrappers are used up.
  • Heat vegetable oil in a deep saucepan over medium-high heat. Fry lumpias in batches in the hot oil until just light brown, 5 to 7 minutes per batch.

  • Choose the right spring roll wrappers. There are two main types of spring roll wrappers: fresh and dried.
